Peaches a - p l e n t y for good eat-ing. but w h a t should I do about freezing p e a c h e s fo r use l a t e r in t h e season?

Should I b u y peaches to f reeze? Do I have f r e e z e r space? W h a t will they c o s t ? And do I have the t ime to p r e p a r e peaches for freez-ing?

These a r e s o m e of the questions you need to a n s w e r for yourself as you shop fo r [teaches in m a r k e t s this m o n t h a n d next .

F o r freezing, one good guide is "a peach t h a t ' s good to ea t today is good to f reeze ." Varieties on the m a r k e t now a n d through Septem-ber 1st and t h a t resist b rowning include Redhaven . Fa i rhaven . Hale haven, a n d Kalhaven. Af te r Sep tember 1st. exj>ect Red Skins and Elber tas .

Follow these direct ions for freez-ing peaches a s given in the Michi-gan S ta te Univers i ty Circular. No. 216 <revised)—"Freezing Foods for Michigan H o m e s "

Choose p l u m p , f i rm to full ripe peaches w i thou t blemishes or bruises. S m a l l e r sizes freeze just as well if they a r e ma tu re and ripe.

Make 40 o r 50 percent s i rup by adding 4 cups ho t wa t e r to 3 to 4 cups of sugar . S t i r over low heat until sugar dissolves then boil fur five minutes . Cool the s i rup be-fore using.

To prevent b rowning of peaches, add ascorbic acid to sirup just be-fore fiouring over the sliced (>each-es. Use t h r e e - f o u r t h s teaspoon of ascorbic acid c rys t a l s to each quar t of cooled s irup. Or if you get the ascorbic acid in tablet form. 100(1 mil l igrams should be used for each qua r t of s i rup. Ascorbic acid can u: ually be bough t in a d rug store.

Peel peaches, remove the pits. Cut each half Into i-fi pieces. It 's usually convenient to slice the peaches r ight i n to the freezer con-tainers. cover ing with cool s i rup as you work. Leave about one inch of hendspacc. add a crumpled piece Of waxed p a p e r or a luminum foil to hold the peaches undct the sir-up.

Seal the ca r tons , label and freeze at once.

A bushel of peaches will give f rom 32 to 4H p in t s of peaches for freezing. W h e n p-aches cost $3.00 to (4.00 a bushel , this means a cost of 15 to 17 c e n t s per pint, includ-ing sugar , c o n t a i n e r s nnd ascorbic acid.

More than 50 a r ea g r o w e r s sup-ply apples and p lums to Oerber . according to Will iam E. Hays, produce m a n a g e r of the baby foods plant a t F r e m o n t . "Las t year , our company paid over $75,000 f o r fresh f ru i t grown in the Peach Kidge a r ea . " he said. T h e com-pany also uses considerable s to rage space for locally g rown produce. Apples and p lums a r e the m a j o r f ru i t s purchased by the c o m p a n y in th is a rea .

-available to America 's m o t h e r s th rough her neighborhood g roce r . Al though some commercia l ly pre-pared foods fo r babies were avail-able a t tha t time, these were , fo r t h e most par t , qui te expensive, a n d were sold only th rough drugs tores .

Rep. Gerald R. Ford . J r , t oday announced the schedule fo r his 4 th annua l Mobile Office t ou r of Ken t and O t t a w a counties.

Ford will open his "of f ice on Main S t r e e t " at Marne on Wednes -day. Sep tember 10 and will con-clude the 24-stop tou r a t Comstock Pa rk on October 29.
