Mini Raspberry Ice-Creams
SERVES 14
Ingredients 1 cup (250g) Greek-style Yoghurt ½ cup (125g) low-fat cottage cheese ½ cup (70g) frozen raspberries
2 tsp pure maple syrup 1 tsp vanilla essence 14 raspberries, extra for decoration
Instructions Combine the yoghurt, cottage cheese, raspberries, maple syrup and vanilla in a food processor. Blend until smooth, then spoon the mixture into an ice tray. Top each cube with a raspberry, then place the try in the freezer for a few hours until mixture sets. Push out a cube and enjoy!
