What will they cost? And do I have the time to prepare peaches for freez- ing? These are some of the questions you need to answer for yourself as you shop for [teaches in markets this month and next. For freezing, one good guide is "a peach that's good to eat today is good to freeze." Varieties on the market now and through Septem- ber 1st and that resist browning include Redhaven. Fairhaven. Hale haven, and Kalhaven. After September 1st. exj>ect Red Skins and Elbertas. Follow these directions for freez- ing peaches as given in the Michi- gan State University Circular. No. 216 <revised)—"Freezing Foods for Michigan Homes " Choose plump, firm to full ripe peaches without blemishes or bruises. Smaller sizes freeze just as well if they are mature and ripe. Make 40 or 50 percent sirup by adding 4 cups hot water to 3 to 4 cups of sugar. Stir over low heat until sugar dissolves then boil fur five minutes. Cool the sirup be- fore using. To prevent browning of peaches, add ascorbic acid to sirup just be- fore fiouring over the sliced (>each- es. Use three-fourths teaspoon of ascorbic acid crystals to each quart of cooled sirup. Or if you get the ascorbic acid in tablet form. 100(1 milligrams should be used for each quart of sirup. Ascorbic acid can u: ually be bought in a drug store. Peel peaches, remove the pits. Cut each half Into i-fi pieces. It's usually convenient to slice the peaches right into the freezer con- tainers. covering with cool sirup as you work. Leave about one inch of hendspacc. add a crumpled piece Of waxed paper or aluminum foil to hold the peaches undct the sir- up. Seal the cartons, label and freeze at once. A bushel of peaches will give from 32 to 4H pints of peaches for freezing. When p-aches cost $3.00 to (4.00 a bushel, this means a cost of 15 to 17 cents per pint, includ- ing sugar, containers nnd ascorbic acid. "Las t year , our company paid over $75,000 f o r fresh f ru i t grown in the Peach Kidge a r ea . " he said. T h e com-pany also uses considerable s to rage space for locally g rown produce. Apples and p lums a r e the m a j o r f ru i t s purchased by the c o m p a n y in th is a rea .
