d Hello Joburgers!I am greatly honored and privileged to present to you our special 35th Birthday

issue of Hello Joburg magazine.

Hello Joburg was first published in 1980 by my father, Joseph Spinner after moving to South Africa from Israel. As a foreign resident in a city that was extremely unfamiliar to him, my father was always looking for new and exciting places to visit to help familiarize himself with the city and its people.

Now you must remember that in 1980 there was no Google where one would simply type “Restaurants in Joburg” and a list of over 1000 restaurants would appear. Noticing the lack of reliable and up-to-date sources of information for foreigners and even for locals, my father decided to launch a monthly print magazine showcasing the very best restaurants, shopping and leisure destinations in Joburg. Presto! A quintessential Joburg brand was born!

In this months issue we have showcased South Africa’s history and highlighted various editions of Hello Joburg that were published during these iconic moments. Take a look at pages ten and eleven for a timeline of SA’s history, from the release of Nelson Mandela in 1990 to the 2010 FIFA World Cup.

We’ve had the pleasure of sitting down with The Maslow Hotel’s new Executive Chef Jason Millar to find out what inspires and motivates him to stay in love with the high intensity of a hotel kitchen.

This month’s edition is jam packed with loads of innovative, interesting and exciting activities to keep you entertained. Why not head on down to The Lion Park and visit their new baby giraffe, Elsa who has stolen the hearts of everyone who has had the pleasure of meeting her.

I hope that you enjoy the same pleasure out of reading this month’s 35th Birthday issue as my team and I have had in compiling it. Thank you to our readers and clients who have helped establish a proudly South African brand 35 years in the making!

When you visit The Four Seasons Hotel it is sure to be love at first sight.

I was treated to the View Restaurant as one of the very first Joburgers to try out the brand new menu. Signature cuisine and simple, charming food with a modern twist is what you can expect.

The Menu is set in four or five courses with the option of wine pairing with each course. First course is the beautiful Amuse Bouche: marinated local salmon trout with champagne jelly and green asparagus. Moving on to the carrots, prepared in different textures with roasted Mozambique prawns and coriander pesto, paired perfectly with the Spice Route Viognier 2013. Third course and my personal favourite is the Roma tomato consommé with black crab ravioli, ricotta dumplings and fresh basil - innovative, attractive and delectable.

Dessert connoisseurs will enjoy the rich banana and peanut parfait with Jivari chocolate, caramelized popcorn and milk tart gel (heaven) or perhaps the Champagne and white peach jelly, plum ripple Tahitian vanilla ice cream, meringue and pomegranate. It seems when Chef Dirk Gieselmann ditched his engineering studies to embark on his food journey and apprenticeship he did us all a big favour. Having previously worked at famed Michelin three-star Auberge de l’Ill restaurant in Illhauesern in France’s Alsace region, we cannot help but celebrate him and welcome him with open arms (and mouths.)Four courses R950 / with wine pairing R1550. Oreo Pop-Up CaféSo sorry Cape Town but this ones ours! (Mwahahahaha!) Hello Joburgers get excited because the Oreo Pop Up Café has landed! Located in Rosebank Mall (Opposite Burger King) the Oreo café is only a pop-up, which means it will only be with us for one month. Unless we all sign a petition, guaranteeing a longer stay. Who’s with me?

We can all thank pâtissier Danielle Postma of Moemas for creating the Oreo-inspired treats. Think Yo-Sushi but without the sushi. Replace the Sushi Bar with an Oreo bar! That’s correct, a conveyor belt stacked with white chocolate Oreo fudge, white chocolate cheesecake, popcorn stacks, cookie monster cupcakes, Oreo chocolate truffles, ice-cream sandwiches, ice-cream sundaes and even ice-cream milkshakes. We found out more about why locals have loved his Mammas Shebeen on Gleneagles Road in Greenside for

years, and why it’s become a must-visit on every Jozi tourist’s list:

Tell me about yourself/background?I’ve been in South Africa for 22 years and have an MBA. My previous job was head of Enterprise Development at a large corporate. In October 2006, I was sick of the corporate life and the politics it brings. I wanted to do something unique and meaningful with it. I’ve no background or formal qualification in the restaurant industry, but it’s something I really wanted to do. I purchased what was then “Mama Tembo” and I renamed it “Mammas Shebeen”, after about 18 months.

