Craft Distilling Expo: Programme London 2018
The Craft Distilling Expo 2018 features 30 talks, masterclasses and workshops and over 40 stands from companies specializing in still manufacture, casks, bottles, closures, fermentation, distillery design and system control, botanicals and raw ingredients sourcing, and Craft Spirit producers. It is essentially a one-stop shop for all distillers, from those in the early stages of planning to those who are well established.

Why do we do the things we do?What makes our clock tick, here at iStill, is that we love to bash the status quo. In everything we do, we believe that challenging the existing state of affairs is the way to move forward. We believe in thinking outside the box and in doing things differently.

“As this is our sixth year, many of our attendees from the first year have grown their businesses significantly and I think it’s really important that, whilst we continue to inspire new distillers, we also look at topics that are relevant to more established distillers. 09:00-10:20: Pre-expo Masterclass: Hands-on Gin Blending Class (Ticketed Event) (Space A)A hands-on session giving attendees the chance to blend their own gin from a selection of distillates made from classic gin botanicals. The session will give tips and describe potential pitfalls when it comes to recipe development and provide knowledge on how to create a balanced gin using classic botanicals.Glassware for this session kindly provided by Rastal.
10:00: Expo Opens - Day 1
11:30-12:00: Keynote Speaker & Trophy Presentation (Space B)Join Angela D’Orazio, Master Blender and CNO (Chief Nose Officer) of Mackmyra Whisky from Sweden. Angela will share some of her thoughts on distilling from an established career in whisky.
12:00-13:20: Panel: How to Grow your Distillery (Space B)A new addition to the Distilling Expo focusing on how to grow your distillery 3-4 years after opening. Topics covered include: hiring a bigger team, investment in new capital equipment, and moving to a larger/more suitable location.
Panelists include: Daniel Szor (Cotswolds Distillery), Stephen Gould (Golden Moon Distillery, USA), Peter Mulryan (Blackwater Distillery, Ireland), Tom Warner (Warner Edwards Distillery), and Scott Schiller (Thoroughbred Spirits Group).
12:30-13:15: Masterclass: Terroir in Vodka (Ticketed Event) (Space A) Vodka expert Veronika Karlova is back by popular demand to lead a tasting and accompanying discussion on how terroir can be expressed in vodka: how where it’s made and where the raw ingredients are grown can affect a spirit’s character. 14:00-14:50: Masterclass: Gin: Tidbits and Time Travel (Ticketed Event) (Space A)Gin writer and historian David T Smith takes you back in time through the medium of gin. He will share some of his most recent research into the forgotten history of gin, including the lost origins of cocktails, forgotten gins, and revived recipes.
Topics (and accompanying samples) covered include: Fast Gin, Young Tom, Origins of the Gimlet, Plymouth’s other distilleries, and many other surprises as well….
14:30-14:55: Glass - Decisions for Present and Future (Space C)Join Allied Glass’ Nolan Kane as he discusses the pertinent point of deciding whether to opt for an off-the-shelf or bespoke bottle, covering considerations such as: standing out through decoration, the design process, 700/750ml sizes, changing from off-the-shelf to bespoke, volumes, and costs.
15:00-15:50: Panel: How to Start a Distillery (Space B)A panel of industry experts, each with a different speciality, will share their insights and tips for aspiring distillers looking to set-up production. There will then be plenty of time for questions from the floor.
15:00-15:25: “Clean Barrel for Better Spirit, Let’s Talk About It!” (Space C)Barrel and maturation expert Alexandre Sakon invites you to join him to discuss the importance of barrel quality and how investing in this key material will pay dividends.
15:30-15:55: Citrus as a Botanical (Space C)Join Michael Haughton from Beacon Commodities for a talk on an important gin botanical: citrus. Most commonly lemon or orange, citrus peel adds a refreshing vibrancy to gin. Michael will share his knowledge of the global citrus market, highlighting some key growing regions and discussing some of the challenges the market will face in the near future. A not-to-be-missed talk for all distillers for whom citrus plays an essential part in their products.
16:00-16:50: Masterclass: Wormwood in Spirits (Ticketed Event) (Space A)Join expert distiller and historian Stephen Gould of Golden Moon Distillery as he discusses the use of wormwood in the production of spirits and liqueurs such as absinthe, vermouth, and many more besides.
16:00-16:25: Key aspects of the production of whisky (Space C)Join Lallemand Biofuels & Distilled Spirits for a closer look at some of the key aspects and considerations concerning the production of whisky.
16:30-17:00: Duty and Legal Issues in Distilling (Space B)Alan Powell from The British Distillers Alliance gives an update on the UK licensing, legal and duty situation in 2018.
17:00-18:00: Mini Meet the Maker - The Gin Guild (Bar)A chance to meet Director General Nicholas Cook, find out a little more about The Gin Guild, and try some of its members’ spirits.
18:00: Expo Closes - Day 1
09:00-10:00: Masterclass: Fault Nosing Class (Ticketed Event) (Space A)Join independent spirits consultant Julia Nourney as she introduces the Nosing for Faults Aroma Kit from The Aroma Academy. Julia will go through some of the most common faults in spirits and how to help identify them from aroma alone. Glassware for this session kindly provided by Rastal.

