What you’ll need:
200g unsalted butter 1 large egg
200g caster sugar 300g plain flour
1tsp baking powder Pinch of salt
Your choice of filling:
100g of raisins, milk, white or darkchocolate chips, jelly beans, etc.
Instructions:
1. Pre-heat oven to 170° / gas mark 3.
2. Add the butter and sugar into a bowland mix together using a woodenspoon until pale and creamy. Add
the egg and mix well. Sift in the flourand fold it into the mixture, adding inthe salt at the end.
3. Add your choice of filling and mix wellso it spreads through mixture evenly.
4. Using the Kleeneze silicone cookiesheets, roll a bit of the mixture into aball, place on one of the circles andgently flatten down. Do this with theremaining mixture until all spaces arefilled. There is no need to grease thetray beforehand as it is non-stick.
5. Place in oven for 10-15 mins or untillightly golden. Let them cool and enjoy!
VICTORIA SPONGE
What you’ll need:
200g caster sugar 4 eggs, beaten
200g self-raising flour 200g butter
1tsp baking powder 2 tbsp milk
For the filling:
170g strawberry jam 100g butter
140g icing sugar and a little extra to decorate
1. Pre-heat your oven to 190 degrees /gas mark 5. While that is warming up,lightly grease two 20cm tins and linewith non-stick baking paper. Beat thesugar, eggs, butter, flour, bakingpowder and milk in a bowl until you areleft with a smooth batter and divide themixture between the two tins.
2. Smooth the surface with the back ofa spoon and bake for around 20
minutes until golden. Remove fromthe oven and leave to stand on acooling rack.
3. Make the filling by beating the butter until smooth, then slowly beatin the icing sugar. Spread over thebottom of one of the sponges, topwith jam and sandwich the secondsponge on top, dusting icing sugarbefore serving. ■

John HawkesI have been self-employed since 1971. I'retired' in 1988 and sold my business tofund my pension. In the event I was£1,000 per month short of the incomeneeded to maintain my lifestyle.