Are you a chef?No, I manage and run the business side and taste the food (everyone knows how food should taste, right?) And shout when it’s necessary, but I have a brilliant chef, so this is not a regular occurrence.

What specifically appeals to you about this industry?I love interacting with people and am proud that I offer a uniquely South African menu. It’s nice to do something that makes people happy. Eating and drinking are fundamental to happiness.

What’s your favourite dish on the menu?That’s tough, but if I had to choose one, it would be the Oxtail stew and African flatbread - totally delicious! It’s a must have when you come eat here.

Best drink?Personally it’s whiskey, but our best seller is the Bo-Kaap Blues cocktail - (a deliciously lethal mix of cane, gin, vodka, lemon juice, lemonade and a dash of Blue Curacao. Many foreigners come to try the different cocktails and shooters, such as “The Sowetan Toilet”. It takes adept skills and patience to make. Ingredients

include: a banana liqueur base, Cape Velvet (or Amarula) on top and then a very thick, syrupy chocolate liqueur is dropped in at the end - and kind of suspends, in the middle. The story behind it is that during Apartheid black South Africans did not have flushing toilets and had to use long drops… No further elaboration needed, you get the drift…

Are you more of a drinking establishment?No, not at all. Our aim is to grow our food turn-over. It’s a fact that drinking clientele are fickle - they go where the trend takes them. We get lots of tourists coming to experience authentic South African food (our menu includes Mopane worms) and we’re one of the oldest restaurants on the Greenside strip. We’ve been in the same spot for nearly seven years.

What’s unique about Mamas Shebeen?Everything. The ambience is original. The crowd is diverse in age, race and culture. We serve quality food and offer a fun and different, night or day out. We are a genuine South African, authentic experience. And have lots of tourist interest but are by no means only frequented by tourists.

What is the best part about your location?I can’t emphasize enough how diverse Greenside is - in terms of the type of people it attracts. It’s truly cosmopolitan.

When are you open?Everyday - for lunch and dinner. We look forward to welcoming them with a Bo- Kaap Blues cocktail on arrival. When I ask people whether they’ve been to the restaurant, nearly all smile and recount a memorable evening. Or say it’s the “go-to place” when they have foreign guests. Even my 91 year old grandmother, a Greenside resident, is a fan…

Delicious frozen veggies from Nuveg

Being South African, I have always loved tea and rusks, but I don’t often eat these because of the high sugar and carb content. That

is why I just had to create a guilt-free version of this traditional South African favourite. These delicious delights are low carb, sugar free, gluten free and rich in healthy fats to keep hair and skin soft and supple. With Mother’s Day around the corner, why not spoil Mom with some delicious and healthy, homemade rusks.

INGREDIENTS:4 tbsp. coconut oil 3 large eggs400ml almond flour1 tbsp. psyllium husk1 tsp. ground cinnamon1 tsp. vanilla extract

½ tsp. nutmeg2 tbsp. sesame seeds2 tbsp. pumpkin seeds1 tbsp. desiccated coconut2 tsp. baking powderCoconut flour for dusting

Preheat oven to 180C°. 1. Spray baking sheet with Olive Oil Spray and Cook and sprinkle

some coconut flour on top to prevent rusks from sticking.2. Place coconut oil in a medium sized cooking pot and allow to

melt. Add cinnamon, nutmeg and vanilla and gently simmer for 3 minutes on very low heat to allow spices to infuse.

3. Place eggs in a large mixing bowl. Using an electric beater, beat the eggs for 3 minutes on high speed until light and airy.

4. Add coconut oil mixture to eggs and continue to blend for 1 minute until thoroughly combined.

5. Sift almond flour, psyllium husk, and baking powder into a large mixing bowl.

6. Add pumpkin seeds, desiccated coconut and sesame seeds.7. Add egg mixture to dry ingredients and mix thoroughly. Use your

hands to combine ingredients to form a thick dough. Knead lightly and then set aside for 5 – 10 minutes.

8. Break small pieces of the dough off and shape into rusks. I like to use the gap between my thumb and pointing finger to create the perfect shape

9. Lay out each rusk onto greased and dusted baking sheet.10. Bake at 180C° for 30 minutes, then remove from the oven. 11. Lower the temperature to 70C° and allow rusks to dry out for

1 hour, keeping oven door open slightly.12. Cool on baking rack.

