Information

The Community Supported Agriculture program (CSA) has an average of 26 participants per week. A majority of our participants have been CSUN staff and faculty. We market our CSA program via our website, Facebook, Instagram, and bulletin board as well as during our on and off campus tabling events. To sign up for CSA participants must visit www.underwoodfamilyfarms.com and go under their CSA program tab, where they will find the link CSA sign-up. Our MMC Interns Jessica Wunder, Julie Jordan, Amy Meyer, and Jennifer Lee have been handing out the produce boxes during the Fall semester.

Survey Results: There are a total of 25 responses as of the current date. For the September 29 Education Series a survey was not provided, because the assessment tool was being revised. The average score is a 4.6 out of 5, which takes into consideration level of interest, professional usefulness, and effectiveness of delivery. Participants were asked what topics they would like learn more about, and answers included renal, diabetes, how to council a patient, binge eating disorder, sports nutrition and public health nutrition.

Information

The Magaram Center hosts a table at the CSUN AS Farmer's Market on Tuesdays from 10am - 2pm. The Center disseminates general nutrition information and information about the Center's services and resources. MMC in collaboration with campus dining coordinates a monthly Food Demo at the Farmers Market. Through this event we have served a total of 258 community members for Fall 2015 semester. Diet & Recipe Analysis Agenda Item 6.1e

Information

MMC Interns utilize the ESHA Food Processor software to conduct nutrient analysis of food records for diet analysis, and they also utilize the software to conduct nutrient analysis of recipes that includes a nutrition facts label, ingredient list, nutrient analysis, and food safety guidelines. Analyses may also be completed for recipes provided by outside food manufactures. MMC Interns Jennifer Maren, Irma Madrigal, Jennifer Gomez, Amal Basravi; and our Student Assistant Francesca Campisi complete oversee complete the diet and recipe analysis. All interns have taken or currently taking FCS 321, which introduces them to the Food Processor software. Since July 2015 we have completed 2 diet analysis and 39 recipe analysis. We are currently collaborating with Rochelle Levy & Associates, Inc. They specialize in menu, recipe and product development. They are a full service food consulting and marketing agency that provides food styling, consulting and specialized programming to corporate clients throughout the world. Their customized programming for our food clients includes recipe development, menu concepts and planning, feature writing, food styling, promotional products, new restaurant concepts, catering, wine and food special events and promotions, merchandising materials, on-line training, product prototype development and evaluation of nutritional requirements and ancillary educational materials. They work from coast to coast, and internationally in Mexico, Canada, Australia, United Kingdom and Brazil. Some companies and restaurants they have worked with are Shakey’s Incorporated, Rose City Diner (Pasadena, California and Honolulu), Penguins (Santa Monica, California) and Market City Caffe (Pasadena, Burbank, Beverly Center in West Hollywood), Gelson’s Markets, Safeway, Inc., IHOP and Quizno’s Classic Subs among many others. IRA Grant - Agenda Item 6.3

Information

An Instructional Related Activates Grant (IRA) was awarded to the Magaram Center in the amount of $8,000. This grant will be used in a collaborative project between Cassie Berger (Food Science Graduate Student), Julie Ellis and the Marilyn Magaram Center. Last semester Cassie and a few of her classmates started working on an exciting new product – Matador Marmalade. Matador Marmalade is being developed with the idea of creating and incorporating campus recognition and sustainability into a product generated by the students for the students. Professor Julie Ellis inspired the idea for developing a marmalade that can be sampled at the weekly CSUN Associate Students Farmer’s Market and sold on campus. The concept of orange marmalade was chosen because CSUN was established on an orange grove in the late 1950’s and some of these original trees still remain. The product is expected to begin production in Fall 2015. The product development project will enhance the AS Farmers Market by providing students and the CSUN community with nutrition information, cooking demonstrations and recipe testing focusing on produce from the farmers market. The grant will cover an update to Compusense, sensory evaluation software and install the final sensory workstation. This software will allow the foods science student to properly analyze consumer acceptance of the recipes and products created.

