h no, it’s not.Oh yes, it is.It’s here.It’s that time of year

we love, but that time of year we all have way, way too much to do and we all know there are just so many hours in a day.

The big “C” is nearly upon us and lord have mercy! I know I’m not ready and I may not ever be at all.

But this month’s issue of Lakeside Living may offer some help, I hope, from entertaining in to entertaining out and from finding some really special gifts to having fun in and on the water, even in the brrr cold winter months!

I am offering some really easy and really good-I had them taste tested-dips that you might find handy.

The Hot Beef Dip really surprised me, it’s really better than the recipe actually sounds.

I hope they can help you through some of your holiday entertaining get-togethers.

Lakeside writer Aziza Jackson takes us on a visit to the lakeside shop called Doodlebugs, where owner Teresa Springfield has an array of distinctive gift items for everyone’s list. She just opened her shop a couple of months ago and she’s ready to help you with the most difficult person you have on your list.

Our paddler takes you out to the water for some fun winter-time antics and Kenny Farmer will fill you in on what’s happening with the lake levels and why.

We also visit the dream cottage of Jerry and Susan Griffin, where waiting long enough delivered them to the exact home they wanted.

oe Wilkerson has been the owner of Coosa Island Marina for 28 years, and there have been some changes.

“We had a fire out here eight years ago, and we didn’t have any insurance,” he explains. “We got it rebuilt, but

I haven’t been able to get a liquor license. We do still have

food, though,” he explained, and there is beer available at the store across the parking lot.

The menu, Wilkerson said, consists entirely of items that can be eaten with your hands.

dogs and bratwurst. We also serve clams, catfish and shrimp, and the usual sides like fries and stuffed mushrooms. The bacon cheeseburger is probably the house specialty, and we make them thick. We also have three or four different kinds of chicken sandwiches, including chicken parmesan and a chicken finger sandwich with marinara sauce. Pretty much, if it’s something you can eat with your hands, we have it on the menu.”

built as a bar and still looks like one. “We had a DJ and karaoke in the summer, and we’ve got

pool tables,” Wilkerson said.Being on the lake, Wilkerson says, means he caters to

boat traffic. “You can call ahead if you want and get something

to go, or you can eat with us, either inside or on our large outdoor porch, which seats about 50,” he said.

“We try to keep a casual, island atmosphere going,” he continued. “We have some tropical plants, including a blue and gold macaw named Rocco. He was homeless when we found him, and he was badly malnourished and unhealthy. We nursed him back to health.”

Rocco is enormously popular with patrons and has become something of a mascot.

“We’ve even got tee shirts of him holding a beer in one of his talons that says ‘Have a beer with Rocco.’ He just went from unknown to famous.” Hopefully, someday that will be real possibility.

Of course, Coosa Island Marina is also a full service

marina, with wet, dry and outdoor boat storage available. They are located at Coosa Island Road, off Logan Martin Dam Road, either right before or left after U.S. 231, depending on which way you’re coming from.

They are currently open on Fridays and Saturdays from 5 p.m. until everyone is ready to go home. During the warmer months they open up on weekends at noon.

ll it takes is one step into Doodle Bugs to transport you into a world of unique knickknacks and doodads as interesting as the store’s name. Since April, the small family-owned business has been

delivering both the artsy and eccentric to the Pell City com-munity.

“One day we were just talking about owning a small little store,” said owner Teresa Springfield. “It had been in the works for two years.”

Together Springfield and her husband, Mark, run the store located on Alabama 34 in Cropwell.

Inspiration for the name comes from the Springfields’ three granddaughters Jaylin, Kayleigh, and Lexi whom they call their “doodle bugs.”

Springfield said that Jaylin is quite the helper and has become a fixture at the store often helping out customers with their fashion picks and greeting customers when they first walk in.

“Business has been good,” Springfield said. Doodle Bugs started out as a gift store and has since

expanded, housing artwork from local artists, clothing from local designers, and anything and everything in-between.

One artist in particular, Terry Sandlin, specializes in custom-made drapery and is known for her “bone pillows” that provide neck support at home or during travel.

