Captain’s ReportThe exciting golf continues on home soil this time with The Australian Masters played at Huntingdale. A bogey on the 17th by Peter Senior made the competition all the more interesting however the recovery he made on the 18th with a testing bunker shot and 8 foot putt to make par set him up for a great win.

While Peter Senior was a home town favourite up here, I couldn’t help but notice the number of other Queenslanders who featured in the event…..John Senden tied for 2nd, Adam Scott in fifth place while Matt Guyatt, one of our members, finished in a tie for 6th place. Maybe there is something in the water? Amazingly, three of the commentators were also from Queensland with Wayne Grady, Ian Baker-Finch and our own Ossie Moore. It’s always great to listen to Ossie with his relaxed but informative interview style with players. We all appreciate the plug here and there he makes for The Grand during the commentary.

The weather continues to be kind and these conditions have greatly assisted with the rapid recovery of the golf course. The fairways have fully recovered and members are generally pleased with the amount of grass under the ball. The greens have also recovered nicely, offering uniform putting surfaces with a bit of pace which is unusual for this time of the year.

While the golf course is in recovery mode and our turf surfaces are relatively soft due to the amount of water and fertiliser applied, please repair divots throughout the golf course and repair pitch marks on the greens. It is surprising how quickly divots recover if the turf surrounding the divot is ‘chipped in’ and then top-dressed with the sand provided on the golf cars. As always the ninety degree rule applies to golf cars. Please park on the pathways and not on the green surrounds. Your continued support with these matters is greatly appreciated.

There will be a couple of changes to the Rules of Golf to look out for in 2016. The changes are the outcome of The R&A’s regular four yearly review cycle which is held in conjunction with the United States Golf Association. The significant changes include the “withdrawal of rule on ball moving after address” and “prohibition of anchoring the club while making a stroke”. A summary of the key changes to the rules will be provided in the Golf Shop for your information and in this Newsletter.

The 12th fairway is back in play however remains closed for golf car traffic. The closure will be in place while the turf on the new drainage lines recovers and also to avoid any unnecessary subsidence on the trenches. There is a compulsory drop off the new turf and then the ‘preferred lie’ rule applies on the fairway portion.

Don’t forget to book for The Grand Trophy Presentation night and 18th birthday party on the 5th December.

The Third HoleTHEN AND NOW…..

AGAPANTHUS

Have a look at the change in appearance on the 3rd. The Casuarina and Melaleuca on the left hand side of the 3rd fairway have grown together with the Ficus on the left hand side of the 3rd green. Dietes bicolor and a small callistemon have been grown on the tongue of the greenside bunker while the wetland plants including lilies, sedges and reeds on the edge of the pond between the 3rd and 4th holes now provide a healthy habitat for our native fauna.

You know Christmas is just around the corner when you see the Agapanthus starting to bloom. The genus name means Flower of Love. They come in two different colours – purple and white. We have lots of them here at The Grand Golf Club. They stretch their purple heads towards the sun and they look awesome as a border.

Some people call them The Lily of the Nile although they are not a Lily – they are actually part of the onion family. They’re native to Southern Africa although now you can find them in Australia, The United Kingdom, Mexico, Ethiopia and Jamaica. They have been used medicinally for cardiac complaints.

LEG OF LAMB WITH ASIAN-STYLE MINT SAUCE & ROAST POTATOES● 2 tablespoons fish sauce● 1/4 cup (60ml) sweet chilli sauce● 1/4 cup chopped mint● 100ml sunflower oil● 2.5kg leg lamb● 1.5kg floury potatoes, peeled, cut into 3cm pieces

Asian-style mint sauce● 2 tablespoons grated palm or brown sugar● 2 tablespoons peanut oil● 1/4 cup (60ml) rice vinegar● Zest and juice of 1 lime● 1 tablespoon fish sauce● 2 long red chillies, seeds removed, cut into thin strips● 2 spring onions, sliced on an angle● 2 cups mint leaves, torn

1. Preheat oven to 180°C. Combine fish sauce, sweet chilli, mint and 1 tablespoon oil in a bowl. Place lamb on a rack in a roasting pan and brush with marinade. Fill pan with 2cm hot water, then loosely cover lamb with foil. Roast for 1 hour, then remove foil and roast for a further 45 minutes for pink or until cooked to your liking. Rest, loosely covered with foil, for 15 minutes.

2. Meanwhile, place potatoes in a pan of cold salted water, then bring to the boil. Reduce heat to medium-high and simmer for 2 minutes. Drain well, then return to pan and shake to fluff up the edges. Transfer to a baking dish and toss with remaining oil. Season.

You can’t get any more Australian at Christmas than a leg of lamb. And Australians do nothing better than a fusion of cultures - whether it is in everyday life or the cuisine we serve. This lamb leg with an Asian-style mint sauce will be a Christmas hit!

WATERMELON ICE● 1/2 cup sugar● 1/2 cup water● 3 teaspoons finely grated ginger● 1 watermelon● 3 tablespoons mint leaves, finely chopped

1. Combine sugar and water in a small saucepan and stir over low heat until sugar has completely dissolved. Add ginger, bring to the boil, then reduce heat and simmer for 5 minutes. Set aside to cool.

2. Cut all the flesh from the watermelon, chop, then puree in a food processor. Strain the pureed watermelon into a bowl, then strain the cooled syrup into the same bowl. Add the mint and stir until well combined. Pour into a metal dish (like a cake tin), cover with foil.

3. Freeze for 4 hours or until the mix is beginning to firm up around the edges. Stir with a fork to break up the frozen chunks, then cover and freeze for 2 hours. Stir again to break up the ice chunks, then cover and freeze. Leave in the freezer for about 8 hours until evenly frozen.

4. To serve, scrape the ice with the side of a spoon to create shavings. Spoon into serving glasses and serve immediately.

5. Add a dash of Sparkling Wine or Vodka to give it an extra Christmas edge!

3. Once lamb has been cooking for 1 hour, place potatoes in oven with lamb and roast for 45 minutes. While lamb is resting, increase oven to 220°C and roast for 15 minutes until crisp and golden.

4. For the sauce, combine all ingredients in a bowl, stirring to dissolve the sugar.

5. Carve the lamb and serve with roast potatoes and the mint sauce.