Produce for Better Health Foundation (PBHF) – Grocery Tour Grant

Information

The Marilyn Magaram Center submitted a grant proposal to PBHF to help support grocery store tour training for our Dietetic Interns, which will help increase their knowledge of fruit and vegetable issues, strengthen our collaborations with our community supermarkets, and most importantly to educate the community in low income areas about corporate marketing, private label products, common misperceptions about fruits and vegetables, and solutions to making healthy food choice. Proposed amount for grant $4000. Unfortunately, we were not awarded the grant, but the grant committee highly recommended applying for Fall 2016 application with minor suggested changes.

SCIFTS Grant Agenda Item 6.5

Information

Julie Ellis submitted a grant proposal for new Rheology equipment to the Southern California Institute of Food Technologists (SCIFTS). The full amount of 10,900 was awarded to purchase a new rheometer and viscometer from Brookfield Engineering Laboratories for the food chemistry lab. The equipment is in the process of being purchased. The rheological equipment will be replacing and upgrading the old equipment in the food chemistry lab for use is the classroom to help enhance student learning with hands-on experience and will allow for faculty research opportunities.

USDA-HSI Grant Project Agenda Item 6.6

Information

The USDA-NIFA Breastfeeding Education Grant is in its second year of implementation. Updates:

Outreach ambassador implemented 9 outreach sessions to undergraduate students informing them about the MS in Nutrition and Dietetics program.

We awarded: a) Five GRE stipends to cover the cost of taking a GRE prep course and/or the GRE exam to undergraduates who intend on applying to the MS in Nutrition and Dietetics program; and b) Four $1000 tuition stipends to MS in Nutrition and Dietetics students.

Spring 2016 the HSCI Department will be offering two sections of 434 – lactation education. Both sections are already full.

HSCI 534 –Lactation Education for the Healthcare Professional (i.e., the graduate level lactation education course) will be reviewed by GCS at their December meeting.

Over the Fall semester, Dr. Efrat identified four community organizations who are interested in providing graduate students completing the lactation education course with opportunities to gain practical experience in the area of lactation education.

To disseminate to students information about the lactation curriculum at CSUN as well as career opportunities in the area of lactation, Dr. Efrat worked with VISCOM to develop a Lactation education at CSUN website. UniHealth/CPHIZ UniHealth Foundation and was called the Canoga Park Health Improvement Zone Initiative (CPHIZI).

Information

The Canoga Park Health Improvement Zone (CPHIZ) project worked with elementary school campuses and implemented best practice models for school health and nutrition, chronic disease management, parent empowerment, and social services case management. MMC has partnered with Dr. Terry Sweeting (Kinesiology) and Dr. Michelle Barrack-Gardner (Nutrition –CSULB).

On July 17th a cooking class was provided to all new freshman athletes. There were 23 in attendance. As of July 2015, there have been 83 Bod Pod tests from the Athletic Department. The following from each team: Men’s Basketball =18, Women’s Basketball = 14, Softball = 23, Men’s Soccer = 26, Women’s Golf = 1, and Water Polo = 1. NEVHC Contract/CHLA Agenda Item 6.9

Information

The Northeast Valley Health Corporation (NEVHC) has partnered with Los Angeles County Department of Public Health and First 5 LA to bring Choose Health LA Kids to the communities of the Northeast San Fernando Valley and Sun Valley. The Marilyn Magaram Center is a subcontract with NEVHC. The goal is to improve nutrition, increase physical activity and reduce obesity in the communities The Center had 13 Dietetic Interns and 2 CSUN students participating in the grant by providing healthy food demonstrations to parents, participated in updating resource guides for the community and in nutrition education. The 2nd year for the subcontract ended and the Center will be in the 3rd year to meet its mission by participating in promoting healthy lifestyles to the communities. Agenda Topic: Let’s Cook and Move in Schools Agenda Item 6.10

Information Let’s Cook and Move in Schools is a comprehensive program developed and delivered through a collaboration of community partners that aims to increase physical activity and healthy eating behaviors among elementary school students and their families in low income, predominantly Latino serving schools in Los Angeles. Funding was provided by Dignity Health and AETNA, and this is a collaboration between the Marilyn Magaram Center and the Kinesiology Department. For Fall 2015 we have been contracted with 2 LAUSD elementary schools, Anatola Elementary and Gault Elementary. The services provided under this program included: My School In Motion – A morning physical activity and nutrition message, conducted outdoors and school-wide, 15 minutes/2days per week. We contracted with My School In Motion® program to coordinate at our school sites.