10:30-10:55: Placing an equal value on BRAND and LIQUID (Space C)With Olivier Ward from Gin Foundry.Small, local, craft - all three carry messages less weight than ever before. It’s fair to ask if any still hold enough weight to be the sole proposition of a modern Gin brand with bigger aspirations than single state sales, but if not those core USP’s that have defined micro-distilleries for so long - then what? Understanding brand equity, how to build it, display it, and why it matters to the end drinker is critical for the success of a modern Craft distillery. How have others done it and what fiscal value should you to place on “building a brand”? This is a whistle stop tour of some of the major areas to consider...
11:00-11:50: Masterclass: Gin FAQ Vol. 3 (Ticketed Event) (Space A)A talk of two halves: first, Ben Marston of Puddingstone Distillery talks about coriander, gin’s underrated botanical and how it interacts with juniper; second, Mark Gamble of Union Distillers looks at the impact that “fixatives” have on a gin’s volatility. Attendees will be able to taste the results for themselves and take a more scientific tack thanks to GCMS data provided by Henric Molin from Spirit of Hven. 12:00-12:25: Tips on Tasting Techniques (Space B)With Independent Spirits Expert, Ian Wisniewski. What actually happens on the palate and to our olfactory senses when we taste? And what’s the best way to communicate what we find?
12:30-12:55: Brand Ambassadors - An Introduction (Space B)Stephanie DiCamillo from That Boutique-y Gin Company provides an insight into the world of brand ambassadors: what are their benefits and limitations, how do you know if you should hire one, and how to find the right person for you.
13:00-13:50: Masterclass: Cane Spirits (Ticketed Event) (Space A)Join rum expert Peter Holland of TheFloatingRumShack.com for an opinionated tasting session as he explores the world of cane spirits, including Cachaca and Madeiran Rum. An excellent session for anyone interested in the subtleties and appreciation of distilled cane.
13:00-13:45: Discussion: Import and Export (Space B)A favourite of the Craft Distilling Expo, Michael Vachon of Maverick Drinks will return for his perennial session on the ins and outs of importing and exporting. Michael will share some of his thoughts and be on hand to answer your queries. 14:00-14:25: Sustainability and Distilling (Space B)Will Edge from Greensand Ridge Distillery explores the idea of sustainability in distilling. From raw materials to energy sources, embracing sustainability is not only environmentally responsible, but can have a positive effect on the bottom line.
14:00-14:10: Gin of the Year Awards Announcement & Presentation (Space C)
14:10-14:45: With spirits production under control, how to upgrade your distribution (Space C)Odin from iStill turns his attention and expertise to the issue of product distribution: not production-related, but equally important for any distillery.

Who Can Enter?ADI accepts US and International entries in all classes and categories of distilled spirits, RTDs, cocktail bitters, aperitif & fortified wines from small and medium-scale producers. All spirits entered will receive written feedback from our expert judges, considered for awards both for the spirit and the packaging, and evaluated to see if they if they meet the standards for ADI’s Certi-fication of Craft Spirits at no additional cost or paperwork. Award winners will receive a physical award as well as digital renderings of all applica-ble medals, awards and certifications.
