    Introduction

    As we age, we can lose our beautiful, nearly flawless skin. This is just the very nature of

    our lives, and it is something we cannot stop. However, there are many things that we

    can do as we age to help keep our skin as fresh and youthful as possible; many of these

    methods to preserve our skins’ vitality are things we should be doing anyway.

    Chapter One: Skin Structure And Challenges 

    You skin is made up of three primary layers: the epidermis, the dermis and the

    subcutaneous layer, which is also known as the fat layer. Each layer of your skin has a

    different function in protecting your skin as it ages, and each layer contains certain

    substances to help it stay looking youthful and healthy.

    The Epidermis

    The epidermis is made up a very thin layer of skin, and it is the outmost layer of your

    skin that you see. The cells that make up this layer are known as keratinocytes. These

    cells come from the deepest part of the epidermis, which is known as the basal layer.

    Whenever your body produces new keratinocytes, these cells migrate upward through

    the layer until they reach the surface of the epidermis. The moment they reach the surface,

    they will gradually shed off of your body as new cells come up from below.

    The layer that the epidermis is made up of is known as the stratum corneum, and is

    essentially waterproof. The function of this layer is to help prevent many common

    viruses, bacteria or foreign substances from entering your body. This layer, along with

    the epidermis, helps to protect all of your internal organs and their various muscles,

     blood vessels and nerves from being damaged whenever you experience heavy trauma.

    There are certain areas where they offer more protection from harm than others, such as

    the palms of your hands or the soles of your feet.

    Throughout the entire basal layer of your epidermis there are cells that exist known as

    menalocytes. These cells produce a substance known as melanin, which is responsible for

    giving you your distinct skin color. The primary function of melanin is not giving your

    skin color, but to help filter ultraviolet radiation from the sun, keeping it out of your body.

    Ultraviolet radiation is known to damage the DNA of your cells which can cause many

    harmful effects to your body including skin cancer.

    The last set of cells that reside in your epidermis are known as Langerhans cells; these

    make up a large part of your skin’s primary immune system. These cells have been

    known to be the root cause of skin allergies due to the fact that they help the body detect

    foreign substances that enter the body, and also help the body fight against infections.

    The Dermis 

    The next layer of skin that resides underneath your epidermis is known as the dermis.

    This layer is a thick, elastic tissue made up of collagen, fibrillin and elastin. This is the

    layer that is responsible for giving your skin its strength and flexibility. The dermis also

    contains numerous sweat glands, hair follicles, important blood vessels and nerve

    endings that make your skin what it is.

    The nerve endings that reside within this layer help your body to sense things such as

    pressure, pain, and temperature, though some areas of this layer may contain more nerve

    endings than others. At the same time, blood vessels that reside within this layer of skin

    help to provide important nutrients throughout your body and also help to regulate your

    overall body temperature.

    Meanwhile, the sweat glands that reside in this layer help your body to produce sweat in

    response to indicators such as heat or stress. The important thing to remember here is

    that sweat is made up of primarily salt, water and other important chemicals. When your

     body produces sweat and it evaporates off of your body, it begins to help cool down your

     body. There are certain areas where sweat glands reside, specifically in the armpits and

    near the genital region, because they are the areas most likely to overheat.

    The dermis also contains the sebaceous glands, which are responsible for secreting sebum

    into your hair follicles. What is sebum? It is an oil that helps to keep your skin feeling soft

    and moist. It is also responsible for helping to protect your body from foreign substances.

    Finally, the hair follicles that reside within this layer help to produce different kinds of

    hair all over your body. As you have probably been told, hair serves many different

    functions other than giving you a beautiful appearance. It helps to regulate your body’s

    temperature, help you to sense things much better, and helps protect you from injury.

    Every hair follicle has a portion that contains all important stems cells. These stem cells

    help to regrow skin cells whenever your epidermis is damaged.

    The Fat Layer 

     Just below the dermis layer of your skin lays the fat layer. This layer is responsible for

    insulating your body from both the cold and the heat. It is also responsible for adding

    some extra padding to your body, and acts as a separate storage area for nutrients. In this

    layer, you will find a variety of cells known as fat cells. This layer will vary in thickness

    all over the body. For example the layer of skin near your eyelids is incredibly thin,

    whereas near your abdomen, you may have several layers of fat.

