Sausage and PestoPineapple Pizza MAKES: ONE 12-INCH PIZZA

8 oz. Italian sausage, crumbled1 cup red onion sliced1 cup prepared pesto1 (12-inch) pizza crust1 cup DOLE Pineapple Tidbits, well drained1-1/2 cups mozzarella cheese, shreddedFresh basil leaves, garnish (optional)

1. Cook sausage and onion in large skillet until sausage is browned and onion is very tender. Drain off fat.

2. Spread pesto over crust. Top with sausage, onion and pineapple tidbits over crust. Sprinkle with cheese.

3. Bake at 450ºF., 12 to 15 minutes, or until crust is golden brown.

4. Garnish with fresh basil leaves, if desired.

Sweet Balsamic Fruit Salad MAKES: 12 SERVINGS

1/2 cup white balsamic or balsamic vinegar1/2 cup granulated sugar1/2 tsp. ground black pepper48 oz. DOLE Frozen Whole Strawberries, partially thawed, drained*24 oz. DOLE Tropical Gold® Pineapple Chunks, drained

1. Combine balsamic vinegar, sugar and pepper, stirring to dissolve sugar.

2. Combine strawberries and pineapple in large bowl. Stir in balsamic vinegar mixture or sprinkle mixture over individual portions of fruit.

* Note: If strawberries are large, cut in half.

Tropical Fruit Salad MAKES: 12 SERVINGS 6 Tbsp. olive oil1/4 cup champagne or

white vinegar2 Tbsp. honey2 Tbsp. orange marmalade2 tsp. ground nutmeg1-1/2 tsp. Dijon style mustard1/2 tsp. salt1/2 tsp. white pepper

7 cups DOLE Tropical Fruit Salad, drained

2 DOLE Bananas, peeled and sliced

7 cups DOLE Romaine Hearts3/4 cup chopped pecans,

toasted3/4 cup flake coconut,

lightly toasted

1. Whisk together oil, vinegar, honey, marmalade, nutmeg, mustard, salt and pepper for dressing; set aside.

2. Combine tropical fruit salad and bananas. Add 1/4 cup dressing and toss gently; set aside.

3. Toss romaine hearts and remaining dressing. Portion onto 12 plates.

4. Portion 3/4 cup of fruit onto each salad greens. Sprinkle with pecans and toasted coconut.
