SWEET ENDINGA Spiced Spirit

STEP ONE: In a saucepan bring 2 cups peeled and chopped pears, 1¼ cups water, ¼ cup sugar, and ¼ cup orange juice to boil. Reduce heat; simmer, covered, for 20 minutes. Cool slightly. Transfer to a blender; puree until smooth. Strain mixture through a fine-mesh sieve; discard solids. Makes 21/3 cups pear puree.

STEP TWO: In a cocktail shaker combine ¼ cup pear puree, 3 Tbsp. vodka, and 1 Tbsp. Cointreau. Add ice cubes; cover and shake for 10 to 15 seconds. Strain liquid into a martini glass. Add 3 Tbsp. club soda. If desired, serve with a cinnamon stick and orange peel twist.
