Dear Guests and Friends of the Singer!

In the last issue of our guests’ news that we sent out to you in spring, we announced many changes which we were not yet able to show in pictures. We would like to make up for that in the current issue. Et voilà: the renovated hotel entrance and the new panorama rooms. We hope you like the rebuilding that we have done in the spring off-season. With each renovation, we bear in mind that we want to carry out a cautious facelift, while preserving our traditions and at the same time going bravely into the future. Apropos of renovation: as we have already hinted, it is with great pride that we can now pre-sent a splendid new feature for all the skiers among our guests. The Thaneller skiing area is finally being modernised and you will already be able to use the first section of this ambitious project from the winter season 2019/2020.

The next winter is just around the corner and we very much hope that we will be able to welcome you all again, at your Hotel Singer. This year, we will be open from Christmas up to and including Easter. We have put together some particularly advantageous offers for you especially for the end of March/beginning of April, when the days are already getting a little longer, but experience has shown us that the snow is still fan-tastic for skiing. Come to Berwang and visit us again – we are already looking forward to it!

NEWS FROM THE BERWANG SKI LIFTSNot only does Florian Singer put his heart and soul into being a hotelier, he is also responsible for the Berwang ski lifts. In this issue of the Singer’s Guest News, he has the latest news for you:

Four years ago, soon after my father Günter Singer passed away, I took over his role in the ski lift company and started to conduct conversations with the former owners of the Thanellerkar lift and the Bilig lift to take over these lifts as well and to replace them as quickly as possible. We finally achieved this in 2016 and since then all the lifts in Ber-wang have been combined in one single company, owned equally by our family and the village of Berwang. As our regular guests know, the Thanellerkar lift is getting on in years. Although the views are stunning and the pistes are superb, it is

too long for a T-bar lift today. Furthermore, the connecting Bilig lift is also anything but modern. Our plan is to replace both lifts over the next few years and to make ski-ing even more pleasurable for our guests. So, there will be more modern facilities and shorter waiting times. The following chang-es are planned and we are now realising them bit by bit.

OBERE KARBAHN I: The first part of the new gondola lift will go up from the ski school meeting place to the curve of the Thanellerkar lift. It will be the most modern 10-seater gondola “D-Line” by Doppel-mayr existing today. From there, there will be additional and widened pistes back to the ski school meeting place enhanced by snow-making facilities.

OBERE KARBAHN II: Connected to the first part, the second part will continue beyond the top station of the existing Thanellerkar lift. We will be building two new pistes: a black one and a red one. This way, begin-ners and children can get off at the middle station and calmly make easy turns down the slopes, while the experienced skier can go up to 1,730m and from there enjoy challenging descents down to the valley.

THANELLER LIFT: The project is rounded off by a new, child-safe 6-seater lift from the valley station of the Thanellerkar lift (which will consequently be demolished) to the middle station of the Obere Karbahn.

It took us three years to plan all aspects of the project and then work with the author-ities and the according experts. In spring this year, on June 13th, we finally received all approvals, especially the building per-mission by the Federal Ministry of Transport, The new Omega V cabin of the Obere Karbahn

Innovation, and Technology. On the very next day, the excavators arrived and the construction sites were set up. Since then, we have been working at full speed to complete the first stage of this ambitious project. At the start of the winter season, you will be able to use the new Obere Karbahn gondola and the new ski slopes in addition to the existing facilities. The chil-dren will be especially happy about this: At the ski school meeting place, you and your skiing instructors will have the dilemma of choosing between the 6-seater Egghof Sunjet or the 10-seater gondola Obere Karbahn.

Stages two and three will follow in the next few years and by 2025 at the latest, all of the project will be finished.

Additionally, we are currently building the new B-Active-Center adjacent to the ski school meeting place, which will host our ticket counters, a big ski rental and depot, the ski school office, public toilets, a baby changing room, children’s catering, and much more.

WINTER IN BERWANG – SUNNY SKIING“The early bird catches the worm” or as we skiers like to say in March and April: “It’s worth getting up early”.

