Hi Amylose is a yellow corn flour with high content of amylose obtained from an exclusive MartinoRossi’s variety. This variety is composed by a starch made of 70% amylose and 30% amylopectin, which is the opposite of a standard corn variety (30% amylose and 70% amylopectin). • More content of resistant starch compared to standard corn flour;• Lower glycemic index compared to standard corn flour, therefore is very suitable for diabetics.
