    Down Under Shiraz - March

    A significant expression of Australian culture, the Down Under Shiraz is aunique and diverse blend of smooth tannins with intense fruit flavors!. The

    Australian people have gained global attention for their irreverent sense of hu-

    mour paired with a regal sense of pride.

    The unique red, rich, fruit flavours are topped with aromas of red currants,

    chokeberry with hints of sour cherry and cherry. Dried fruit notes are present

    in the nose and dried prunes or figs in taste. This red includes GenuWine Dried

    Cabernet-Merlot Grape Skins.

    Add basil, sugar and 12 oz

    blood orange juice into glass.

    Muddle the mixture. Add

    remaining blood orange juice,

    rum and top with soda water

    and ice. Garnish with a basil

    leaf. Enjoy!

    Mixologists CornerBlood Orange Basil Mojito

    3 torn basil leaves

    1 tsp sugar

    2 oz of Breezin Blood Orange

    1 1/2 oz light rum

    Garnish: Fresh basil leaf

    Blood oranges are a special kind of

    orange, with its pulp and flesh be-

    ing red. People often mistake it for

    a grapefruit. This tangy and sweet

    red wine has a burst of citrus aro-

    mas. The Blood Orange's unique

    flavour profile also adds a hint of

    raspberry to the wine. Perfect for

    those cooler spring nights.

    Spotlight on Shiraz

    No matter what world region the

    grape is grown, Syrah/Shiraz pro-

    duces a bold red wine.

    Overall, Syrah/Shiraz is often de-

    scribed as powerful and bold, with

    flavours of violets, dark berries, and

    chocolate, coffee and peppery

    notes. Blackberry and pepper are

    common aromas associated with

    Shiraz.

    This spring, enjoy Shiraz at room

    temperature with grilled meats or a

    cheese plate filled with Gouda,

    Gorgonzola, Havarti, Gruyere,Smoked Swiss, and Smoked Ched-

    dar .

    Shiraz, also known as Syrah, is

    one of the Valley Wine Cellars

    favorite varietals. Early spring isan excellent time to indulge your

    senses in a glass of rich and spicy

    Shiraz. The Shiraz grape is a dark

    -skinned grape that is grown

    literally all over the world. Shi-

    raz originates from southeastern

    France and is typically grown in

    stony granite soil.

    Shiraz is often referred to as

    Syrah in France and other Euro-

    pean countries as well as Califor-

    nia, and South American coun-tries such as Argentina, Chile,

    and Uruguay

    Ingredients:

    6 Veal shanks

    1 medium onion, chopped

    1 Bay leaf

    4 tbsp butter

    1 tsp grated lemon rind1/4 cup flour

    1 tsp sugar

    2 tbsp grated Romano cheese

    3 tbsp olive oil

    1 cup chicken broth

    1 cup chopped celery and carrots

    1 can whole tomatoes

    1 can tomato sauce

    1/4 tsp black pepper, thyme, oregano,

    garlic powder, basil

    1 cup red wine

    Instructions:

    Saut onion, celery, carrots, onion and bay leaf

    in butter for five minutes. Stir in lemon rind.

    Remove from heat and set aside.

    Combine flour with salt and pepper. Roll meat

    in flour and shake off excess. Brown meat on

    both sides in olive oil.

    Place in Dutch oven with tight fitting lid, over

    medium heat. Add tomatoes, sauces, wine,

    broth and seasonings. Add sugar and cheese.

    Add shanks and cook covered on low heat for

    about 1 hour.

    Makes 4 Servings