The list of artists and designers is long, and includes

Springfield’s sister, Kathy, who monograms scarves and shirts, her daughter Kristina who handmakes hairbows; Sylvia Gonda, who designs clothing for “Game Day In Style; Dixie Doodle Bugs, that specializes in kids fashion; Sheliah Swafford, who makes canvas paintings and kids clothing; Dots of Faith that makes unique painted ceramic items; and a company named Priti that makes unique jewelry.

Dish It Up! With Lakeside

K, I know it’s party time for lots of folks right now and we all need all the help we can get, right?

Well, I do know of quite a few entertaining and cooking gurus out there, but I thought I’d pass along a

few things I picked up through my long years during high school and college working in the restaurant and banquet biz.

Some of you may know these things from the school of hard knocks, or from the same background I have, but with my “advancing” years, I believe we have some readers not quite old enough to have graduated yet.

I’m also going to give my favorite dip recipes, two hot and one cold, that have never let me down.

And these are “strong” dips, and what I mean by that is they hold together well and are less likely to dribble on your table or

carpet or your friends’ and family’s nice holiday outfits.That’s what I’m getting to about some entertaining “tips,” even

though I’m no “Martha,” I have learned a few things along the way when it comes to serving a crowd.

This is reminding me of the Christmas Day eight years ago when Gruffy and I got married-and by the way, don’t do it! All said and done, it was truly a great day, but getting married and hosting a Christmas dinner for about 20 is kind of a boat load.

Thank goodness for my neighbor Joanie’s extra oven, my mother and another friend’s handiness, and, yes, Gruffy’s helping hands, as well.

After all, the Christmas day wedding was all his idea, after I had already told everyone to “come eat!”

Again, I digress, but it gives you an idea that “I’ve totally been there…”

I chose to focus on a “finger food” type get-together, that’s what lots of us do for get-togethers.

And I work it “buffet style.” On that note, invest in some chafing dishes, they keep things nice and hot and you can find some that really aren’t all that expensive.

I narrowed my recipes down to dips, because they’re awfully handy and can be served so many ways.

So it being that kind of situation, before I get into the recipes, here are my personal “saves.”

Number one has to be traffic flow, well, the menu itself really is critical, but after that, here comes crowd control.

My best advice is to remember that all the food does not have to be on one table.

And shouldn’t be, or you’re in for one big mess.Spread it out all over the house. Set up stations with serving

ware, napkins and condiments, along with utensils.It will flow so much better.And do the same with beverages. Put stations all over, prevent

the clog!And the wait.Number two, avoid serving anything too drippy.Enough said.Number three?Keep backups (refills) warm in the oven, ready to go.And just in case of mishaps, have some stain remover on hand

for that guest who always has a spill. It always happens.Number four?Keep your high heels on until midnight! Just kidding, sort of,

but I managed to on my wedding/Christmas dinner day and I was really proud! (It was probably the wine! Dulled the pain!)

So here we go, these are really great dips, happy, happy holidays and may all your dreams come true!

Shrimp Dip(I know everyone has one…but this one’s special!)

What you need:One cup sour creamThree ounces cream cheese, softenedOne envelope Italian dressing mix (I like the zesty!)Two teaspoons fresh lemon juiceOne pound chopped, cooked shrimp

What you do:Cream sour cream and creamed cheese in a mixer and bowl

until smooth. Add salad dressing and lemon juice and mix well. Fold in the shrimp, chill covered for at least an hour. Makes 12 servings, great with crackers, bread or all by itself!

Two six and a half ounce jars marinated artichoke hearts, drained and choppedOne and a half eight ounce packages cream cheese, softenedOne cup freshly shredded Parmesan cheeseOne-half cup mayonnaiseThree large garlic cloves, pressedTwo tablespoons lemon juiceOne and a half cup bread crumbs

Two tablespoons melted butter or margarine

What you do:Drain spinach, press between layers of paper towels to

drain. Combine spinach, artichokes, cream cheese, Parmesan, mayonnaise, garlic and lemon juice in a bowl, stirring well. Spoon into a lightly greased 11 by 7 inch baking dish. Combine bread crumbs and butter, sprinkle over spinach mixture and bake uncovered at 375 for 25 minutes. Serve with assorted crackers, bagel chips, breadsticks or even Fritos. Yield is four cups.

