Nestled in the heart ofdowntown Weaverville,Glass Onion, brings a taste

Pairing locally grownfoods with an Italian flare,renowned chefs, husband/wife team Natalie Byrnesand Eddie Hannibal arecreating quite the buzz

of Italy to town with theirunique cuisine coined“Global Italian.”

“What we are doing is amenu that is very simplydone, but it draws off theingredients,” said Byrnes,who opened the restaurantwith her husband in April.“Our main drive is to servelocal food—everythingfrom the produce to theeggs, to the chicken andbeef.”

Hailing from New York,the husband/ wife teambring with them over 50years combined experi-ence in the restaurant in-dustry as chef operators inhighly regarded restau-rants in the famed Hamp-tons.

But the quest to open arestaurant of their own,coupled with a love for theoutdoors, bought them toWeaverville where Byrnessaid everything quicklyfell into place.

“We knew we wanted tomove and we came to Wea-verville just to see what itwas all about, it really justclicked,” said Byrnes.

And after tossingaround a few good names,the entrepreneurs tookfrom one of their favoritesong titles by the Beatlesand Glass Onion began totake shape.

Pulling from local farm-ers, the seasonal menu fea-tures an array of tradition-al Italian entrees from VealSaltimbocca to TuscanChicken.

But while the menuitems come highly recom-

mended, Byrnes said itsseasonal daily specials thathave been causing quitethe buzz around town.

And with crowd favor-ites like Wild Boar Bolo-gnese, there is little doubtthey are not catching a lotof attention.

“I think people are real-ly excited about what’scoming in for the week,”Byrnes said. “People havebeen really enjoying thespecials. We are seeing a lotof repeat clientele.”

Last week a salt-crustedPompano took center stageon the special’s board.

“The whole fish is reallygoing over well,” saidByrnes. “People arethrilled with it.”

But in working with 12local farmers, Byrnes saidthe restaurant and menu istruly dependent on what

comes through their back-door.

To check out what is inthis week, visit Glass On-ion, located at 18 N. MainSt., Weaverville. The res-taurant is open for lunchWednesday-Monday 11:30a.m. to 3 p.m. and DinnerWednesday-Sunday 5 p.m.to 9 p.m. Brunch is servedevery Sunday from 11:30a.m. to 3 p.m.