    Your skin is responsible for protecting your body from a variety of things such as foreign

    substances and bacteria. Many people don’t take into account how important their skin

    is, not just for cosmetic reasons, but for actually safety reasons as well. That is why it is

    incredibly important to take as much care of your skin as possible and to do your best to

    keep it safe from harm.

    Chapter Two: The Annoyance of Boils 

    Many people today suffer from a variety of skin ailments. Boils is just one of these

    ailments. So, what are boils and how can they potentially harm your body?

    A boil on your skin is a large, swollen, painful bump that lies just underneath your skin.

    To many people, it resembles a large, overgrown pimple, while others don’t seem to

    notice them. The primary cause for developing these painful boils is because the hair

    follicle has somehow become infected.

    When the hair follicle is infected, the bacteria that it produces forms a painful pocket of

    pus, which is known as an abscess. These abscesses can become quite large and extremely

    painful over time. A boil will often occur around an area where the hair on the skin is

    constantly rubbing against another surface. Most commonly, people see boils in the

    following areas:

      On the face

      Near the neck

     

    Under the armpit

      Around the breasts

      Near the groin area

      Near the buttocks

    What Not to Do With a Boil 

    There are numerous ways that you can treat boils from the comfort of your own home.

    There are also a variety of things that you do not want to do if you develop these painful

    lesions. Some of the things that you do not want to do if you develop boils are:

    1. Do not try to squeeze, drain or open the boil on your own. If you try to squeeze

    the boil, you risk pushing the infection that is there further down to the deeper

    layers of your skin.

    2. Do not share any towels or washcloths that you have used with other people.

    Remember, an abscess is a bacterial infection, and as such, you risk passing on the

    infection to other people. It is best to make sure that you share nothing you have

    used on your body with other people.

    To treat a boil at home, all you have to do is follow these steps; this easy method will

    ensure that you stop the boils from growing, and also will keep them from returning and

    causing more damage to your skin.

    1. Make sure to place warm and wet cloths onto the infected site for 20-30 minutes

    a day for 2 to 4 days. You should do this the moment you first notice that you have

    a boil, as this will help the boil to drain faster on its own. However, in severe cases

    it can take up to a week for the boil to drain.

    2. Once your boil opens up on its own and begins draining, continue using heat

    and warm compresses for at least 3 more days. To prevent the infection from

    spreading once the boil has opened, use a bandage and make sure that you change

    the bandage every day.

    There are many circumstances in which you will want to go to a doctor so that he or she

    can help treat your boil. Some of the instances are:

      If a boil is located near your spine or on your face close to your eyes.

      If the boil continues to grow larger regardless of your efforts.

      If you are experiencing a lot of pain.

      If you have any large masses near the boil and those masses begin to hurt.

    If you have diabetes.

      If you are experiencing a fever.

      If the boil itself has red streaks leading away from it

      If the boil has not improved over 5 to 7 days of your own efforts

      If the boil is as large as a ping pong ball.

    In these severe cases, there may be many things that your doctor may want to do in order

    to help relieve of some pain and discomfort. They may recommend lancing the boiling in

    order to drain the abscess. In this case, the moment they lance the boil open, you will

     begin to feel relief as all of the pressure and pain will begin to ebb. A doctor will then use

    a piece of gauze or bandage to keep the boil open so that it can continue draining on its

    own.

    Your doctor may also want to prescribe you a series of antibiotics to help prevent further

    infection. If your doctor gives you antibiotics, make sure that you follow the instructions

    carefully and take the antibiotics for as long as needed.

    Can You Prevent Boils From Occurring?

    The answer to this question varies, as every person and every circumstance is very

    different. If you are getting boils in the same spot all of the time, there are probably things

    that you can do to prevent it from occurring in the future. One thing that you can do is to

    focus on washing the area well with warm water and soap, and always ensuring that you

    dry the area well with a towel.

    Also, you may ask your doctor if they can prescribe or recommend antibiotic ointments

    that you can use to prevent boils from occurring in the future. While boils can be very

    annoying they are usually very harmless. A boil will only stick around for a couple of

    days to a couple of weeks, and you can often treat it within your own home.