Hot Beef Dip(This one really surprised me! It was my favorite even though

it’s so simple! I’m thinking a drop or two of Tabasco might even tweak it up a notch.)

What you need:Two eight ounce packages of cream cheese, softenedOne eight ounce carton of sour cream

Two tablespoons milkFour tablespoons minced bell pepper-red and or greenFour tablespoons minced onion-(I used red onion and I think it worked well for color and taste!)One jar dried beef, rinsed and chopped

One-half cup chopped nuts, your choice, I used walnuts

What you do:Mix all ingredients together and bake 20 minutes at 350. Serve

with crackers, toasted bread or chips. Freezes well. (If the mixture is too dry, add a little more milk.

Crab DipWhat you need:One seven and a half ounce can of crab meatTwo large packages cream cheese½ teaspoon Lawry’s salt ½ teaspoon AccentLemon juice to tasteTwo drops TobascoTwo tablespoons sour cream

What you do:Just mix well, sprinkle paprika on top add some parsley and

bake at 350 for about 20 minutes. Serve hot with crackers, Scoops or toasted bread. (A little McCormick’s California style garlic powder added some punch!)

t was love at first sight when Jerry and Susan Griffin laid eyes on the octagon-shaped cottage across from their RV lot on Paradise Island almost seven years ago.

Something about the home’s unusual shape instantly drew Susan in, she said, and from then on, they were determined to make the distinctive home their own.

“We loved it, it was so cute,” Susan said. “Everything is round.

It’s just a unique shape and design, and I guess that’s what made me like it.”

There was only one problem, though. The house wasn’t for sale.

Since 2006, the Griffins watched from across the lake as various owners moved in, remodeled, added on and eventually foreclosed on the two bedroom, two bathroom cottage.

“Mentobee Cottage” Was Truly Meant to Be“We saw it sell to the last owners that remodeled and added

a master bathroom and a lanai on the front,” Susan said. “Then they put the home up for sale, and it was way out of our price range.”

The couple, originally from Moody, spent most summer weekends on the lake, but they weren’t looking for a permanent retirement home just yet. Still, Susan checked the online house listings daily and, although it was reduced several times, the asking price was still far out of their range.

In 2010, they noticed the home looked abandoned when the typically manicured yard grew out of control. Susan said they “tried everything to find out about the house, but to no avail.”

Finally in September, a foreclosure sign was placed in the yard. Susan and Jerry knew this was their chance, but even then, it didn’t come easy.

“It took us three bids before we got it,” Susan said. “It got sold, then that deal fell through, then we tried again and lost that bid, and then we finally got the third bid.”

By January 2011, the home was theirs. Later that year in May, they made it their primary residence and put their Moody home up for sale.

In honor of the years spent gazing at the quaint lakefront dwelling and the opportunity to buy it that arose at just the right time, the Griffins named their new home “Mentobee Cottage” – because, as Susan says, it was always meant to be.

“She’s been wanting this house since the first time she laid eyes on it,” Jerry said. “She used to ride her Sea-Doo over here and look at it and dream.”

“I never thought I’d have it,” Susan added. “It’s funny because most of our pictures from the lake over the past several years have this house in the background, and now it’s ours.”

The home’s interior wasn’t such a dream, however. When they bought it, it was stripped to the core, leaving the pair to start from scratch.

“They told us it was empty,” Jerry said. “Well, it was more than empty. It was bare. We looked at it before we bid, and we bid


accordingly, because we knew we would have to spend several thousand dollars to get it fixed.”

A lot of work was put into getting the home back up to par, Jerry said.

“This thing was beat up,” he said. “There were holes in the sheetrock, motor oil had been poured on the carpets. Everything had been stolen out of it. All the lights, ceiling fans, fixtures, door knobs, the vanity, sinks, toilets, appliances – everything was gone. We had to replace and repair everything, and we’re not through yet.”

Looking at it now, you would never guess the home, built in 1986, was ever in disrepair. They took the opportunity to decorate it in what Susan calls a “rustic Tuscany” design. With warm tans, browns and burgundy accents throughout, the home is both comfortable and practical for the partially retired couple ( Jerry is retired, Susan has a couple years of work left).