At the start of spring, the temperatures rise in the mountains and the days finally become longer. The snow quality, however, is still excellent so there is nothing to stop people continuing to enjoy skiing. In addition, around this time of year there is the corn snow or firn, which is absolutely fantastic for skiing and also a feast for the eyes with its billions of shining snow crystals. Corn snow occurs when the snow is softened by strong sunlight during the day and then freezes again with the cold temperatures on clear nights. When this happens over several consecutive days, the firn occurs. The slope has to “firn up”, after a cold night, with the first rays of sunlight, which means that the top layer has to become very slightly soft. When all this happens, there is no better snow for skiing down the piste at a lightning pace.

To experience this high as a spring skier, here are a few insider tips:

• Start the day as early as possible with a substantial breakfast – from 22 March, the ski lifts in Berwang will be opening at 8.30 a.m.

• Make sure that you have enough protection against the sun. The snow reflects the sun’s rays very strongly, which is why the sun on the piste can be more aggressive than in August in the Mediterranean.

• At the start of the skiing day, choose pistes that are already being warmed by the sun, for example the Almkopf Rot de-scent to Bichlbach, the family-friendly piste Emmne down the Sonnalmbahn, and the Brunnental piste at the Thanellerkar Lift. These piste sections are already exposed to the sun early in the morning, and are slightly “firned up” by this, inviting skiers to make the first turns.

• Pistes that do not get exposed to the sun until late in the morning, such as the Broatla at the new Obere Karbahn I,

the Schwarze Loch, and the Bärenbad at the Sonnalmbahn should be used later, because before then they are too hard.

• In the afternoon, it is time to go up onto the Rastkopf, where even at this time of year the powder snow still swirls up at every turn.

• After a good meal, enjoy the late afternoon with a cool drink at the pool or on the sun deck and allow the warm rays of the sun to shine onto your skin and into your heart.

Look forward to days full of sunshine, skiing fun, and holiday sun bathing in March.

FROM RESTAURANT TO LUXURY ROOMSIn 1975, the Singer Stub’n was built onto the existing hotel from 1928 on the south side of the building. Many years of plan-ning and ideas were put into this additional à la carte res-taurant. The Singer Stub’n was at long last constructed by the well-known architect Heinrich Heineck in the very rustic, heavy Tyrolean style of the 70s, as a grill restaurant, with a big tiled oven, heavy leather seats, an inviting bar, and a big dance-floor. A very special feature was the open kitchen, probably one of the very first show-kitchens in this period. In Berwang and at the Hotel Singer, the restaurant became synonymous with the reno-vation of the old hotels and a symbol of the wild 70s and 80s in our tranquil village. During those years, it was typical to have a 5-man live band every day for the 5 o’clock tea dance, seve-ral table settings for the evening meal, and for there to always be an exuberant mood into the early hours of the morning.

From the start of the 90s, however, things calmed down, the par-ties did not last as long, and the live bands came less frequently, … The guests that came to Berwang and the Hotel Singer just wanted to have a more peaceful time and for things to be less boisterous than before. In addition, the rooms and apartments in the houses and hotels in Berwang became more comfortable and featured more modern conveniences. The television found its way into even the simplest accommodation. Increasingly the Singer Stub’n was used for cosy fondue and raclette evenings and more sedate musical events. In the past few years, we have used the location more as a mid-day restaurant for skiing guests, apart from special events such as Singer ’s Oktoberfest. There was a great, lively atmosphere, and on these occasions, it was like old times and people partied like in the early days.

