Equipment:
• Grater
• Bowl
• Chopping board
• Knives
• Fry pan
• Wooden spoon
• Whisk
• Lasagne dish
Ingredients:
• 375g Zucchini
• 1 large onion
• 1 (60g) cup grated cheddar
cheese
• 1 cup SR Flour
• ¼ cup Olive Oil
• 5 eggs
• Salt and Pepper
What to do:
Grate unpeeled zucchini coarsely and put into a bowl
Finely chop onion and sauté in a little oil til transparent
Combine zucchini, sautéed onion and cheese, sifted flour, oil and lightly beaten eggs
Pour into a well greased dish
Bake in a moderate oven for 30-40 minutes till lightly browned and firm on top
Cut into bite size squares and serve
