Sparkling

Dom Pérignon, Épernay, Champagne, France 2006 £275

Dom Pérignon was the 17th century Benedictine monk who has gone down in history as the person who "invented" Champagne… The wine has a typical Dom Perignon nose: slightly toasty, citrus and honey. It immediately exudes class – you know there is something intense to come – and there is also a hint of something Burgundian, Chassagne and Puligny-esque. The mousse is very fine and the wine achieves a remarkable balance of intensity and delicacy. The core of fruit has a focussed power, though with silkiness all around – there really is an impression of floating – and this is definitely rather special, with a persistence of fruit that impresses all the way through.

White

Südtirol Sylvaner, Kuen Hof, Alto Adige, Italy 2014 £75

Kuenhof, owned by Peter and Brigitte Pliger, is one of the best white wine estates in Italy. Their steep, stony vineyards are in the part of the South Tyrol called the Val d'Isarco (or Eisacktal), not far from the border with Austria. They grow Sylvaner, Veltliner and Riesling organically, and their wines show an almost electric mineral character. If the duty of a great wine is to be distinctive, these wines stand out like beacons -- great terroir, careful grape-growing, brilliant winemaking, and extraordinary wines. The 2014 Sudtirol Sylvaner is medium to full-bodied, complex in aroma and flavour (stone fruits, spices, hints of pea shoot), and shows electric liveliness on the palate.

Chardonnay ‘Lynette’, Phelps Creek Vineyard, Columbia Gorge 2012 £82

this small boutique winery is focused on Pinot Noir and Chardonnay production across the Columbia River, on Underwood Mountains. Careful vineyards management with low yields and mostly hand selected grapes lead to wines rich in perfumes and texture, and this Chardonnay is the perfect sample of the producer concept. Lovely and concentrated fruity nose of melon and red apple with a spicy touch, rich and citrusy on the palate the wine will shows all its own complexity once it will be opened and poured in the glass.

Barbaresco Castello di Neive, Riserva Santo Stefano, Piedmont, Italy 2006 £130

Barbaresco is one of the great wines of the Piedmont region in north-western Italy. Its vineyards are situated in the Langhe, on the right-hand side of the Tanaro river and extending from the area north-east of Alba to the communes of Barbaresco, Neive and Treiso. It is made from 100% Nebbiolo grapes grown on 30 year old vines around Neive village. The grapes for this wine are pressed and then allowed to mature in wooden vats for 2 years to smooth the tannins and develop the wines’ complex flavours. it will look garnet in colour, aromas of red fruits and cassis are complemented by delicate hints of licorice, smoke, and caramel. The tannins in this wine are central to the mouthfeel with a soft and warm body leading to mushroomy and gamey notes in the aftertaste.
