Dates loaf

1cup chopped date1cup boiling water1teaspoon baking soda1tablespoon butter1cup brown sugar1egg, beaten1cup chopped walnuts (optional)1⁄4teaspoon vanilla essence2cups plain baking flour1teaspoon baking powder

Ingredients

Put dates, boiling water, butter and baking soda into a bowl and stir until butter is melted.

Set aside for one hour.Beat sugar, egg, vanilla essence and

walnuts (if using) into date mixture.Sift in flour and baking powder and

stir until just combined.Pour mixture into a greased 22cm

loaf tin and bake in a 180C oven for 45 minutes or until inserted skewer comes out clean.

Leave in tin for about 10 minutes before turning out onto cooling rack.