Gordon Ramsay once said “I think every chef, across the world, has a double-edged sword - two jackets:

one that’s driven, a self-confessed perfectionist, thoroughbred, hates incompetence and switches off the stove and then takes off the jacket and becomes a family man.” And that’s exactly where we shall begin, at home. Let’s start off with Chef Jason Millar’s favourite dish to cook at home. Currently Jason seems to have a real love for low and slow cooking. He says there is nothing better than a confit gammon cooked in duck fat for twelve hours, then honey-glazed and served with roast vegetables, some baby boilers and great gravy. He seems to be on to something and we always salute a patient man. What about daring? Heroic? The most exotic food Chef Jason has ever eaten? “I was once lucky enough to try sea urchin. That was a bit freaky but overall a good/strange experience. Can’t say I’m trying very hard to source them.”

Jason loves the intensity in the kitchen and

he has ever since he started out cooking in the United Kingdom. The UK being an extremely competitive part of his career, he decided to return back to basics, back to South Africa where he then worked at the world renowned - The One & Only. Being settled in Johannesburg has revived a great joy and passion within Jason. He loves the uniqueness of the city and the great energy, which is exactly why he loves and is devoted to The Maslow. “It’s not a generic business hotel. I love the people and I love the energy that Jozi brings with its people.”

Most significantly Jason respects the produce in Jozi and the spoil for choice. He is most

excited about using Woodview Wagyu beef and if you haven’t tried Wagyu before you definitely should – it’s a total delight!

The hotel uses only free-range beef, the cattle are pasture-raised and grain-fed. This is a major focus for Jason with the newly launched Lacuna Bistro menu. The revamped menu will be changing more often too, in order to showcase freshly sourced produce. Each menu will be seasonal and will focus on garden-fresh local produce, which is readily available.

Jason has high standards when it comes to food: from the procurement of the ingredients through to the transformation and presentation thereof and he is strict and disciplined as to what leaves his kitchen. A recipe has no soul, only the cook can bring the soul to the recipe and boy oh boy Jason sure has a whole lotta soul!

It is really quite simple, Jason loves food. He loves food in all forms and has a dream job where he can transform the most wonderful ingredients into works of art. For Jason, it’s all about consistency, when he eats out at his favourite local steakhouse, if they are not consistent with their offering, then they don’t have his attention. And because he believes ‘the customer is always King’ the new menu at Lacuna is innovative, filled with passion, pizazz and is downright life-changing! So Mother’s Day is fast approaching and I faced the daunting prospect of writing the appropriate blog. I can beer-blog about just about anything; Father’s Day and Craft Beer – easy peasy;

Freedom Day and Craft Beer – couldn’t be simpler.

But Mother’s Day? Aside from writing a blog about mothers and the elusive link to craft beer, I also needed a solid idea on what I could do for my own mother this Mother’s Day.

GET INSPIREDSo back to the drawing board. Google offered no inspiration. So, I got to thinking. What does the average mother want out of life? A basket full of premium, hand-crafted, unrushed craft beer? Maybe even a “brew your own beer from home” kit? I can hear all the men in the house saying ‘yes please!’

But the bottom line is that what most moms want cannot be easily wrapped or ordered online (or delivered for free, if you’ll allow the blatant hard sell of our online craft beer store’s delivery). Most moms want a priceless moment of quality time with their very busy, grown-up, ‘my life is more hectic and important than yours’ sons or daughters. The story behind this little piece of patisserie and deli heaven explains why it’s filled with joy, beauty and quality. And also why it’s grown into a fully-fledged bakery and catering service. We spoke to Danielle Postma, married to Mike (the couple behind Moemas) about how they turned their dream into a reality. The official story from Moemas.co.za reads: “Once upon a time a girl met a boy in London. She was an aspiring pastry chef studying at the prestigious Leith School of Food and Wine and he was a musician who lived on chips and kebabs. Eight years on, their passion for each other is surpassed only by their passion for creating good food...” Intrigued, we asked for more details:

What made you open Moemas in May 2007?Mike wanted to help me achieve my dream. It was always on the cards to open something of my own. Ignorance is bliss, though. I never

anticipated how much strength and endurance was needed for the journey ahead.

What makes it different from other nearby patisserie/deli style offerings?I think we’re one of the few that still make everything on site, everyday! We don’t cut corners and always sell what we believe is the best you can get.

What do you pride yourselves on delivering? Service, service, service! We’ve a great relationship with our regular customers and welcome every new visitor as if they were entering our home. We train our staff on this daily. Tell us about the glamorous private parties and functions you host at night?We hire out our venue for private functions. And we’re busy finalising our much anticipated renovations and will then open at night for delicious dinners.