    Pharmacy Remedies

    If you are suffering from boils, often a trip to the doctor is necessary. If the boils are bad

    enough, the doctor will probably prescribe antibiotics to kill the infection and hopefully

    keep it from returning. These antibiotics can be effective, but will not prevent future cases

    of the infection – they will only end the current infection.

    Other options are available over the counter from your neighborhood pharmacy. Topical

    creams can be used, and often contain anti-bacterial medication. These creams are

    effective at cooling the area, stopping the spread of infection and stopping itching, but

    they are not as strong as the doctor-prescribed antibiotics. This is also true of powders

    or sprays that are available from your pharmacy. They will give you some relief, but are

    not as potent as prescribed medicine.

    The problem with all of these solutions from your pharmacy is that they are foreign to

    your body and often have trouble breaking through the dermis layer of the skin in order

    stop the infection. They also do not solve the problem of the pus buildup inside the boil.

    Essentially, they are effective at stopping the infection from spreading, but they offer

    much less help in the healing process.

    Chapter Three: The Appearance of Age Spots

    What are age spots? Age spots, which are also called liver spots, are small spots that are

    usually tan, black or brown in color. These spots will vary in size and can appear literally

    anywhere on your body, but are usually found on the shoulders, arms or on the face.

    Primarily, you will see the spots wherever the skin is more exposed to the sun.

    Age spots are very common in people who are older than 50 years old, but it is known

    that younger people can develop them as well. In some instances, age spots can look very

    similar to cancerous masses, but in reality, age spots are very harmless and typically do

    not need to be treated unless the person wishes to have them treated cosmetically.

    If a person wishes to have their age spots treated cosmetically, they can do so by having

    these spots lightened using skin bleaching treatments or they can have them removed

    altogether. However, there are ways that people can prevent age spots altogether, such

    as using sunscreen or avoiding the sun for extended periods of time. By avoiding the

    development of age spots, you can help your skin keep its youthful and healthy

    appearance.

    Five Ways to Help Fade Away Your Age Spots

    There are numerous steps that you can take prevent the appearance of age spots by

    simply doing things from the comfort of your own home or by using products that are

    very cost effective. Below is a list of the top five ways to prevent age spots from occurring.

    1. Treat Your Skin with a Twofer

    The best way to prevent age spots is by treating your skin with a combination of two or

    more substances to help give your skin a youthful and clear appearance that you have

    always wanted. The best things that you can use are a combination of Vitamin C with

    some licorice extract or kojic acid. These substances will help to tone your skin and help

    to prevent age spots in the long run.

    3. Use a Rub

    The best way to prevent age spots is to use an anti-age cream. An anti-age cream can do

    more than just eliminate wrinkles from your skin. Often, they are able to start

    As we age, we may begin to develop a condition known as varicose veins. What are

    varicose veins? These are simply veins that have become swollen and twisted to the point

    that you can see them clearly beneath the surface of the skin. These veins typically occur

    in the legs of many people, but they have also been known to occur in other parts of the

     body as well.

    This condition is fairly common, especially among older people. Remember, veins are

     just blood vessels that help to carry oxygen-rich blood to all of the tissues and organs

    within your body, especially the heart. With help from the heart, blood is able to flow

    throughout the entire body.

    However, after some time our bodies will begin having a few problems. Often, the veins

    are the first to begin to malfunction. Every blood vessel within your body has a one way

    valve for the blood to travel through. After some time, these valves may begin

    malfunctioning, and as a result, the blood in these veins will begin to back up and this

    cause the walls of the veins to swell. In turn, this leads to the condition of varicose veins.

    The Outlook of Varicose Veins

    When a person is diagnosed with having varicose veins, no one is usually too concerned

    about it because it simply does not cause many medical problems. In rare cases, medical

    problems can arise, and if they do, a doctor will suggest changing your lifestyle to help

    eliminate these medical problems.

    Sometimes, varicose veins have been known to cause some pain and discomfort. Theyhave also been known to cause other problems such as skin ulcers and blood clots. There

    What Other Problems Can Varicose Veins Cause?

    There are a number of other medical problems that varicose veins can cause. Some of

    these conditions include:

    1. Telangiectasias - All this is is a cluster of small blood vessels that can usually be

    found within the upper part of the body and along the face. The blood vessels that

    are in this area will appear red at first, and typically appear during pregnancy.

