RICEBASMATI RICEBasmati rice is a variety of long, slender long grained aromatic rice which is grown in India. As per the data available end of 2014, India has exported about 65 percent of the basmati rice globally, where-as Pakistan accounted for the rest. However, many countries use basmati rice which is domestically grown too. The word “Basma-ti” derives from the Hindi word bāsmatī, meaning “fragrant”. The cooked rice gives out a beautiful aroma. Basmati rice is believed to have been cultivated in the Indian subcontinent for centuries. Indian Traders have introduced Basmati rice to the Middle East. It remains an important part of the various cuisines of India, Pa-kistan and Bangladesh; it is now extensively used in Arab, Middle East and Persia too. The exclusive growers and exporters of this type of rice are from India, Bangladesh and Pakistan.

NON-BASMATI RICEAll rice other than basmati rice is non-basmati rice. There are thousands of varieties of non-basmati rice in the world. India has the maximum number of varieties of rice; incidentally production of basmati rice is hardly about 1%.Non basmati rice comes in different shapes and sizes, slender, long, round, oval with different textures and tastes. Some of the names of these rice are IR64, PR 11/14, Ponni Rice, Sharbati Rice, Annapoorna rice, Samba Rice, Suwarna Rice, idly rice and Masoori. The purity would be 94% and moisture content around 12% for all these type of rice.

SUNFLOWER OILLight amber in colour with a pleasant fragrance, sunflower oil is extracted from the seeds of the sunflower. The most common use of sunflower oil is in cooking but it has also found use as an ingredient in cosmetic products.The oil has several favourable qualities which has made it a high demand commodity. Some of these qualities include:

1.The oil is a stable liquid at room temperature 2.The natural colour is a pleasant light amber 3.The flavour is mild and not overpowering 4.Sunflower oil is rich in Vitamin E 5.Low in saturated fats 6.Low in trans fats 7.Refined sunflower oil has a long shelf life

Unrefined sunflower oil is nutrient rich and has many health benefits. The process of refining sunflower oil, while reducing the nutrient content, greatly in-creases its stability and shelf life. Refined sunflower oil retains its mild flavour and is ideal for cooking methods like frying. Refine sunflower oil does not break down at higher temperatures and also retains a high level of vitamin E. Refined sunflower oil is therefore preferred for cooking purposes.

OIL TYPESCooking oils are many, with different names, colours and in different packages. These cooking oils are made from animal, plant or synthetic fat and used in cook-ing, baking, salad dressing, as dips etc., the extraction and refinement are done as separate processes. Extraction of oil happens from seed, fruit or plant. Then refinement process takes place which can alter the taste, colour, texture, smell and appearance.

i) Coconut oilExtracted from coconut – both from wet and dry coconuts. Used in cooking as well as for its medicinal properties. It has high levels of saturated fat. People living in areas of high temperature may use this in cooking and digest. It is not so easily tolerated for people in temperate climates. It is hence not advised for regular con-sumption.

ii) Mustard oilExtracted from mustard seeds. Used for cooking in North and Eastern India. Have medicinal properties. Used as massage oil for arthritis or joint pains and in natu-ropathy clinics. To light earthen lamps, and in pickle preparation as a good preser-vative

iii) Soya Bean oilExtracted from Soya seeds. Mostly used for frying and baking and salad dressing. It hardens when exposed to air and becomes dry, due to oxidation. It is hence used for printing inks and oil paints.

iv) Corn OilExtracted from corn, used as salad dressing and in cooking. This oil is a key in-gredient in margarines. It is used as biodiesel and in manufacture of soap, paint, rust-proofing, inks, textiles and insecticides.

v) Olive OilExtracted from whole olives, by pressing, used for cooking and salad dressing. Spain, Italy and Greece produce olive oil. Extra virgin olive oil has less than 0.8% acidity. Used in soap making and skincare products. It is a safe lubricant.

vi) Palm OilEdible oil extracted from the palm fruits. It is red in colour due to the high beta carotene content. It is highly saturated vegetable fat and is semi solid at room tem-perature. Used as cooking oil in Europe and as an industrial lubricant for machinery in Britain. Due to its high saturation of vegetable fats and hence oxidation, it is not advisable to use palm oil in cooking since it is risky to health.

vii) Peanut OilOr ground nut oil, is extracted from ground nuts. It has a strong peanut flavour and aroma. People, who are allergic to peanut products, should be careful with the usage. Used in food preparation, making soap and salad dressing. It is also used in body massages in naturopathy clinics.

PICKELSTaste buds of an Indian have an affinity towards tangy, spicy pickles. Called by different names in different regions, pickles are a must in a meal for com-plete satisfaction. Distinctive, rich and tangy – pickles are a side dish liked by every palate. Pickles can be hot, spicy, sour, sweet or salty.Known as “Achaar” in Hindi, the pickles are made from varieties of vegeta-bles with a wide range of flavors. Raw mangoes, lemons, gooseberries are commonly pickled in India. Edible oil, powdered fenugreek seeds, red chili powder and salt are used to preserve pickles for years. Recipes are handed down through the generations. The more aged the pickles are, the tastier they become.

Usually prepared in summer the process is faster and better in the heat. The seasonal vegetables or few fruits are washed, wiped with a dry cloth and fine-ly chopped. Care is taken to see that a dry ladle is used to mix the chopped vegetables with salt and kept for a few days in a dark room. Usually a ceramic container is used and the mouth of the container is tied tightly with a cloth to make it airtight. It is then taken out, mixed well again and kept for few more days in a dark room so that the salt gets completely absorbed in the vegetables. Then the blend of specific spices and edible oil –usually mustard or sesame oil are added and mixed well. Every day, mixing with a dry ladle is adhered to. The pickle is now ready for enjoying.

TYPES OF PICKLES

i) Boiled vegetables marinated in lemon juice and salt and then the blend of ground spices and edible oil is mixed after few days. These pickles are ready for consumption within ten days time.

ii) Raw vegetables are marinated in salt for a month, taking care to mix pe-riodically with a dry ladle. The blend of ground spices and edible oil is added after a month and again covered well and kept in a dark room for as many as one or two months. Then these pickles are ready for consumption.

PICKELSBELOW ARE SOME OF THE VARIETIES OF INDIAN PICKLES

i) Mango Pickle Variety of mangoes popularly known as Avakkai in Andhra Pradesh which is known for its spicy red chilies, Mangai pickles in Tamilnadu made from baby tender mangoes. This pickle is eaten with curd rice and is a favorite.

ii) Instant Mango Pickle Instant mango pickle can be made with a mango called “Thothapuri”, cut in to fine pieces and spices are added. Seasoning of mustard seeds in edible oil is poured on the cut mangoes. Can be consumed in the very next meal.

iii) Gooseberry or Amla PickleVery effective in digestive disorders, this pickle is a favorite. It is very effec-tive for stomach and digestive disorders. Rich in vitamin c, regular use can prevent acidity and boost immunity.

1.Lemon pickle: All time favorite and available in all seasons. It can be pre-pared with lots of variations and is a favorite with curd rice in summer.

2.Mixed vegetable Pickle: These are popular in North India and are less spicy and tangier. It can be used with Parathas and Roti. Prepared from vegetables like carrot, radish, cabbage and cauliflower. Ginger, garlic and peppers are used to spice it up. Usually these are prepared in winter.

3.Green chilly pickle and garlic pickles are favorites in Andhra Pradesh and are very spicy. A small amount of jaggery is also added.Tomato pickle, coconut pickle, onion pickle are a few more variety.
