JAMIESHOMECOOKINGSKILLS.COM Take this versatile crȇpe recipe in a sweet or savoury direction, depending on what you fancy. 3 large free-range eggs 50g wholewheat flour 75g plain flour (you can use just one type of flour if you’d rather) 250ml milk 1 pinch of sea salt olive oil To prepare your batter Place all the ingredients, except for the oil, in a blender and blitz until smooth, then pour into a bowl Leave to one side for 15 minutes To cook your crȇpes Place a large non-stick frying pan on a medium heat Add a small drizzle of oil and tilt the pan around so the oil coats the surface After 1 minute, pour in 1 ladle of the batter Lift the pan off of the heat and tilt it so that the batter spreads all over the base Place the pan back on the heat for 1 to 2 minutes, or until it starts to come away from the sides and you can remove it easily from the pan Once golden underneath, flip the crȇpe over and cook for 1 further minute until cooked through Serve straight away with your favourite topping Choose one of the following directions to take your crȇpes For a sweet filling (serves 8) optional: 25g nuts, such as walnuts, pistachios, almonds 250g fat-free Greek yoghurt 3 tablespoons runny honey, plus extra to serve ½ teaspoon ground cinnamon 4 ripe bananas 300g blueberries Recipe © Jamie Oliver.
