9:15 a.m. Private tour of the magnificent home of the Beer Baron, Captain Frederick Pabst, which was built in 1892. It is on the National Register of Historic Places and one of Milwaukee’s most treasured landmarks.

10:45 a.m. Bus departs for Lakefront Brewery Tour and lunch: Entrance of Pabst Mansion

11:00 a.m. Guided tour of the Lakefront Brewery A leader in brewing the best beers in Milwaukee. Started in 1987, Lakefront Brewery has been brewing for more than 27 years. The tour includes a souvenir pint glass and four 6oz. tasters of beer. For non-beer drinkers, Lakefront’s Golden Maple Root Beer is available.

9:15 – 10:15 a.m. Educational Session 2: The Application of Trends For The Success of Your Chapter’s Meal Program: Lakeshore Ballroom, Lobby Level Food trends change from year to year, just like the values and lifestyles of the men and women that come through a Greek chapter house. “What’s going to be the next big thing?” is often asked of chefs, foodies, house directors, and house corporations alike. We will discuss the current lifestyle and food trends such as the local food movement, increasingly global palates, nutrition demands, and desires for high end presentation even for the most simple menu items. We will share how these trends relate to young men and women to help your chapter’s leadership stay on top - and maybe even ahead - of the trend. This session asks a panel of university deans, vice chancellors, and assistant vice presidents to address current issues affecting fraternity and sorority life. 12:00 p.m. Travel by Bus for a Dine-a-Round of Milwaukee and Afternoon Activities We’ll begin our tour by enjoying sausage, cheese, and beer/root beer on Old World 3rd Street. We will then travel to the Third Ward to learn of Milwaukee’s Irish past and shopping time in the Milwaukee Public Market. Afterwards, we’ll enjoy a generous lunch at a Polish restaurant, Polonez and continue our city tour along Milwaukee’s lakefront up to the Eastside. Along the way we’ll pass places such as the Milwaukee Art Museum and the North Shore Lighthouse. We’ll also learn about Milwaukee’s rich Italian heritage, and stop at Sciortino’s and Glorioso’s (two amazing Italian bakeries/delis) for shopping and treats. Lastly, we head back to Old World Third Street for Milwaukee’s German history and, of course, a lovely German dessert.

Saturday, June 20th8:30 – 10:30 a.m. Educational Session 4: Being A House Mom: A Risky Business!: Lakeshore

Ballroom, Lobby Level The college experience has changed over the last 10-15 years rendering it important

to stay current on trends and issues. From new policy language regarding alcohol, to increased allegations of hazing and sexual misconduct, there’s a great deal more risk to manage. Given the changing landscape within the college/university environment, it can be tough to keep track of policy changes and legislative updates that could affect you and your students. In this session, we will discuss the various liabilities that house directors and house mothers have on their campuses, reporting requirement distinctions based upon your employment relationship with the campus versus house corporation and, best practices in the field. We will also discuss how insurance coverages from national entities may or may not cover your liability and what questions you can ask of your employer to gain that knowledge.

2:15 – 3:45 p.m. Educational Session 6: Liberating Students from Restrictive Gender Roles: Lakeshore Ballroom, Lobby Level Increased judicial incidents and academic struggles for men and staggering pressure for young women to achieve perfection, gender socialization has powerful and too often negative impacts on today’s undergraduate students. In this session, participants will learn the degree to which traditional gender roles still influence collegiates, and discover tools they can use to help college age men and women develop healthy gender roles to promote inclusive and caring fraternal chapters. See great prep in action with a live cooking demonstration! Just like the family at dinnertime, students in fraternities and sororities bond and grow when good meals are shared. Meet Your Speakers

Mark Koepsell | Executive Director, AFLV

Prior to his service within the field of association management, Mark Koepsell spent 17 years working in various positions in student affairs at Colorado State University, Saint Louis University, and Millikin University. Koepsell received his bachelor’s degree at Carroll University with a triple emphasis in organizational communication, public relations, and music. He earned a master’s degree in educational psychology from Eastern Illinois University. Koepsell is actively involved in LeaderShape, the American Society of Association Executives (ASAE), the National Association of Campus Activities (NACA), and the Association of Fraternity/Sorority Advisors (AFA), from whom he received the Sue Kraft Fussell Distinguished Service Award (2006) and the Jack L. Anson Lifetime Achievement Award (2011). Koepsell recently achieved a Certified Association Executive (CAE) designation from ASAE.