Passport to Fitness and Nutrition - An after-school program, 90 minutes/3 days per week, including a physical education component, as well as a Preparing a Healthy Snack program (45 minutes one day per week). The Passport to Fitness and Nutrition activities and materials are based on a world geography theme that connects to classroom curriculum and provides another level of fun and engagement for students, as well as progress tracking. Dr. Sariscsany from the Kinesiology department coordinates this program, and we have CSUN nutrition student volunteers coordinating the Healthy Snack portion of the program.

Parent Education Class – 2 ½ hours/1 day per week during the school day, to engage parents in nutrition education and physical activities as well as cooking healthy recipes.

Family-based After School Program – For families of overweight and obese children, 2 hours/1 day per week, based on KP Kids curriculum. Our partnering agency, Valley Community Care Consortium, is contracted to coordinate the program at our school sites.

“My Plate: The New Food Guide Musical” – Participatory dance-based show that engages students school-wide in physical activity and learning about nutrition and healthy eating behaviors, and which also meets the 200 hours/semester school physical education n requirement. Helen Butleroff, an ex-rocket and a current Registered Dietitian is the founder of MyPlate Musical, and is contracted to coordinate it at our school sites.

All of the programs mentioned were coordinated at Gault Elementary in Spring 2015, and have been coordinated at Anatola Elementary in Fall 2015. In addition, we have gone back to Gault Elementary with a gardening curriculum for the children and a training program/professional development for the school. Going back to Gault Elementary school, providing them with training sessions and supporting materials is to help enable teachers, staff, and parents to sustain the program after the first year. Women Infant & Children (WIC) Center on Campus

Agenda Item 6.11

Information

WIC is a Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) that provides Federal grants to States for supplemental foods, health care referrals, and nutrition education for low-income pregnant, breastfeeding, and non-breastfeeding postpartum women, and to infants and children up to age five who are found to be at nutritional risk. Marilyn Magaram Center has been awarded a grant from Northeast Valley Health Corporation (NEVHC) to open a WIC Satellite Clinic on CSUN campus. The clinic opened in September 2015, and is located in Santa Susanna Hall Room 104. Erin Manlulu, CSUN DI Coordinator, oversees the clinic on Thursdays. The Clinic is open to all CSUN students who are low-income, expecting a child and/or have children ages 0-5. Participant Numbers: September – 4 October – 2 November – 1

Picky Eaters Clinic Agenda Item 6.12

Information

The Speech, Language, and Hearing Center at California State University, Northridge works to provide the San Fernando Valley community with access to early intervention for children with diagnoses that interfere with their speech, language, and hearing. The health care professionals at the Speech, Language, and Hearing Center have expressed a need for Registered Dietitians to work with their patients in order to address selective eating. Selective eating is defined as selectivity of food that severely limits dietary intake, resulting in compromised nutrition status. The Picky Eaters Clinic will be designed to address selective eating by providing patients with nutrition assessment and intervention plan. In addition, the clinic will provide education and tools for families, so that they may be able to provide their children with support needed in the home to increase nutritional intake. The program will begin in January, 2016 in conjunction with the Center's Early Intervention Program. The program is currently in the creation process.

Faculty Development Day: Cooking On A Budget with WIC Foods -

Information

On October 19th, Marilyn Magaram Center coordinated a cooking on a budget workshop for faculty and staff. Topics covered during the session included tips to save money in the supermarket, how to choose the most nutritious foods for your family, and how to involve your kids in the kitchen. After informational session, staff/faculty participated in a delicious food demonstration and given a tour of the WIC satellite clinic. All participants were provided with a copy of the NEVH-WIC Program cookbook. The workshop took place in SQ112. There was about 15 in attendance.

On October 15th, Marilyn Magaram Center along with the General Education (GE) Paths program coordinated “An Evening of Collaboration for Actionable School Solutions,” with a special screening of the movie “Bite Size.” The film focuses on the topic of childhood obesity. “Bite Size” tells the stories of four inspiring kids from diverse backgrounds who are fighting for their health one day at a time. They prove that it's not just about the number on the scale, what really matters is learning what keeps you active and makes you happy. CSUN students, faculty, administration, elected officials and community members were invited to attend the screening and participate in the panel discussion following “Bite Size.” At 5:30pm the VIP doors will opened for drinks, appetizers and networking with other organizations fighting America's battle against childhood obesity. At 7:00pm was the screening of the "Bite Size" movie. There was a Q&A following the screening. The VIP reception was at Sequoia Hall 112, and the screening of the "Bite Size" movie took place in Sequoia Hall Nobbs Auditorium. There was about 100 in attendance.