The master bedroom reflects the couple’s “rustic Tuscany” style with warm tones. Jerry said they will eventually move in “nicer furniture” from their Moody home when it sells.

Club in Lincoln, is picturesque with light yellow siding and an eight-sided roof covered in dark green tin. A white fence lines the property, as do plenty of flowers, a rose garden and other landscaping that hits a colorful peak in the summer. They’re hoping to add some palm trees by next summer for a tropical flair, Jerry said.

The interior opens to the kitchen and dining area that has all-new stainless steel appliances and plenty of storage in the newly refurbished cabinets. The adjoining living room has hardwood floors, leather seating and a flat screen TV over the fireplace. Gas logs give the space a warm glow during the winter months. The ceiling is accentuated with dark beams outlining the octagon shape that defines the home’s round design.

A sliding glass door in the space not only provides a great view of the lake, but also opens to a lanai porch that wraps around the back side of the home. The porch was added by a previous owner, and Jerry said the extra outdoor space makes all the difference for the relatively small home.

“It makes the house, because we live out here as much as we do inside in the summer,” he said.

Off of the living room is the master suite. Susan is particularly proud of the master bathroom that she

had a large part in redesigning after it was stripped. The room has bright lighting, a black granite countertop and a utility and laundry room attached.

Around the back hallway is another bathroom and a guest bedroom that acts more as a play space for their three Poodles – Fozzie, Sassy and Arley.

They added an overhang along the side of the house to protect the kitchen window from wind and rain and to give a covered space for grilling. They hope to make it into an outdoor kitchen sometime soon, Susan said.

While the couple has already put in hours upon hours of work to restore the home, they have plans to improve it even further in the future.

“We’ve got a lot of work we’ve got to do, but I want to be able to pay for it when we do it, so we’ve just about budgeted out on it until our other house sells,” Jerry said.

Some upcoming changes include replacing the carpet with tile and removing half of a partial wall that separates the living room and kitchen to create more counter space and bar seating. They also want to re-do their docks and already have approval to put in a boat launch.

This will be the couple’s first winter on the lake and while they took full advantage of summer lake life, they aren’t too sure what to expect of the cooler months, especially cramming 15 people in their house at Christmas.

“Can you imagine 15 people in here?” Jerry said. “They’re all here in the summertime, but they’re more outside than they are in.”

Traveling the CoosaEDITOR’S NOTE: This is a continuing series written by David Atchison, Lakeside Magazine writer and Daily Home Pell City news editor, about his experiences as he travels down the Logan Martin stretch of the Alabama River Trail.

o say the water was cold was an understatement. It was a winter day, and the water was numbing.

It was like dunking your head into a bucket of ice water - and keeping it there. The skirt around the cockpit of

my kayak kept the freezing water out of my boat. Only my upper body was exposed to the ice-cold water – and my head. Oh, my head.

My paddle was in position to quickly roll back up out of the water, right side up, but as I came out of the water, I lifted my head, which killed my roll.

I plunged back into the freezing water, the ice-cold water. I could have pulled the skirt off the rim of my cockpit, but that would mean I would have to swim, with my boat, back to shore, a very cold swim indeed.

Instead, I brought my hand alongside my boat and tapped on the side of my kayak. It was a signal to my group that I needed assistance. I needed the bow of one of their boats, so I could flip back up.

Every second counted, especially since I was submerged in very cold water. I looked up towards the surface of the water,

waiting. I knew it was best to wait it out rather than to bail out of my kayak

Finally, I saw and heard the tap of another kayak hitting the side of my boat. It was Judy Ranelli. She put the nose of her kayak right on the side of my kayak. I reached up and grabbed her bow, and hip-snapped my kayak upright.

I don’t know how long I was actually submerged underneath the cold water, but seconds seem like minutes when you are upside down in a kayak surrounded by ice-cold water. I know it was only seconds, not minutes, but it was enough time to actually make me cross-eyed.

I was actually dizzy. It was an eye-opening experienced. In a normal situation, if I had missed my roll, I would have pulled the skirt, surfaced and dragged my kayak to shore. No big deal, but I knew I had help close by. I stayed inside my kayak, waited and was exposed to the ice-cold water, maybe a bit too long.

