FISH SOUP

ingredients 2kg fish

240 ml olive oil2 potatoes

1 onion 2 carrots

celeryjuice of three lemons

Method First we clean the fish from the scales., intestines and gills and we wash very well. We put water in a pot to

boil and we add the vegetables cut in small pieces, the onion whole and some salt. When the vegetables are half done we take the pot from the hob and add the fish placing it nicely among the vegetables. There should be enough water to cover the fish. Too much water may make the fish fall apart.

We put the pot back on the hob and add the olive oil, some salt pepper and we boil until the vegetables are soft (about 20 mins). Finally we add the lemon juice and boil for a few more minutes so that the lemon dissolves in the pot.

We remove the fish from the pot and serve with the vegetables.

OCTOPUS WITH VINEGAR

Materials

• 1 medium octopus• Vinegar• 2 bay leaves• Oil• Oregano

Method1st We clean the octopus(remove the tooth and eyes)2nd We wash it well and we put it in the pot without water3rd We add lot of vinegar and bay leaves4th We boil it over medium heat until it will soft5th We serve it after sliced into small pieces and add some oil and oregano.

PLAKI FISH (Baked fish)

Materials1 kilo of cod rolls1 kilo of potatos150gr of tomato paste150gr of olive oil2 onions80gr of parsleyA whole garlic3 grated tomatos2 bay leavesSalt and pepperOne tomato

How to do itClean the fish and sprinkle some salt on it.Cut the onions in big pieces and we sauté them in hot olive oil.Snuff out the heat with the 3 grated tomatoes and add salt, pepper, some water, the tomato paste, the bay leaves and 3 garlic cloves and let it boil for

10 minutes. A few minutes after it boils add the chopped parsley.We clean and remove the skin from the potatoes.We cut the cleaned potatoes in rolls.Lay the rolls on a baking pan and then lay the cleaned fish.Dress the fish and potatoes with the tomato sauce.On each fish roll lay a slice of tomato.Bake in a pre-heated oven on 180oC (356oF)• Enjoy!

FRIED CHEESE WITH QUINCEIngredients:2 pounds of fresh shellfish2 green peppers cut in grommets2 red peppers cut in grommets350grams of mushrooms Portobello cut in julienne400grams of frames tomatoes250grams of bunch of onions choppedOne bunch of parsley250grams of a bunch of dill chopped1gram of fennel chopped10grams of melted garlic300ml olive oil150ml ouzoThymeAnd last but not least salt and pepper

Performance:#STEP 1.In a deep frying pan, poor the olive oil and add your

vegetables except of parsley and sauté for eight minutes in medium temperature.

#STEP 2.Add the shellfish and sauté this along with the vegetables.

Wait for two or three minutes till the shellfish open and switch of with ouzo.

#STEP 3.Add the tomatoes, the garlic, the salt and the pepper.

Leave the food to boil itself until the sauce will be thicked.

#STEP 4.Serve and sprinkle the parsley. Enjoy the meal.

SHRIMPS WITH GREEN PEPPER & FETA CHEESECooking time: 20 minutesIngredients :500 gr small shrimps without shell400gr sliced tomato in small pieces150 gr water2 spoonfuls chopped chilly pepper1 tea spoonful chopped garlic100 gr of olive oil1 gr medium green pepper in round pieces 1 tea spoonful salt50 gr chopped green onion2 spoonfuls chopped parsley100 gr cheese feta100 gr water1 condensed vegetable cube2 spoonfuls of parmezan cheese

ExecutionIn a blender we mix the sliced tomato with 150 gr of

water and we pour it in a deep frying pan. As soon as it starts boiling we add the chilly pepper , the garlic , the olive oil, the green pepper, the salt and the fresh green onion .

We go on boiling for about another 5 minutes and then we add the parsley and the vegetable cube and the rest 100 gr of water and the shrimps.

We rub the feta cheese with our hands and we add it in the frying pan .We simmer for 2 more minutes.

In the end we add some parmesan cheese we stir softly and we take it away from the fire.

SQUID AND RICE RECIPE• Ingredients:• Squids of 1kg• 120 ml olive oil• 1big onion, grated• 2 cloves garlic, minced• 110ml dry white wine • 250ml tomato juice• Salt & pepper• 225gr cooked rice• A pinch of sugar• 2 teaspoons

Instructions:

Peel the squids and slice them. Put the squids in a pot and smoke them until they are soft and dry. Add olive oil, garlic and onion and fry them over medium heat. Add dry white wine to the pot and a cup of hot water and let them boil. Cover the pot for 10 minutes. Add tomato and sugar, season with salt and pepper. Add 2 cups of hot water. When it boils add the rice and the dill and stir constantly. Uncover the pot and well cooked. Serve hot with grated pepper!

• The seafood is great with Ouzo and White Wine!
