We say thank you to all the residents, staff, families, visitors and volunteers who have strengthened our commitment to Joy, Love, and Hospitality throughout 2021. From the entire team at Catholic Homes, we wish you a Merry Christmas and a prosperous New Year. The Christmas season is here, and we have been celebrating together with singing Christmas carols, festive lunches, and night time bus tours to experience the amazing Christmas lights on display in the community. Moya is feeling very happy with the fun she has had with Santa at Ocean Star this year. She has been laughing a lot and telling people this year she got to dance with Santa. Bringing joy to the people who live at Catholic Homes is at the essence of Care with Purpose, well done Tabatha.

Christmas

Preparations

People living at Trinity have been busy

with Christmas craft, garden bed cleaning

(in preparation for re-planting), and flower

arranging in the lead up to Christmas. It

certainly is a busy time for everyone, with

much purposeful engagement going on.

TRINITY

Elf on the Shelf This is Bluey, Trinity’s Elf on the Shelf and

he has been popping up everywhere

around Trinity throughout December.

He was hard to keep track of.

His first appearance was the on the 1st

of December when he was found

hiding in a plant pot in house 37 by

lifestyle facilitator and carer, Jody. She

says “Bluey was naughty and no one

knew where he would be found next”.

began with Pearl and Danni lighting

the special candle, and then

everyone participated in the

Christmas carol singing. This was

followed by enjoying some amazing

Christmas treats.

Christmas Lights

Tour Herdsman Lake Tavern was the dinner

venue for the Christmas bus outing. A

tour of Christmas lights on display in the

community North of the River followed,

finishing off a most enjoyable evening.

Christmas Entrée

Platter

LESLEY’S RECIPE (REPEAT)

GUACAMOLE DIP

4 avocados

juice of 1 lime

1 red onion (white is OK), finely

chopped

sea salt

handful of coriander, chopped

Mash all ingredients together to the

consistency you prefer.

REFRIED BEANS DIP

1 tin red kidney beans

spring onion, chopped

olive oil

1 packet taco mix

juice of half a lemon or lime

pepper & chilli powder (optional)

Drain kidney beans, get rid of juice & bits

of skin. Heat beans and spring onions in

very small amount of olive oil in frypan for

2-3 minutes. (You don’t want them too

soft and mushy.) Mash with taco mix &

pepper & chilli, if you want them.

SALSA

cherry tomatoes, halved

olive oil

1 avocado, mashed

spring onions or chives

salt & pepper to taste

Carefully spoon ingredients together so

mashed avocado doesn’t become too

soft.

SWEETCORN DIP

1 jar sweetcorn spread

cream cheese

Mix together.

Surround these dips with your choice of breads & crackers, or make your own crackers:

Cut pieces of tortillas or wraps into smaller shapes. Sprinkle with garlic salt or onion powder,

or both. Give a light spray of olive oil. Place on a baking tray & bake at 180 degrees for 8-10

minutes, or until crisp.

Place in a circle on a platter or Lazy Susan, around the dips. You can also warm pieces of

pita bread whole & then cut them into triangles.

OTHER ENTRÉES:

Celery sticks filled with quince paste.

Figs - cut in half, scoop out a some of the fruit, & replace with a small amount of blue cheese.

FEATURE

Meet Audrey

Audrey Willis was born in Ireland and

has fond memories of relaxing holidays

at the family cottage in the

countryside. Audrey attended

boarding school in Wales, and attained

a BA Degree and Diploma in Social

Science at the University of Dublin. She

later worked as a nurse in England, at St

Thomas’s Hospital, and then in

Manchester.

Audrey came to Australia in 1970 with

her husband and two children. She has

been associated with many sports

including hockey, lacrosse, rock

climbing, and cricket.

Audrey prefers the county life over the

city, and retired to a hobby farm and

bred cattle for 16 years. She now lives

at Catholic Homes Servite residence in

Joondanna.

Audrey shares her secret for success as

being not taking life too seriously, and

looking on the bright side.

January 2022 Next month we will be focusing on our

exciting plans to help people living at

Catholic Homes residences to experience a

life of purpose. Keep an eye out for the next

edition of “Out & About”.
