Avocado Fruit Pizza
Avocado Fruit Pizza Make the dough from the recipe below and bake it
without toppings in a 400 degree oven for about 20 minutes. Spread 1 ripe
avocado over the cooked dough, and then add a variety of colorful fresh fruit
such as: kiwi, strawberries, raspberries, grapes, oranges, blueberries,
blackberries or pineapple
Optional: add unsweetened coconut, cinnamon or fresh squeezed lemon juice
over the fruit.
Note: You can purchase pizza dough from many supermarkets, bakeries or
pizza restaurants if you don’t want to make the homemade dough.
Bruschetta Pizza: Let the dough reach room temperature. Stretch out the
dough onto a greased pizza pan. Bake the dough in a 400 degree oven for
about 20 minutes or until browned.
Chop 3 vine ripened or garden tomatoes and place in a bowl. Stack about 20
fresh basil leaves on top of each other and roll into a log. Thinly slice the basil
and add to the tomatoes. Add a drizzle (1Tbsp.) of olive oil and a pinch of Coral
Sea salt. Add 2 to 3 crushed garlic cloves. Gently toss the mixture together
and spread over the top of the baked dough. Cut and serve. Optional you can
put this wonderful mixture over the raw dough and bake for about 20 minutes.

Pizza Dough
Ingredients for the pizza dough:
• 2 cup warm water
• 2 ½ tsp. active dry yeast or 1 packet
• ½ tsp. Coral Sea salt or less
• 2 Tbsp. grape seed or Avocado oil
• 4 cups flour (give or take 1/2 cup...depending on the heat & humidity)
• Optional 1 Tbsp. Herbs de Provence or a combination of Parsley, Basil and
Oregano
• Optional 1 Tbsp. honey or Agave for the Fruit pizza dough
Directions For the pizza dough:
1. In a large mixing bowl, stir yeast or dissolve it with your fingers into
warm water. Let it sit for 5-10 minutes or until bubbles form and
mixture starts to foam. This tells you that the yeast is alive and working.
Pour in salt, oil and half the flour and mix. Once that flour is
incorporated, start adding flour in bit by bit until you get the pizza dough
to the consistency you want: slightly tacky, but when you touch it, it
doesn't stick to your hands. Once you reach this stage, knead for 6
minutes. Turn a timer on! Resist the temptation to stop earlier than 6
minutes! That seems to be the magical number. The dough should be
smooth and easy to work with. And the bowl should be clean!
2. Lightly grease the bowl and the dough so it doesn't dry out, cover with
plastic wrap or cover the bowl with a damp clean towel and let it rise 1-2
hours.
Directions for making pizza:
1. Preheat oven to 400 degrees. Add your desired toppings to the
stretched out dough leaving about a 1” area with no sauce or
toppings for the crust.
2. Bake for 15 to 20 minutes. Ovens vary so it may take longer or less
time to bake so make sure to check the oven and possibly reset
your timer.