In July, MMC participated at a Community event called Back to School Expo sponsored by Brooks and Brooks Foundation & LPCC. The Parenting with Love Back to School Expo featured family friendly oriented products, services and activities, exhibition, food, and games. MMC participated in the 2nd Annual VCCC Diabetes Expo on November 7. The expo was located at the San Fernando Recreation Park, and offered free health screenings, flu vaccines, and nutrition information for community members. LA DPH Community Project Agenda Item 6.19

Information

The LA DPH Project is to begin creating a health and wellness resource guide specifically tailored for the Korean population. The information will be both in English and Korean and will focus on culturally sensitive practices surrounding food, physical activity, and general health practices. An Asian-tailored MyPlate will be created to help Koreans follow a food guide they can understand and relate to. Healthy Korean recipes will also be included with descriptions of cultural norms related to the recipes in order to bring a deeper understanding and awareness of Korean traditions and customs. We are currently in the research process of the project. Data is being collected regarding common nutrition-related diseases specific to Koreans, Korean traditions and customers, and information on what Koreans usually eat on special occasions. The data collected will help us create the Asian-tailored MyPlate and recipes.

Peer Mentoring to Increase Diversity in Dietetics

Information

The California State University Northridge (CSUN) and NEVHC WIC Dietetic Internship Programs are offering a mentorship program for culturally diverse students applying to dietetic internships. The aim of this program is to increase diversity in dietetics by guiding under represented dietetic students through the internship application process California State University Northridge (CSUN) dietetic interns will provide one on one guidance, coaching and support of students through the dietetic internship application process. We currently have 13 Dietetic Intern Mentors advising a total of 17 mentees. Our mentees for 2015-2016 group are from CSUN, CSULA, and Drexel University in Philadelphia. A meet and greet orientation with the mentors and mentees is coordinated the beginning of the semester, providing the Interns and the students the opportunity to connect with one another. In addition, as part of the program, mentors and mentees work on a special project, creating healthy recipes. Each year there is a theme for the recipes, and this year the focus is on healthy eating on a budget. The recipe gets sent to the MMC for a recipe analysis to be completed, and the finalized recipes get posted onto the MMC Nutrition Expert Website.

The Marilyn Magaram Center currently has two research students recruited from Building Infrastructure Leading to Diversity (BUILD) Promoting Opportunities for Diversity in Education and Research (PODER) an undergraduate research training program funded by the National Institutes of Health (NIH). Since we have two BUILD PODER research students, we have had the opportunity to submit two BUILD PODER proposals for new equipment: ESHA Food Processor software – Genesis ($5000), and Bod Pod ($47,000) We are hoping to hear back from grant committee in a couple of weeks.

Cooking Matters® - Grocery Tour Grant

Information

The Marilyn Magaram Center submitted a grant proposal to Cooking Matters® to help support coordinating and implementing grocery store tour for low income communities. If awarded, Dietetic Interns and MMC Interns will be trained in the Cooking Matters® curriculum and prepare to conduct the tours beginning February 2016. We will be reaching out to grocery stores with whom we have already developed relationships and MOUs through past grocery store tour programs in December 2015/January 2016. We anticipate weekly grocery store tours beginning February 2016 through November 2016. In January 2016 we will market the opportunity for the tours to low-income families with children ages 0-5 within local LAUSD schools and WIC locations. The tours will be held at stores that are in the vicinity of CSUN as mentioned above. All tours will follow the Cooking Matters curriculum (i.e. reading food labels, comparing unit prices, finding whole grain foods, and identifying three ways to purchase produce), followed with a short cooking demo where participants can take samples as a snack. Proposed amount for grant $3040. This collaboration will draw awareness to the importance of purchasing fresh vegetables and fruit and a greater understanding of healthier food items by the low-income families with children ages 0-5 within local communities.
