Nestled in the heart of downtown Weaverville, Glass Onion, brings a taste Pairing locally grown foods with an Italian flare, renowned chefs, husband/ wife team Natalie Byrnes and Eddie Hannibal are creating quite the buzz of Italy to town with their unique cuisine coined “Global Italian.” “What we are doing is a menu that is very simply done, but it draws off the ingredients,” said Byrnes, who opened the restaurant with her husband in April. “Our main drive is to serve local food—everything from the produce to the eggs, to the chicken and beef.” Hailing from New York, the husband/ wife team bring with them over 50 years combined experi- ence in the restaurant in- dustry as chef operators in highly regarded restau- rants in the famed Hamp- tons. But the quest to open a restaurant of their own, coupled with a love for the outdoors, bought them to Weaverville where Byrnes said everything quickly fell into place. “We knew we wanted to move and we came to Wea- verville just to see what it was all about, it really just clicked,” said Byrnes. And after tossing around a few good names, the entrepreneurs took from one of their favorite song titles by the Beatles and Glass Onion began to take shape. Pulling from local farm- ers, the seasonal menu fea- tures an array of tradition- al Italian entrees from Veal Saltimbocca to Tuscan Chicken. But while the menu items come highly recom- mended, Byrnes said its seasonal daily specials that have been causing quite the buzz around town. And with crowd favor- ites like Wild Boar Bolo- gnese, there is little doubt they are not catching a lot of attention. “I think people are real- ly excited about what’s coming in for the week,” Byrnes said. “People have been really enjoying the specials. We are seeing a lot of repeat clientele.” Last week a salt-crusted Pompano took center stage on the special’s board. “The whole fish is really going over well,” said Byrnes. “People are thrilled with it.” But in working with 12 local farmers, Byrnes said the restaurant and menu is truly dependent on what comes through their back- door.