Meet Your Speakers

Claire Trost is the Midwest Business Development Manager for Campus Cooks. The role could not be more perfect for her due to her love for Greek life and great food. She is a member of Purdue’s Alpha Chi Omega chapter and currently serves on the house corporation board. Trost graduated from Purdue’s hospitality management program in 2009 and took culinary classes in Switzerland while studying abroad. Today, in addition to her role with Campus Cooks, Trost is also the owner of a local food blog, theblogbloom.com, where she shares her passion for local growers, backyard gardens, scratch cooking, and getting everyone together around the table.

Claire Trost | Midwest Business Development Manager, Campus Cooks

Anderson Dolton is the Southwest Business Development Manager for Campus Cooks. She comes to Campus Cooks with more than 15 years in the hospitality industry. She is a legacy member of Chi Omega from Stephen F. Austin State University. Her love of catering and the hospitality industry comes from not only being the daughter of a chef but also her time spent as the recruitment chair for her chapter. Dolton is a certified etiquette consultant and is also a certified instructor/proctor for management level food safety. Her experience ranges from large scale restaurants to national entertainment venue catering.

Anderson Dolton | Southwest Business Development Manager, Campus Cooks

Eileen G. Sullivan, Ph.D. | Dean of Students, Elmhurst College

Dr. Sullivan, Dean of Students at Elmhurst College, oversees campus life, including athletics, residence life, intercultural student affairs, health services, orientation, and judicial affairs. She also serves as the institution’s Title IX Coordinator. Dr. Sullivan received her bachelor’s and master’s degrees from Eastern Illinois University where she began her career as Assistant Director for Student Life/Greek Affairs. She received her Ph.D. in higher education administration from Bowling Green State University where the Ohio Governor appointed her to the University’s Board of Trustees. Dr. Sullivan serves as an adjunct faculty member in Benedictine University’s Doctoral Program in Higher Education and Organizational Change and in North Central College’s Master of Leadership Studies program. Her research interests include legal issues in higher education, values and ethics, civic learning and democratic engagement, and working with students with invisible diagnosis and disabilities.

Meet Yours SpeakersMeet Your Speakers

Michael R. Laliberte, Vice Chancellor for Student Affairs at the University of Wisconsin Milwaukee, provides oversight to several university departments, including enrollment management, career planning, health services, athletics, student recreation, the women’s resource center, student government, and veterans affairs. Laliberte previously served as the vice president for student affairs at Boise State University and as the associate vice chancellor for student affairs at the University of Massachusetts Dartmouth. He earned a Bachelor of Science at the University of Rhode Island, a Master of Science in College Student Development and Counseling at Northeastern University, and a Ph.D. in Educational Leadership in Higher Education at Johnson & Wales University.

Michael R. Laliberte | Vice Chancellor, University of Wisconsin-Milwaukee

Erin Lazzar has her Bachelor of Arts in Social Work from Marquette University (2000) and Master of Arts in Organizational Leadership with an emphasis in Higher Education Administration from the University of San Francisco (2002). Lazzar currently works at Marquette University where she serves as the Associate Dean of Students with responsibility for the student conduct process. She brings previous experience in residence life as well as alcohol prevention and intervention. Lazzar’s areas of specialization include alcohol/drug early intervention and Title IX, specifically compliance with federal mandates as well as policy development and implementation.

Erin Lazzar | Associate Dean of Students, Marquette University

Dr. Jeff Janz, Assistant Vice President for Student Affairs at Marquette University, coordinates student affairs strategic planning efforts, professional development, assessments, and annual reporting processes. Dr. Janz has chaired or served on several campus, regional, and national committees and frequently presents at local and world-wide conferences. Dr. Janz is an adjunct professor in the College of Business Administration and teaches courses in organizational behavior. He has worked in student affairs for more than 37 years, and prior to working at Marquette, Dr. Janz was the dean of students and executive director of residence life at the University of Wisconsin – Whitewater, the associate director of campus housing at the University of Illinois at Chicago, the area coordinator and student affairs coordinator at the University of Wisconsin – Madison, and the residence hall director at the University of Wisconsin – Platteville. Dr. Janz holds a Ph.D. in educational policy and leadership from Marquette University, an MBA from the University of Illinois at Chicago, an M.S.Ed. in counseling from the University of Wisconsin – Platteville, and a bachelor’s in psychology from the University of Wisconsin – Platteville.