    However, many people have been found to develop this condition, especially if

    they suffer from certain forms of genetic disorders or viral infections.

    Telangiectasias can be an indicator of a more serious problem, so it is important to

     be seen by your doctor right away if your notice these blood vessels on your face.

    2. Spider Veins - These are just much smaller version of varicose veins, and they

    are considered to be less serious. When this problem occurs, it usually involves

    only the capillaries of your body, which are the smallest blood vessels that exist in

    your body. These veins commonly appear on the legs and face of a person and are

    typically red or blue in color. They get their name for the pattern they tend to

    appear most like, and these are typically not even a concern among doctors today.

    Who Is At Risk For Varicose Veins?

    The people that who are more at risk to developing this vein condition are those that fit

    into the following categories:

    1. Family History - If you have had other family members that have had varicose

    veins in the past, then you are most likely to develop it in the future.

    2. Age - Just as I stated previously, varicose veins are most likely to occur with age.

    3. Gender - It has been found that women are more likely to develop varicose veins

    than men. This can occur due to a variety of reasons such as puberty, menopause

    or even pregnancy. Using birth control pills will increase the chance of varicose

    veins in the future.

    4. Overweight - Obesity itself can cause an array of problems for many people

    regardless of their gender. However, being overweight can put enormous amount

    of pressure upon your veins, and thus can lead to the development of varicose

    veins.

    5. Activity Level - If you are sitting down or standing for a long period of time, or

    if you keep your legs bent or crossed for extended periods of time, you may be

    more at risk of developing varicose veins in the future. The reason behind this is

    simple: staying in one position for a long time will cause your blood vessels to

    work harder to move blood throughout your body, and this in turn can lead to

    future swelling of the blood vessel wall.

    Signs That You Have Varicose Veins

    There are a variety of signs and symptoms that can indicate that you are suffering from

    Varicose veins. These signs and symptoms include:

      Having pain and aches in your legs. You could describe your legs as feeling heavy.

      Having mild swelling around your ankles and feet.

     

    Having fairly large veins that you can see just under the surface of your skin.

     

    Feeling cramping or painful throbbing in your legs.

      Feeling increasingly itchy skin, typically around your lower legs and ankles.

      Having discolored skin around the area where the varicose veins lay.

    There are a number of ways that you can help treat your varicose veins. Some of these

    can help alleviate the painful symptoms of the condition.

    The primary way that this condition is treated is through making a few lifestyle changes

    and participating in a few medical procedures. The overall goal of seeking treatment is

    to help relieve some of the symptoms that you may be feeling and to prevent the

    development of complications in the future. However, remedies from the local pharmacy

    will be limited to the minimizing of the varicose veins rather than the prevention of them.

    The only way that varicose veins can be prevented is through lifestyle changes.

    How to Change Your Lifestyle 

    If you simply need to make a few changes to your lifestyle to help relieve the symptoms

    of varicose veins, there are simple things that you can do. These small changes can also

    help you to prevent these veins from occurring in the future. Some of these changes

    include:

    1. Avoid staying in one place for long periods of time - I f you are the type of

    person that needs to sit at a desk for 8 to 10 hours a day, make sure that you do

    not cross your legs. Try as hard as you can to have your legs raised while you’re

    sitting, and try to get up every now and then. If you have the opportunity, attempt

    to lift your legs above your heart as frequently as possible.

    2. Do As Many Physical Activities As You Can - The best way to avoid

    developing varicose veins in the future is to get yourself moving as much as

    possible. Constant exercise will help to improve your overall muscle tone and will

    help to keep blood moving through the veins of your legs.

    3. Attempt To Lose Some Weight - As discussed previously, being overweight

    can contribute to the development of varicose veins in the future. However, losing

    some weight will help increase the blood flow in your legs and prevent pressure

    from building up on these veins in the future.

    4. Do Not Wear Tight Clothes - If you are wearing tight cloths, this can make

    5. Avoid Wearing High Heels - Now, I am not saying that you should never wear

    high heels. I am just trying to state that you should avoid wearing high heels for

    your overall muscles tone and help the blood flow through the veins in your legs.

    Of course, if you seek medical treatment, there are various things that your doctor may

    recommend for you to try in an attempt to prevent and get rid of your varicose veins.