In March 2017, as part of our big renovation and renewal project, we finally closed the Singer Stub’n and relocated the whole restaurant to the upper floor. In the course of this, the for-mer kitchen and office of the Singer Stub’n were converted into employees’ toilets and changing rooms. During the last two years we have planned the newly envisaged rooms down to the last detail and then built them this spring in a construction time of three months. The result is gorgeous, airy, modern, and yet very traditional alpine rooms, which can be combined in completely different ways. There are two big Zugspitze family suites, in which the children’s rooms have their own entrance. These rooms can also be used as comfortable Rastkopf double rooms and the larger room as a Grubig junior suite. We have completely restyled the former terrace of the Singer Stub’n and transformed it into private terraces with a privacy screen made of slate slabs and local trees and shrubs. The terraces have been supplemented with “Hot Pots”, big stainless-steel tubs in which couples can have

KAI BERNING IN INTERVIEW

Kai Berning – the coffee lover with a great love for adven-ture and an inner calm – has now been the Chef de Bar at our Hotel Singer for two years. We would like to find out a bit more about his life and the bar and to know why it is important to have the right mix of guests.

Kai, tell us and our guests something about yourself.My name is Kai Berning, I originally come from Hannover and have already been part of the Singer team for several seasons. I start-ed my training in a hotel and afterwards I have worked for many years in different restaurants. I have always been interested in the bar so I re-trained and I am now very happy to be the host at the hotel bar. My hobbies include playing football, motorcycling, and hiking in the mountains. Apart from that I am a big fan of coffee and am currently training to be a barista.

What exactly is a barista? For a barista, proper preparation is the biggest precondition for high-quality coffee; the degree of grinding of the beans always decides whether a coffee is more bitter or sour-tasting. Another highlight for me is decorating the coffee with the milk foam. I love experimenting with different types of coffee from a great variety of countries to get a balanced mixture.

What brought you to Berwang?I love the mountains, so I looked at various hotels in Austria and Switzerland and I felt at home straight away with the Singer family. I love working in privately run hotels, because the personal touch is becoming more and more important and I love coming into contact with our guests. Relais & Châteaux was also a big factor for me in choosing my new employer. The Hotel Singer is just ideal for this. The personal care of the guests, the appreciation of the employees, and the mix of international guests convinced me.

Bar life is not for everyone, why does it appeal to you?Time after time, I’m fascinated by contact with guests from all sorts of countries, with so many personalities. The mix of languages, cul-tures, and generations is like the creation of a new cocktail – it depends on the right recipe and proportions. For me, a particu-larly important thing for a bar is that the spirits and products used

are high-quality and fresh. The ambiance also plays a big role of course, and also whether the drinks list is impressive and includes a few special creations of the house.

Apropos of ambiance, can you give us a recommendation for a stormy winter evening by the fire? For an evening like this, by a flickering and crackling fire, an or-ange cinnamon margarita seems perfect to me. For this, mix the following ingredients together in a Boston shaker

• 4 cl “Don Julio Reposado” tequila • 1.5 cl homemade cinnamon syrup • 1 cl Cointreau • 2 cl freshly pressed orange juice

Served in a cocktail glass with a slice of orange, this drink will enchant any stormy winter evening.

What is your favourite cocktail?It ’s difficult to pick one out, but every day I look forward to the challenge when guests ask me just to mix them something deli-cious. It is almost always a surprise for the guest and every time I am delighted by people’s enthusiasm. I think a good mojito is my favourite.

Do you have a wish for the future?I would love to continue training as a barista and know more about spirits, in order to always be able to mix our guests the latest drinks. It is a dream of mine to perhaps even have a little café or bar of my own.

REGIONALITY AND SUSTAINABILITY MEET HOTEL SINGER

For us as one of the region’s leading hotels, it is entirely natural to attach special attention to the origin of the products we use. Although there is constant talk of sustainability and fair trade, there is still much too little of this in practice. We and our kitchen team headed by chef Thomas Kunath try to purchase as many products as possible directly from local producers who offer the best quality. Their produce doesn’t have to travel so far. To set a strong example, we are starting our new series “Regionality and sustainability meet Hotel Singer”. In the following news we will each time feature one of our local producers and suppliers, because it really matters where our food comes from.