I have actually seen people experience “cold shock” from being submerged in cold water. They would hyperventilate, couldn’t catch their breath. Once they were out of the water, they were fine. It has never happened to me, but then I never hung upside

down in freezing cold water for any length of time.

I say all this not to scare people away from paddling, but to illustrate the importance of having proper equipment and experience, if paddling during the winter.

You have to ask yourself, “What if?”If you paddle a kayak or canoe, you

are going to eventually turn over – it’s inevitable. You have to be prepared when you do, especially during the winter and early spring months in Alabama.

Ear plugs and a full rubber head mask would have probably helped in my case.

I would never paddle during the winter without a minimum protection of a wetsuit. A wetsuit is not waterproof, but traps water between the suit and skin. Your body temperature warms the water between you and the suit.

Wet suits also protect paddlers from rocks, if they are paddling in whitewater. It is the most cost effective form of winter protection for paddlers.

Most kayakers wear dry tops. These shirt tops have rubber gaskets that prevent your upper body from being exposed to cold water. The upper portion of the kayak

skirt is sandwiched underneath the dry top, providing a good seal and keeping paddlers from being exposed to cold water.

Dry tops are a bit more costly, but are well worth the money.

If I am paddling on the lake, I will also wear neoprene boots that are knee high, which also helps prevent me from coming in direct contact with cold water when I am getting in and out of my kayak.

If it is real cold, I will wear a dry suit. Dry suits are the ultimate protection for paddlers. Dry suits completely seal out water, cold water. Paddlers can also wear warmer apparel and wool socks underneath their dry suit, which offers complete cold water protection. These suits are great, but they are also very expensive. Most people who regularly paddle during the winter should consider a dry suit.

As for me, I am ready to suit up for some winter paddling, so those who are willing to brave cold weather paddling, maybe we will see each other out on the lake.

Until then, have a safe and wonderful time on the lake.

ower water levels make this the time to make repairs to waterfront property. Putting off repairs to an eroding seawall might leave owners with less land than you had last summer. Winter is also a great time to make additions

or repairs to docks, clear swimming areas and remove trash from the lake.

“Erosion is a huge problem,” said Fred Casey, owner of Tradesman Co. in Pell City. “The thing is, when your property erodes, the position Alabama Power takes is that you can’t replace that property. When it’s gone, it’s gone.”

Casey calls the erosion of property an “unfortunate situation,” but says those who live on the lake have to be aware of the situation to make sure they retain their property.

The increasing amount of boat traffic on Logan Martin Lake creates more wake and, in turn, has a lot of bearing on the perimeters of the lake. Casey said more activity on the water leads means more erosion.

“Your property is being compromised by a lot of these larger wakes,” said Casey. “Protect your investment. Your property can wash away very quickly.”

There are several different types of seawalls that can help solve the problem of erosion. They include walls made from GeoStone, concrete, concrete blocks, wood and riprap. Casey recommends concrete as his first choice.

A GeoStone wall is very attractive but costly, and a little less efficient than a concrete wall, according to Casey. He adds that riprap is the least expensive material in which to construct a seawall, but says that it is an effective solution. A wall made out

of concrete blocks will dissolve over time and that wood walls are costly and have a “limited life.”

In addition to seawall construction and repairs, Logan Martin Lake’s winter pool also allows for better access for repairs and additions to boat docks and boathouses, as well as the clearing of areas used for swimming.

“Maintenance with regard to your dock is essential,” said Casey. “If you avoid maintaining it, you are going to pay the price on the other end. That usually ends up in building a new dock.”

Lower water levels allow for a better environment to remove objects such as rocks and stumps, which can be very dangerous to swimmers.

Before making any additions to lakefront property, permission must be granted from an Alabama Power representative. They have a published set of guidelines property owners must follow.

After approval, the next step is to address the situation with whatever dock builder you choose. Things to consider when choosing a builder are the company’s previous work, their reputation and what they are insured to do.

An Alabama Power representative will return to inspect the completed work to make sure that it is within their guidelines. If not, it will be taken down.

Cleaning the lake is another advantage of the lower water levels of the winter months.

Through the efforts of groups like the Logan Martin Lake Protection Association, Casey says the lake is “cleaner and more user friendly every year.”