    One thing that your doctor may recommend is wearing compression stockings, as these

    stockings help to prevent blood pooling within the vein and to help decrease the swelling

    that you may have in your legs.

    Medical Procedures For Varicose Veins 

    If the symptoms of your varicose veins have become too much to bear, your doctor may

    recommend seeking further medical treatment to help alleviate the symptoms you may

    As much as age spots can be detrimental to your physical appearance, the existence of

     brown, scaly patches of skin, also known as actinic keratosis, is much more serious. These

    patches are much deeper and more damaged than simple skin spots. If left unchecked,

    these patches can grow into growths, and sometimes even develop into horn-like

    for areas around the mouth. They are known to develop into a type of skin cancer called

    Remedies for Actinic Keratosis 

    There are many remedies for these patches. However, they are all very harsh on your

    skin. Dermatologists offer these remedies, but all involve the destruction of the old, scaly

    skin with the hope that new, healthy skin will reappear. This can be done through

    freezing or heating, as well as burning the skin chemically with a peel. Often, laser

    Chapter Ten: Recipes for Healthy Skin

    Sometimes the hardest part of changing is knowing where to start. Try these recipes that

    all include the nutrients that are key to your skin’s health. Eating properly is the first step

    to healthier skin. Follow the original recipes, and enjoy delicious, healthy meals.

    Chicken Liver Pate

      1 tablespoon oil

      2 shallots (chopped)

     

    1 rasher bacon (chopped)

      500 grams chicken liver (to make up about 300g once cleaned and trimmed)

      3 tablespoons brandy (or port)

      100 ml cream

      salt (to taste)

      pepper (to taste)

      1 tablespoon fresh parsley

      2 tablespoons butter

      clarified butter

    On a medium heat add oil and saute shallots and bacon until the shallots of softened

     but not browned.

    Add the cleaned liver and cook until it just changes color. Pour in the brandy or port,

    allow it to cook down before adding the cream.

    Add salt, pepper and parsley and cook until liver is almost cooked through, it should

    only take a couple of minutes.

    Place mixture into a food processor with the butter, process until smooth.

    Transfer to a serving bowl, flattening the pate out before you cover with clarified

     butter or press cling film down onto pate to stop the top discoloring.

    Keep in the fridge for 24 hours for flavors to develop before serving. Keeps for about

    a week.

    Parsley Salad

      4 ounces Italian parsley

      2 tablespoons fresh lemon juice

     

    2 tablespoons lemon zest  6 tablespoons walnut oil

      2 teaspoons dark sesame oil

      1 teaspoons honey

      Salt

      Pepper

      3 tablespoons toasted sesame seeds

    Wash and dry the parsley. Pick the leaves and set aside. Discard the stems.

    In a large bowl, whisk together the lemon juice, zest, walnut oil, sesame oil, honey and

    salt and pepper, to taste. Add the parsley and sesame seeds and toss to combine. Allow

    the salad to sit for at least 30 minutes before serving, so that flavors meld.

    Garlic Sautee Spinach

      1 ½ pounds baby spinach leaves

      2 tablespoons good olive oil

      2 tablespoons chopped garlic

    2 teaspoons kosher salt

      ¾ teaspoon freshly ground black pepper

      1 tablespoon unsalted butter

     

    1 lemon

    Rinse the spinach in cold water. Spin it dry in a salad spinner, leaving just a little water

    clinging to the leaves. In a very large pot, heat the olive oil and saute the garlic over

    medium heat for about 1 minute, but not until it’s browned. Add all the spinach, the

    salt and pepper to the pot, toss it with the garlic and oil, cover the pot and cook for 2

    minutes. Uncover the pot, turn the heat on high, and cook the spinach for another

    minute, stirring with a wooden spoon, until all the spinach is wilted. Using a slotted

    spoon, lift the spinach to a serving bowl and top with the butter, a squeeze of lemon

    and a sprinkling of sea or kosher salt. Serve hot.

    Collard Greens

      ½ pound smoked ham, turkey wings or smoked neck bones

     

    1 tablespoon seasoning (1 cup salt, ¼ cup black pepper, ¼ cup garlic powder)

      1 tablespoon hot red pepper sauce

      1 large bunch collard greens

      1 tablespoon butter

    In a large pot, bring 3 quarts of water to a boil and add smoked meat, seasoning and

    hot sauce. Reduce heat to medium and cook for 1 hour.