Anything else you would like to share about any exciting new things happening at Moemas in the future?We’re involved in a lot of exciting things outside the shop. Recent Magnum and Oreo pop-up

shops were fabulously exciting adventures.

Do you host many tourists? And what’s the general buzz about Moemas?In the famous restaurants and deli chain, Ottolenghis in London, there’s apparently a sign saying – “Our connection in South Africa is Moemas”. Yotam Ottolenghi is one of the nicest people I know and he’s kindly mentioned me in three of his four books. This creates a lot of interest. Also, our loyal customers tell their family and friends about us, whether they’re local or from overseas.

What inspired the name?My sister called my gran this. She couldn’t say “Ouma” or “Grandma”. My first cooking memories come from watching her make enormous batches of fruit cakes. The smell, the taste... I never tire of remembering those plump raisins in that spicy cake mix. I always thought that if I owned a shop one day, I’d perch on top of a little chair I’d have simply to sit and watch customers enjoy my creations. Artlogic’s popular Winter Sculpture Fair will return to the Nirox Sculpture Park near the Cradle of Humankind on the

Using Microsoft paint, Malcolm’s

child-like style holds much complexity in its verity. As a self-taught trombonist, pianist and

visual-artist, Malcolm Xorile Jiyane is evolving

into an African force to be reckoned with.

We sat right outside the Mzansi Art Gallery, on the pavements which line an ever-wakeful 7th Street in Melville, discussing and dissecting Malcolm’s interpretation of the society he depicts in his modern pieces.

The mosaics came before the music. Malcolm recalls doodling since his formative years but only became a painter after the trombone and piano had infiltrated his Soul. His imperfect memory is to blame for the lack of accurate dating throughout this article. But we could say the same for most of our native population, where dates are unimportant but time is dearly treasured. Sound waves continued to seep into Malcolm’s intelligence, where he moved from scribbles (in pencils and pen) to water and oil paints on canvas. As the conversation

progressed, Malcolm explained how he never went to high school! Finishing school at grade 6, Malcolm has memorised countless notes and travelled to Europe and America to share songs with those who long for South African tales.

This didn’t stop Malcolm as he found himself learning at the Gauteng Academy of Music in Daveyton from about 1996 where he crafted his compositional skills attaining a grade 8 in trombone and music. Still seeking societal validation, Malcolm enrolled in the Kwa-Zulu Natal University in the early 2000s in the hopes of broadening his understanding of music. To his dismay, his lack of a high school education found him subjected to foundation classes. After a few months of being constricted to constitutions he was well-aware of, Malcolm dropped out, picked up his pencils and freed himself from the idea normality. He returned to Daveyton and started the Malcolm Jiyane Tree’o…

The statement which Malcolm makes as an artist is to truly reflect the Universe’s infinite beauty and repulsiveness. Through nature’s magic and mystery, Malcolm’s art represents

his fascination with life itself. “When you plant a seed, you expect for it to grow and if you’re lucky it’ll become a tree. If you’re blessed it will bear fruits and you’ll be able to share those fruits”. Malcolm’s sole desire is for his artistry to produce fruitions. We reached a moment of dramatic irony as these words escaping Malcolm’s mouth happened the same time Erykah Badu’s “Appletree” begun playing inside the gallery. A pinnacle point of understanding destiny.

Malcolm X Jiyane is exhibiting at the Mzansi Art Gallery from 17 April – 8 May. So do yourselves a favour and attempt to solve his artistic riddles knowing the history behind his hands. Baby Giraffe Wins Hearts At Ever-Popular Lion Park

There’s something magical about looking at the Mercedes-Benz emblem, standing proudly on its bonnet as viewed from

the driving seat: the sun’s rays bouncing off the erect chromo three pointed star, as the S-Class confidently navigates its way forward. As it shines, you sense the legacy of almost 130 years of engineering prowess, it is a sensation that leaves the driver knowing he is driving something special.

Brands like Rolls-Royce and Bentley have made it their focus to craft cars specifically for those able to afford their opulence. There indulgence is rather overt. While Mercedes-Benz’s tactic is more veiled, specifically when referring to the S-Class in long wheelbase (LWB) guise. In the mid-fifties they created what would be the first “Sonderklasse”, translated it means “special class” (in the sense of ‘a class of its own’). The intention was to create the very best the brand could, and though by no means a cheap car, it was, and still is, 1/3 of the price of the likes of a Rolls-Royce.