ZIEGENPETER IN EHRWALDWe will start off with the Ziegenpeter cheese dairy in Ehrwald. The goat farm of the Senftlechner family has existed since the 1950s. It is located at approx. 1,000 m above sea-level and is home to around 50 brown mountain goats. To ensure the supply of herb-rich mountain hay, more than 10 ha of meadow and moun-tain pasture are managed. Florian Senftlechner is part of the second generation to manage the farm and has, supplementing the goat’s milk, developed many different products made of raw goat’s milk, which he markets very successfully.

In the in-house cheese dairy, whey, cream cheese, semi-hard cheese, soft cheese, yogurt, and ice cream are produced fresh from goat’s milk each day and only supplied to selected hotel and catering businesses. In-house specialties are sold daily at the goat farm shop. On our cheese board, you will find, for ex-ample, Roqui, a semi-soft cheese with green edible mould, the Weiße Ziege, a the full-bodied soft cheese with white mould, and the Kräuter-Frischling, an unmatured soft cheese. Our kitchen

team often enhances the cream cheese products with herbs or bacon, turning them into wonderful appetizers.

A special highlight is the ice cream made of goat’s milk, ideal for diabetics and people with allergies as well as those with lactose intolerance, that it is produced without artificial additives. Added to the goat’s milk, produced fresh that day, are the farm’s own eggs, and cream made of goat’s milk, to guarantee a full-bodied flavour. The ice cream is available in various flavours and is simply gorgeous.

The brown mountain goats are native to the Alpine region and Switzerland and are easy to tame as domestic goats because they have a restrained and shy nature, and a strong desire for movement. The grounds of the goat farm include an open barn with an open yard and, of course, enough pasture for balanced nutrition and sufficient freedom for the animals. Personal contact with the goats is very important to Florian. All the goats have a name and are appreciated. This is the only way to produce first-class quality. We have something else in common with the Senftlechner family: at our hotel, the guests are also looked after in a very personal way, addressed by name, and nobody is just a room number.

High-quality products from the region with very short transport routes: the goat farm in Ehrwald achieves all of this perfectly. This is why we are very happy to be one of the selected hotels and catering businesses and to be able to treat our guests to the farm’s products every day.

HEALTHY HOLIDAY TIPS

A holiday usually includes a car journey to and from the destination. This can often turn out to be longer than ex-pected. To save you from back pain and tension, we have put together a few tips for you.

First of all, it is important to have an ergonomic and comfortable posture during the drive. To achieve this, you should take into account the following points:

• The front edge of the seat should not be positioned too high.

• The seat should end a few centimetres before the back of your knee.

• Sit as close as possible to the back of the seat. • Only push the seat back as far as to ensure that the

knees are not straightened out when the pedals are depressed. The right thigh should not press into the upholstery.

• If the seat is set too low, it has a negative effect on the position of the pelvis and on the spinal discs. Ideally, the length of the back or the seat to that of your back, and the length of the sitting area to that of your thighs.

• Sit as upright as possible; this is easier on the back and reduces the distance to the headrest.

• Your shoulder blades should always be in contact with the back of the seat.

• For a relaxed posture, the steering wheel should be as steeply pitched as possible.

If you come to a halt in a traffic jam and notice that you are gradually feeling tension, you can ensure a little relax-ation with the following exercises.

• Brace your hands against your rear hip joints. Now lean slightly backwards with your upper body. Your lower back remains straight.

• Place your hands sideways on the headrest, move your elbows out to the side. This stretches your ribcage. Then move your chin towards your breastbone and curl in.

• Turn your head to the left, looking as far as possible over your left shoulder, and then to the right.

• Tilt your head to your left shoulder and back again, then tilt your head to your right shoulder and back again.

Upon your arrival, stretch vigorously to stretch your muscles and sinews again.

• Stretch out both arms upwards, stand on tiptoe and make yourself tall.

• With interlaced hands, stretch both arms up and far to the left and then the right. Your upper body bends to the respective side.

• Walk on the spot, then stretch alternating knees for-ward and up.

• Then stretch your right leg backwards and repeat with the left leg.

• Cross your arms, placing your hands on your shoulders. Make small turning motions of your ribcage to the right and the left.

• Circle your pelvis as if with a hula hoop.