    Wash the collard greens, remove the stems that run down the center by holding the

    leaf in your left hand and stripping the leaf down with your right hand. Stack 6 to 8

    leaves on top of one another, roll up, and slice into ½ to 1-ince thick slices. Place greens

    in pot with meat and add butter. Cook for 45 to 60 minutes, stirring occasionally. When

    done, taste and adjust seasoning.

    Southern Style Collard Greens

     

    1 tablespoon olive oil

      1 tablespoon butter

      ½ large onion, chopped

      1 teaspoon red pepper flakes

      1 clove garlic, finely chopped

      3 cups vegetable stock

      1 pound collard greens, chopped

      2 tomatoes, chopped

     

    Salt

      Ground black pepper

    In a large pot over medium heat, heat oil and butter. Saute the onions until slightly

    soften, about 2 minutes, then add the red pepper flakes and garlic, cook another

    minute. Add collard greens and cook another minute. Add the vegetable stock, cover

    and bring to a simmer. Cook until greens are tender, about 40 minutes. Add tomatoes

    and season with salt and pepper.

    Fresh Salsa

      3 tablespoons finely chopped onion

     

    2 small cloves garlic, minced

      3 large ripe tomatoes, peeled and seeds removed, chopped

      2 hot chile peppers, Serrano or Jalapeno, finely chopped

      1 1/2 to 2 tablespoons lime juice

    Put chopped onion and garlic in a strainer; pour 2 cups boiling water over them then

    Combine onions and garlic with chopped tomatoes, peppers, cilantro, lime juice, salt,

    and pepper. Refrigerate for 2 to 4 hours to blend flavors. Makes about 2 cups of salsa.

    Broccoli Soup

      2 bunches broccoli

      1 tablespoon olive oil

      1 onion, chopped

      4 cups vegetable stock

      1 russet potato, peeled, cut into 1inch pieces

     

    Kosher salt and freshly ground black pepper

    Remove and discard tough lower stalk of each broccoli. Peel remaining stalk.

    Finely chop stalk and florets (you should have about 4 cups). Set aside.

    Heat oil in a medium heavy pot over medium heat. Add onion and sweat unt il

    soft and translucent, about 10 minutes. Add stock and potato and bring to a

     boil. Reduce heat and simmer unt il potato is almost tender, about 12 minutes.

    Stir in chopped florets. Simmer until potato and broccoli are very tender, about

    10 minutes. Remove soup from heat and purée in a blender until smooth.

    Season to taste with salt and pepper. Serve hot with crusty bread.

    Strawberry-Rhubarb Pie

    Crust:

      2 cups flour

      ½ cup cake flower soft as silk

      3 teaspoons sifted powdered sugar

      ½ cup butter-flavored shortening

     

    Pinch salt

      1 egg

      2 teaspoons vinegar

     

    ¼ cup ice cold water

    Filling:

      2 ½ cups chopped red rhubarb, fresh

      2 ½ cups de-stemmed, washed and cut strawberries

      1 ½ cups sugar

      2 tablespoons minute tapioca

     

    1 tablespoon flour

      ½ teaspoon lemon juice

      ½ teaspoon ground cinnamon

      1 teaspoon vanilla extract

      3 tablespoons butter, cubed

     

    1 egg, beaten with 1 teaspoon water

     

    Sugar

    Crust Preparation: Using 2 pastry blenders, blend the flours, sugar, shortening, butter

    and salt. Whisk the egg, vinegar and water in a 2-cup measure and pour over the dry

    ingredients incorporating all the liquid without overworking the dough. Toss the

    additional flour over the ball of dough and chill if possible. Divide the dough into 2

    disks. Roll out 1 piece of dough to make a bottom crust. Place into a pie dish. Put dish

    in refrigerator to chill. Preheat oven to 425 degrees F.

