La determinacin de la vida til del producto normalmente empieza en la
etapa de desarrollo de producto. El Desarrollo de productos involucra el
concepto inicial del producto, a travs de produccin de un prototipo y por
ltimo, uno producido a escala comercial para el consumidor y uso. Sin
embargo, independientemente de la etapa en que el producto alimenticio
este desarrollado, es importante asegurarse que el shelf-life se considere encada etapa y determinarla con precisin utilizando todos los datos
disponibles.
Food business operators (FBO) debern desarrollar should develop
protocolos y SOPs que permitan la determinacin CONSISTENTE Y EXACTAdel shelf-life.

Product conception and specification
La especificacin inicial del producto propuesto debera ser redactada por el FBO para
evaluar inicialmente las caractersticas del producto y la seguridad. Como mnimo,
esta especificacin debe incluir lo siguiente:
1. Descripcin del producto propuesto
2. Ingrediente de producto listado
3. Caractersticas nutricionales4 Tratamiento propuesto, envasado, almacenamiento y distribucin
5. Propone plan HACCP y los datos de evaluacin de riesgo disponibles
6. Consumidor final propuesto
7. Cualquier requisito legislativo
8. Vida til requerida por seguridad, calidad y especificaciones de marketing.

Labelling Exemptions
The following foods are specifically exempt from carrying a date of minimum
durability declaration:
1.Fresh fruit and vegetables,
2.Wines, liqueur wines, sparkling wines, aromatised wines and similar products
obtained from fruits other than grapes,
3. Beverages with greater than 10% volume of alcohol
4. Soft drinks, fruit juices, fruit nectars and alcoholic beverages in individual
containers greater than five litres intended to supply mass caterers only5.Bakery products which are normally consumed within 24 hours of
manufacture such as baguettes and cream buns
6. Vinegar (including wine vinegar)
7. Cooking salt (mineral and herbal salts are not included)
8.Solid sugar (sucrose). This exemption does not apply to fructose or
sweeteners or mixtures of sugars9.Confectionery products consisting of mostly flavoured or coloured sugars
such as hard sweets. Toffee, winegums and fruit jellies are not exempt
10. Chewing gums or similar products

Many food products will not have a uniform (i.e. homogeneous) internal
structure. Therefore, the intrinsic properties f the food product may be
variable within the structure of the food. As a consequence, micro-
environments may form within the food product.

Antimicrobial constituents
Some antimicrobial constituents found naturally in food include:
1. Allicin in garlic and onions
2. Lysozyme in eggs and milk
3. Lactoperoxidase system in cows milk
4. Natural acids in fruits and some vegetables such as malic and
citric acids
5. Eugenol in cloves (clavos) and cinnamon(canela)
6. Hydroxycinnamic acid derivatives in tea, fruits and vegetables.
Some forms of food processing will also result in the formation
of antimicrobial substances in food products including:
1. Smoking, e.g. fish and meat products
2. Fermentation, e.g. meat products
3. Condensation reactions between sugars and amino acids
(i.e. Maillard reaction) during heating of certain foods
4. Natural production of antimicrobial substances such
as Bacteriocins, e.g. nisin by microorganisms.

Biological structures
Some food products will have natural barriers or coverings
that protect the food within from external contamination
by microorganisms
Presence of other microorganisms in the food product
The presence of non-pathogenic microorganisms in food may influence
the growth of pathogens. Non-pathogenic microorganisms may outgrow
pathogens, consume available nutrients and predominate in the food

el producto?
Dependiendo del nivel de recursos y conocimientos disponibles, un FBO
debe seguir uno o ms de las siguientes opciones:
1. Revisar los registros de datos/investigacin de literatura
cientfica/productos alimenticios similares y determinar qu patgenos
pueden sobrevivir y crecer en el producto alimenticio.
2. Consulte con un organismo competente.
3. Realizar anlisis microbiolgico de las muestras para establecer la
seguridad de los productos.

4. Determinacin de VU basada en
recoleccin de datos
Datos recopilados
en las propiedades intrnsecas y extrnsecas deberan establecer si un
producto alimenticio requiere una
declaracin de fecha 'de caducidad'. Si un producto alimenticio requiere
una fecha ' uso ',
un punto de referencia se requiere para permitir al FBO decidir cuando se
ha alcanzado el final de vida til.

5. Aplicacin de un Margen de seguridad
Aplicar un margen de seguridad reducir la vida til de un producto alimenticioa un intervalo ms corto que la vida til determinada.
Esto permite el FBO tener en cuenta las condiciones razonablemente
previsibles de uso que pueda afectar la seguridad del producto y vida til por
ejemplo, el abuso de temperatura durante el almacenamiento.
En la aplicacin de un margen de seguridad, el FBO debe tener en cuenta las
variaciones esperadas en la produccin, almacenamiento, distribucin y uso.

8. Predictive Mathematical
Modelling
Data to build predictive mathematical models are normally derived
from experiments carried out under laboratory conditions. In most
cases, these experiments are performed using laboratory media
rather than actual food products. Before use, the models must be
validated against data on the survival and growth of microorganisms
in actual food products. Cumulative databases are built up ofmicrobial responses, and procedures to interpret and interact with
the database in a mathematical model are then developed (i.e.
predictive food microbiology).
