Tasting NotesAppearance Dark amber with a beige-
colored foam. Aroma Dominated by fruity notes

Flavor Rich and full bodied on the palate. The fruity notes are well balanced with the malt-iness.
Finish Spices are very subtle but they show up in the finish.

Brewed using Gentian roots as main ingredi-ent. The roots are used in an infusion lasting 2 minutes during the last stages of boiling.

Tasting NotesAppearance Amber color with a small
creamy foam.Aroma Hoppy notes explode (re-
inforced by the use of dry hopping). Grapefruit, bitter orange, mandarin, resinous and spicy notes are perfectly married with caramel and honey notes coming from the malts.
Flavor Initially very dry and hoppy-bitter on the palate, but after a few seconds all the fruity/estery notes are exploding in the mouth.
Finish Strong finish with distinct resinous peppery notes.

Brewery Description:Birra Del Borgo was founded in May of 2005 not too far away from Italy’s capital, Rome (about 60 miles northwest). Leonardo di Vincenzo was originally trained in biochemistry but started brewing beer as a hobby during his college years. Leonardo’s main inspiration comes from Eng-lish and Belgin beers and his main goal when brewing a beer is to solve the riddle between using unusual ingredients and creating perfect food pairings.

Beer aroma produced by the spelt, traditionally grown in the territory of the Riserva regionale Montagne della Duchessa (the mountains of the Duchess, part of the mountain range of Ap-penin ). The Regional Natural Reserve of the Mountains of the Duchess, established by the regional law
70/90 is part of the System of Protected Areas of the Region of Lazio. The Reserve covers about 3500 acres, entirely within the City of Borgorose, in the province of Rieti. The eastern border of the protected area coincides with the regional and overlapping that of the Natural Regional Park Sirente - Velino, the neighboring region of Abruzzo, protects a unique ecological representative Apennine ecosystem. The name “Mountains of the Duchess” was coined by the engineer Francesco de Marchi Bologna in the sixteenth century. in tribute to Margaret of Austria, Duchess of Parma and Piacenza and the Duchy of Lioness and Cit-taducale.

Tasting NotesAppearance It has a golden appearace,
thinly veiled with hints of orange, and a beautiful creamy head.
Aroma The nose is very broad, fruity (banana, pineapple, tropical fruits) and floral, slightly peppery and nice.
Flavor In the mouth, the carbon-ation is fine, there is a slight acidity and the body is ade-quate. Hopping is moderate
Finish The finish is very nice and fresh.

Duchessic Beer Collection Keg Collection
Duchessic is the result of the blend of two beers. One is Duchessa, Birra del Borgo’s Saison brewed with spelt; The second beer is Lambic brewed at cantillon brewery in Brux-elles. Both brews are blended just before bot-tling {10% lambic, 90% Duchessa}. The use of Cantillon lambic gives Duchessic its special wild charachter.

Enkir Beer Collection
Top-fermented.
Serve at 10-12˚ C.
The ancient corn enkir, Einkorn wheat, is used. It makes up 55% of the malt and is the ‘lead ac-tor” of this beer.
This ancient grain, the first do-mesticated corn on the ground (Triticum monococcum) gives the beer some wonderful spicy and resinous notes that blend beautifully with the notes of yellow fruit. A well balanced beer, delicate and soft in the mouth. This beer is ‘a collaboration with the Mill Marine Cossano Belbo (CN)and Gabriele Bonci who discovered and promoted the cultivation of ‘enkir to use it for baking.
Serving suggestion: Enkir is an excellent com-panion to delicate cheeses and cereal based soups.

My Antonia Beer Collection
An intriguing beer, extremely perfumed to the nose, with flo-reali and resinose notes that marry harmoniously. In mouth it is explosive and at the same time balanced. The mielato one of malto and the pepper mill of the luppolo is melted with clear-ly and extremely elegant a final bitter.

L’EquilibristaThe highlight being a new beer he is making which is a blend of 50% duchessa [his saison] mixed with 50% sangiovese grape must. It is unbelievable. Fermented with champagne yeasts. Maledetta Beer Collection
Named after the last cigar made in Tuscany Birra del Borgo’s Maledetta uses two differ-ent yeast strains to combine two distinct historic styles - Belgian Saison and British IPA – into a new Italian creation. It has an amber color and a deeply intense citrus and flowery nose. The hops and yeasts mix gives the beer a unique character. At first you will taste honey, then in the midpalate you will detect toffee evolving in citrus and finally merging in a delicious bitter and spiced flavor.

Caos Beer Collection
After the Equilibris-ta, our beer inspired by the Champagne world, here it is a new experiment on the “wine meets beer” theme. This time, though, we tipped the scales in favour of beer, adding to the Duchessa wort only a 25% of wine must: in this case we used Malvasia (coming from our friends of Tenuta di Bibbiano, as usual), a white, aromatic grape variety which gives the beer a gentle and nice sharpness and an inusual, fruity nose. The beer is bottle-fermentd using Champagne-yeasts, and it has a quite intense “perlage” (bubbles) that makes it perfect as an aperitif or even for the whole meal.
The “chaotic” label was designed byValentina De Luca, an Art student at the Istituto d’Istruzione Superiore Antonio Cederna of Velletri (Rome), who won our contest “Etichette Bizzarre”.