In 1972 a Mercedes-Benz official named and labelled their flagship vehicle an S-Class. Five generations later, 2014 saw the launch of what is code named the W222, or for us lay people, the ‘new’ S-Class.

Its large grill and fluid lines, which run to the neatly rounded off rear of the car, make this the most attractive S-Class to date. Its design and technological advancements are Mercedes-Benz’s

bragging rights to which they claim the S-Class to be the ‘best car in the world’.

The new S-Class represents the future. It’s the way Mercedes-Benz and eventually other manufacturers implement driver safety and enhancement systems, both passive and active. An example of previous innovations lead by the S-Class are systems we now take for granted, like ABS braking, airbags and traction control. In 2005 the S-Class featured an infrared night vision system, which enabled the driver to better see the road ahead, with the restrictions of the dark.

I’ve driven two S-Class examples, each for a week. Most recently, the S600 L (long wheelbase), and prior to that, an S400 Hybrid. The distinction between the two lies in the levels of comfort for the rear passengers - the LWB version being like a chauffeur driven car and hence my assimilation to Bentley and Rolls Royce. The S600 L, though a glorious car to drive, is even better to be driven in.

The LWB version of the S-Class is 13cm longer than the standard vehicle, this additional five inches of endowment is furnished to the rear passengers. As a result, the rear doors are massive. Opening them reveals an aeronautic business class pod for two. Every conceivable button is available to electronically transform and enhance your level of comfort: 45 degree reclaimable and heated or cooled seating, stowable tables, climate control, electronic side and rear sun blinds, rear

TV screens with DVD interface and on and on… A large part of the car’s majestic ride is due

in part to its AIRMATIC air suspension, which automatically defaults to Comfort mode on ignition, but can be adjusted to a Sport setting should a firmer ride be required to accompany a spited drive. It is bizarre how speed bumps, road surface irregularities and other tarmac blemishes seem to disappear as a result of its advanced suspension settings - it is as if you’re floating on a magic carpet ride, where the journey is always flawlessly smooth.

The 6.0 V12 engine in the S-Class is huge. It’s like a castle, with its owners never really using all of its rooms. Keeping the S-Class moving at legal road speeds means only having to delicately perch your right foot on the accelerator. This glorious engine is mated with a 7-speed automatic gearbox. The effect would seem to be similar to an electric car: it’s silent and effortless, but on the odd occasion that you feel like opening her up, the S-Class is able to dart from 0 to 100km/h in 4.9 seconds.

The S-Class Mercedes-Benz comes standard with a 6-year/100 000km maintenance plan. It also scores five stars in the European crash test standard, EuroNCAP. The S-Class reinvented the way we perceive luxury motoring. Mercedes-Benz leads this category of car while the others follow and is better at offering indulgent opulence than its rivals.

an interesting concept, and one that left me pondering mine as I left the launch of the new 308. The 308 comes with high hopes as it is the 2014 title holder of the prestigious European Car of the Year.

Visually, the new 308 is clean and modern with little fad-type styling aids. Instead, the lines have been designed to have a broader reaching appeal and the effect is easy on the eye.

The new 308 is an all new car. Starting with a new chassis that has been design to make the car lighter and more agile than before, while remaining taut. On paper, it is 140kg lighter than the car it replaces. This means that it doesn’t need a big engine to get it going. Peugeot are leaders in producing highly efficient diesel engines, so now, they’ve produced a petrol engine second to none in their 1.2 three cylinder turbo petrol unit (PureTech engine technology). It is simply outstanding in every respect, hence it having 121 patents. It is highly refined, offers brisk performance with a fantastic range of strong pulling power (torque) throughout its entire rev band. To add to its incredulous list of talents, the new engine is highly efficient. In fact, under a controlled test done by Peugeot, they achieved 1 810km on a technical test, which resulted in a consumption figure of 2.85l/100km.

The South African national flag was first flown in April

1994, after the first free election in South Africa. It is designed by Frederick G Brownell and is the only flag in the world with six colours.

The flag means different things to different people. According to the flag’s designer, the red symbolizes the blood that was shed during the various wars and conflicts in the country. It is also suggested that the blue represents the sky and the two oceans that flank the country.

The green symbolises the farms and the rich, natural environment of the country, while the yellow represents the natural resources, particularly gold.