Dr. Jeff Janz | Assistant Vice President for Student Affairs, Marquette University

James Swanson is the Southeast Business Development Manager for Campus Cooks. Swanson started his career early in life at the age of 13. He has 22 years of experience in the kitchen from washing dishes and food prep to menu development and more. He has been with Campus Cooks for seven years. He is the son of two chefs, and though he is not a member of a fraternity, he spent more than four years of his career with Campus Cooks as a Chef in fraternity and sorority kitchens. His most recent position with Campus Cooks was as the Regional Operations Supervisor for the Southeast. He is an avid fan of gardening and enjoys growing his own fruits and vegetables

Meet Your Speakers

Moving from England to Massachusetts when he was a child, Chris Cole received his Bachelor of Science from Gettysburg College where he joined Lambda Chi Alpha. After graduating, he worked at Lambda Chi Alpha Headquarters for four years, serving as a chapter consultant and associate director of chapter services for policy and compliance. He ended his tenure as the associate director of harm reduction in which he was responsible for creating and developing education for Lambda Chi Alpha chapters as well as managing all incidents that were reported. Cole recently started at James R. Favor & Company in July 2013 as an account executive. He now develops risk management education for all clients of the agency and assists with various insurance accounts. Chris is a licensed insurance agent in the state of Colorado in the property and casualty lines.

Kirstin DeMartino is serving in her fifth academic year as an assistant director of student involvement at the University of Wisconsin-Milwaukee where she works with fraternities and sororities, campus traditions, and leadership development. She received her Bachelor of Arts in journalism from the University of Wisconsin-Madison and her Master of Education in higher education from Iowa State University. Prior to returning home to Milwaukee, DeMartino worked as the fraternity and sorority advisor at Saint Louis University for four years. She is a proud member and volunteer for Alpha Phi and is currently a Ph.D. candidate working on her dissertation.

Kirstin DeMartino | Assistant Director of Student Involvement, University of Wisconsin-Milwaukee

Ian Crone, Associate Dean of Students and Director of the Frick Center at Elmhurst College, supports major areas of student life. He received his Master of Science in education, higher education and student affairs from Indiana University and his Bachelor of Arts in English/secondary education from Valparaiso University. He is a proud volunteer for the Association of College Unions International (ACUI) where he most recently served as the chairperson of the conference program team for the ACUI Annual Conference in San Antonio, Texas.

Ian Crone | Associate Dean of Students/Director of the Frick Center, Elmhurst College

Upper Crust began as a small, local bakery in Columbia, Missouri more than 25 years ago. Adam Guy became interested in fraternity food as an Alpha Tau Omega undergraduate at the University of Missouri. After purchasing Upper Crust, Guy knew the Greek community was often under served and taken advantage of in their kitchens. With freshness and quality as his guide, he developed the Greek food service division. Today, Upper Crust Food Service provides meals to thousands of students on campuses across the country. Guy maintains his affiliation with his fraternity as a leader and board member. He lives in Columbia, Missouri with his wife, son, and their dog, Teddy.

1:15 p.m. Board the Lady of the Lake

1:45 – 2:45 p.m. Lake Geneva Bay Cruise Begins The Geneva Bay Tour explores the eastern end of Geneva Lake, departing from the historic Riviera Docks in downtown Lake Geneva. The boat will cruise along the north shore of the lake where the live tour guide will point out the large estates and mansions that line the shores. Many of the homes were built in the late 1800s and early 1900s by wealthy Chicagoans who chose the Lake Geneva area as a summer retreat. Names like Swift, Wrigley, and Maytag are part of the rich history of the area.

5:30 – 6:45 p.m. Dinner at Sopraffina Marketcaffe Enjoy a buffet of assorted homemade thin-crust pizzas, cremini mushroom caps stuffed with spinach, artichoke, and fontina cheese, Caesar salad, focaccia bread, ravioli salsiccia, pasta shells stuffed with vegetables and ricotta cheese with tomato basil cream sauce, grilled chicken breast with porcini cream sauce, roasted peppers and pinenuts, and for dessert, seasonal fresh fruit and assorted dessert bars including caramel apple, chocolate raspberry, and lemon berry. Set to Gloria’s chart-topping smash hits such as “Rhythm Is Gonna Get You,” “1-2-3,” “Mi Tierra,” and “Conga,” in addition to new music penned by the Estefans, the show will bring a new sound to Broadway and get audiences on their fee. ON YOUR FEET! will be directed by two-time Tony Award winner Jerry Mitchell (Kinky Boots, Hairspray), and choreographed by four-time Drama Desk nominee Sergio Trujillo (Jersey Boys, Memphis) with a book by two-time Drama Desk nominee Alexander Dinelaris (The Bodyguard Musical, Zanna Don’t).