    Filling Preparation: Mix the rhubarb, strawberries, sugar, tapioca, flour, zest and juice

    of lemon, dash of cinnamon, and vanilla. Mix well in a large bowl and pour out into

    chilled crust. Dot the top of the filling with the butter. Brush edges of pie crust with

    egg white wash. Roll out the other piece of dough and place over filling. Crimp to seal

    edges. Brush with egg white wash and garnish with large granule sugar. Collar with

    foil and bake at 425 degrees F for 15 minutes. Decrease temperature to 375 degrees Fand bake for an additional 45 to 50 minutes, or until the filling starts bubbling. Higher

    altitude will take 450 degrees F and 400 degrees F respectively.

    Also, you can use a pie bird for extra decor. Let cool before serving.

    Strawberry Spinach Salad

     

    ½ cup white sugar

      2 tablespoons sesame seeds

      ½ teaspoon sesame oil

      1 tablespoon poppy seeds

      1 ½ teaspoons dried minced onion

     

    ¼ teaspoon paprika

     

    ½ cup vegetable oil

      ½ cup balsamic vinegar

     

    2 bunches fresh spinach – chopped, washed and dried

      1 pint strawberries, halved

    Whisk together the sugar, sesame seeds, sesame oil, poppy seeds, dried onion,

    paprika, oil and vinegar. Refrigerate until chilled. In a salad bowl, combine the spinach

    and strawberries. Drizzle with dressing, toss lightly and serve.

    Ginger Lemonade 

      3 cups white sugar

      4 quarts water

      14 slices fresh ginger root

      4 cups fresh lemon juice

     

    2 lemons, sliced

    In an 8-quart saucepan combine sugar, water and ginger root. Heat to boiling, stirring

    occasionally. Remove from heat.

    Stir in lemon juice. Cool 15 minutes. Remove ginger. Refrigerate lemonade at least 1

    hour, or until chilled.

    Serve over ice, and garnish with lemon slices.

    Flax Seed Smoothie

      1/2 frozen banana, peeled and cut into chunks

      1 cup frozen strawberries

     

    2 teaspoons flax seeds

    1 cup low-fat vanilla boiled soybeans milk

    Combine the banana, strawberries, flax seed meal, and soy milk into a blender. Puree

    until smooth.

    Indian Cucumber Salad

      3 medium cucumbers

      1 cup plain low-fat yogurt

     

    1 tablespoon fresh lemon juice

      ¼ - 1/2 teaspoon sugar, to taste

      ½ - 1 teaspoon ground cumin, to taste

      1/2-1 tablespoon chopped mint

    Peel cucumbers; slice in half lengthwise and scoop out seeds. Dice the cucumbers and

    place in a bowl. Whisk together yogurt, lemon juice, sugar, cumin and mint.

    Pour over cucumbers and toss to coat.

    Garlicky Broiled Salmon and Tomatoes

      4 to 6-ounce pieces skinless salmon fillet

      4 medium tomatoes, halved

     

    2 tablespoons olive oil

      Kosher salt and black pepper

     

    ½ teaspoon paprika

      8 sprigs fresh thyme

      4 cloves garlic, sliced

    Heat broiler. Place salmon and tomatoes, cut-side up, in a broiler proof roasting pan

    or on a rimmed baking sheet.

    Drizzle with oil and season with ¾ teaspoon salt and ¼ teaspoon pepper. Sprinkle

    salmon with paprika. Scatter thyme and garlic over the top.

    Broil until salmon is opaque throughout and tomatoes are tender, 8 to 10 minutes.

    Chilled Cantaloupe Soup

      1 cantaloupe - peeled, seeded and cubed

      2 cups orange juice

     

    1 tablespoon fresh lime juice

      ¼ teaspoon ground cinnamon

    Peel, seed, and cube the cantaloupe.

    Place cantaloupe and 1/2 cup orange juice in a blender or food processor; cover, and

    process until smooth. Transfer to large bowl. Stir in lime juice, cinnamon, and

    remaining orange juice. Cover, and refrigerate for at least one hour. Garnish with mint

    if desired.

    Oven Roasted Sweet Potato Wedges

    3 small sweet potatoes (about 2 pounds)

    1 ½ tablespoons garlic-flavored olive oil

    ½ teaspoon dry mustard

    2 teaspoons minced fresh rosemary

    ½ teaspoon salt

    Preheat oven to 450°.

    Peel sweet potatoes; cut each potato lengthwise into 8 wedges. In a large bowl,

    combine sweet potatoes and remaining ingredients; toss well to coat.
