In 1992 ten artisan cheesemakers from all over Spain founded the Consorcio, with the aim to join together and build a comprehensive offering of cheeses that highlight the exceptional raw material, the diverse ecosystems, and the microclimates of each producer’s region that is then exemplified in the final product. Spain produces a wide variety of traditional cheeses, and by working with the Consorcio we feel we have found some of the best examples of these old world cheeses for you; as well as sourcing new unique cheeses, rarely seen outside of the Spanish market.
