WHAT ARE THE SLOW FOOD PRESIDIA? Presidia are projects run by the Slow Food Foundation for Biodiversity
to directly help groups of artisanal food producers. They sustain quality production at risk of extinction,protect unique regions and ecosystems, recover traditional processing
methods, and safeguard native breedsand local plant varieties.

OUR ESPRESSOWe use only Huehuetenango Highland Coffee, from Guatemala. It’s a Slow Food Presidia and is cultivated in the shade of high trees. The coffee berries are hand-harvested, picked one by one.
The coffee is then roasted by Italian coffee master, Andrea Trinci, who still uses a traditional wood-fired roasting method. Our Espresso has a distinctive and delicate fruity flavor!

OUR FLOURThe flours of our pastries are 100% organic. They are milled using the old-fashioned flouring process
on century-old roller mills, located in Anville, PA. This means that the slow flouring process and lower operation temperatures retain many naturally occurring nutrients and starches that are lost at the higher temperatures of
modern processing equipment. We say in Italian: “Più e’ naturale e più fa bene.” Which means: “The more natural, the healthier.”
THE “LIEVITO MADRE” (MOTHER YEAST) IN OUR BAKED DESSERTS & SWEETSThe fermentation of our leavening begins with a local, organic apple, as a symbol of the
Big Apple, New York. Then we use flour and water to create our “lievito madre” (mother yeast), which is the most natural and lightest form of leavening. Once our starter is established,it needs to be “fed” with love by replenishing it with flour and water once or more daily.
“Lievito madre” adds a more intense aroma, flavor and a unique fragrance to our baked goods.

SEASONAL SOUPSOur soups change with seasons. We only use organic grains as they are very healthy, vegetable broth made from organic vegetables and Italian extra virgin olive oil, single cultivar. A good soup needs time. It takes hours to boil at a low temperature and then it needs to rest. This is truly “slow food”.

Our cheeses are from local and artisanal cheesemakers. The jams and jellies are from upper midwest and from Italy. They are very small producers and they manage the entire supply chain, from cultivation to cooking in order to offer unique products

MenuWHAT IS GELATO?
Gelato from L’Albero is a healthy choice, because we prepare it every morning using only the freshest organic ingredients, such as milk, cream, sugar and fruit of the season. Our Gelato has very low fat,
while our fruit Sorbetti is water-based and 100% fat free; the cream-based Gelato have a maximum of 6% fat (ice cream has 20% or more). Therefore our Gelato has very few calories.
A lower fat content gives gelato a much more intense flavor… so the flavorings are the real stars!
