Make way, craft beer; craft spirits are coming for your spotlight. Check out three local distilleries putting Tampa on the map with their own spins on your bar favorites. Located in the heart of Warehouse Arts District, their 20,000 square-foot facility incorporates green technology with two 600-liter copper stills and 300 50-gallon American oak barrels to create a rye malt whiskey, white whiskey (a.k.a. moonshine), two cordials and two vodkas. One, called “Starkus,” is an almost whiskey-like barrel-aged vodka named for the Lithuanian tradition of burying a barrel of raw rye spirits upon a baby’s birth that is only to be unearthed on the child’s wedding day. Baby or not, we say a bottle is perfect for any occasion. Florida Cane Distillery Starting from a terrible tasting experiment in a South Tampa garage, Lee Nelson and Pat O’Brien created Florida Cane Distillery in 2012, one of the first craft distilleries in Florida. The duo worked with local and state legislators to modernize Florida’s distilling laws to allow for tasting rooms and the direct sale of spirits to consumers. While the distillery started out with its signature Florida CANE vodka, filtered through its custom charcoal system, the product lineup has expanded to 10 Florida-inspired flavors of vodka (with names like Plant City Strawberry and Orlando Orange), gin, moonshine and whiskey. Stop by for free tastings and tours Thursday through Sunday; serious wannabe distillers can even take advantage of Florida Cane’s craft distilling workshop (check website for dates and details). St. Petersburg Distillery The spirits coming out of the booming St. Petersburg Distillery have something going for them few people do: they are born-and-raised Floridians. Launched in 2014 by the Iafrates family, the state’s largest craft distillery uses locally grown ingredients in all of its products, from Okeechobee corn for whiskey to Florida honey and oranges from Polk and Pasco counties. Their small-batch, pot-stilled brands include Old St. Pete, featuring a vodka, gin, rum and whiskey, Oak & Palm coconut and spiced rums, Tippler’s Orange Liqueur, Royal Mead Honey Wine and Banyan’s Reserve Vodka, voted 2016’s best artisan vodka in the South by Southern Living Magazine.
