Barbados is a beautiful island
with a rich history in art, music,
food, cultural festivals and

population is approximately
285,000 with a life expectancy
of 75.66 years and a GDP of
4.588 billion USD (2016) .
Barbados is also home to
international superstar Rihanna,
queen of soca Allison Hinds
and world renowned Sir.

1990) among others who
continue to fly the Bajan flag
both regionally and
internationally.
Also referred to as BIM by
colloquial Bajans, Barbados is a
Caribbean island which is an
independent British
Commonwealth nation. Home
to blue sky, sparkling blue sea
and gorgeous beaches, the
capital “Bridgetown” is a
UNESCO World Heritage Site for
its colonial architecture.
Originally discovered by the
Portuguese, Barbados which
means bearded ones, was the
name given to the island to
describe ‘’bearded’’ trees that

The festival is one that is infused
with the culture of Barbados,
culminating in a rich colorful blend
of activities that leads up to the final
Grand Kadooment. The Grand
Kadooment is the climax of the Crop
Over Festival that is held on the first
Monday in the month of August.
During Kadooment you can expect
to see at least 10 thousand
costumed revellers frolicking in the
streets of Barbados from the
National Stadium to Spring Garden
Highway. One attraction revlelers
and spectators look forward to at
Grand Kadooment is international
superstar Rihanna as she returns
home every year to take part.

CROP OVER
The Crop Over festival of Barbados
has found its beginning as an 18th
century festival to celebrate the
harvest of sugar cane. At this time
Barbados was the world’s largest
producer of sugar. As
Barbados' sugar industry declined
so did the Crop Over festival and in
the 1940s the festival came to a
halt. The decline of the sugar
Industry allowed for tourism to
become the main economic driver
in the Barbadian economy. In an
effort to stimulate visitor arrivals in
the summer months the
Government of Barbados
reinvigorated the Crop Over Festival
under the auspices of the National
Cultural Foundation in the 1970s.
The festival now runs from May until
the first week in August and it has
been estimated to bring at least
US$35 million dollars into the local
economy annually.

saying “never a failure, always a lesson”, which gives her
inspiration every time she looks in the mirror.
9. RiRi is a lover of fruits and water and dislikes having
vegetables. She is also not a fan of Chinese, Mexican,
Japanese or Indian food.

Barbados hosted the 13th
edition of the Caribbean
Festival of Arts better
known as CARIFESTA.
This international multi
cultural event is organized
periodically by Caribbean
countries. CARIFESTA is
the biggest cultural event
showcasing Caribbean
art, music , authors and
cuisine. The event
included a buyers. market,
a symposium as well as
two vibrant concerts.

Ingredients 10 Flying Fish, fillet 3 tbsps. Bajan Seasoning Juice of 1 lime1 cup. All Purpose Flour 1 tbsp. corn starch 3 cloves garlic, finely grated ½ tsp. Thyme 1 tbsp. Ginger, finely grated 1 medium onion, diced 2 tomatoes, diced 1/2 tsp. Black Pepper Salt to taste Oil for frying
Directions 1. Rinse fish in lime infused water and drain. 2. Season the fish with the Bajan seasoning and leave to marinate for 1 hour. 3. In a frying pan, add enough oil so that the fish could be submerged. 4. Combine the flour, corn starch and black pepper in a separate bowl. 5. Taking one fish fillet at a time, coat with flour. 6. Add each coated fillet to the hot oil skin side down. 7. Flip as necessary until fish is cooked and golden brown. 8. Remove from oil and drain on paper towels.9. In another pot add 3 tbsp. of oil used from frying the fish. 10. Add the garlic, thyme, ginger, onion, tomatoes and salt to pot and cook for a few minutes. 11. Take a tbsp. of the seasoned flour and add to the pot, incorporating it into the vegetables. 12. Cook for under a minute. 13. Add enough water to cover vegetables and leave to simmer until thickened. 14. Add fish skin side down to the sauce and switch off heat. 15. Flip once, carefully and serve.

Ingredients 1-1/2 cups. Yellow Cornmeal 1-1/2 cups. Coconut Milk 3-1/2 cups. Water 2 tbsps. Butter 2 cloves garlic, minced 1/4 cup. Carrot, cubed 1/4 cup, squash, cubed 2 Ochro, sliced 1 tsp. Salt
Directions 1. Combine in a bowl the cornmeal with 2-1/2 cups of water, into a thick paste. 2. Grease a 10-inch dish with ½ tbsp. of butter. 3. In a heavy bottom pot put to boil the coconut milk, 1 cup water, 1-1/2 tbsps. butter, garlic, carrots, squash, ochro and salt. 4. Boil until the vegetables become folk tender. 5. Add cornmeal paste to boiling mixture and stir until well incorporated. 6. Leave to cook on a low heat until it comes together and leaves the side of the pot. 7. Transfer mixture to the greased dish. 8. Leave to set for 15 minutes and cut into 5 pieces.

Did You Know?The Flying Fish is also known by its
scientific name as the Exocoetidae.
They are common to most tropical
seas and are found in the warm
waters surrounding Barbados. It is
the national icon of Barbados and
can be seen on coins, bills, and
menus. Flying Fish is usually served
lightly breaded and fried, with a
yellow sauce. Be warned that this
yellow sauce consists of very hot
Scotch Bonnet peppers with onions
in a mustard sauce.
A streamlined torpedo shape helps
Flying Fish generate enough speed
to break the water’s surface, and
large, wing-like pectoral fins help get
them airborne. It is said that Flying
fish can soar high enough that
sailors often find them on the decks

Yellow Fever Vaccination –Before booking your
trip, especially to the Caribbean its essential to
get vaccinated against yellow fever at the
moment. Ideally this is done at your local health
facility in your respective countries. No
international yellow fever card often leads that
you may not be able to embark the aircraft.
Dialect- Most if not all countries have a dialect
spoken by locals which most of the time sounds
markedly different from the official language.
Familiarize yourself with the local dialect as this
makes it easier to interact with the locals.
