There are plenty of deadlines in my business

– some are real, some are a ruse. However,

the column deadline is probably why I

never went into journalism! But I digress…

The end of the year allows us all to pause and

reflect, hopefully, with mostly positive reflections! With regards to the Sports Club,

2010 has been an extremely unique year, right on the heels of a dramatic recession in

the club and hotel industry. As most of you are aware, the Four Seasons Resort and

Club came out of this turmoil with a new owner, but because of the Four Seasons

management agreements in place, the Sports Club had the ability to run this club

with business as usual. Most clubs had a huge turnover of staff – our club did not,

which is particularly important in a 5-diamond resort, where the people truly make

the difference. Creative scheduling, among other management initiatives, kept our

world-class staff predominantly in place, and for that we are all the beneficiaries.

The Five Operating Committees of Golf Services, Green, Tennis, Fitness,

and Social, Food and Beverage have had wonderful leadership with Sandy Cureton,

Ron Howard, Jack Carroll, Rick Sack, Katy Cleary and Troy Perkins leading the

charge. The Board of Governors had Sub-Committee Chairs in Marsha Tokerud,

Rick Mills and Kate Shema. We are grateful to them for going above and beyond in

giving their valuable time, so that we can all enjoy such a wonderful club experience.

The 2010 Board of Governors has really been a fun group, with the

exception of an early mutiny rumor, somewhat understood given the person at the

top. In particular, I want to extend a special THANK YOU to Robin Sims and Rick

Mills, who’ve had extraordinary multiple tenures on the Board. Robin has been

instrumental in helping to update our Process Manual – there’s no doubt that she

is the “higher authority” on the issues regarding the by-laws of our club. Rick Mills

has dramatically improved our club’s multi-faceted communication efforts – always

a challenge in a diverse club such as ours. We will dearly miss their dedication and

experience.

Hotels. He is a familiar face

to many, as he most recently

held the position of Golf

Ryan assumed his new role of

Membership Sales Manager

in November of 2010.

Erica Phemister, Golf

Tournaments and

Membership Sales Manager,

comes to Four Seasons from

the private club sector, having

worked for seven years in

membership sales in the Fort

Worth area. Erica grew up

in Arlington and went on to

study Hotel & Restaurant Management at the

University of North Texas before beginning her

career. Erica loves to travel, and just this year has

been to Rome, Napa Valley and San Francisco.

Member Relations Manager

Laura DeLuca joined the

Club at the end of October,

fresh off of her honeymoon.

Prior to her position here,

Laura worked for a number

of years at the Dallas

Symphony Orchestra in

Public Relations, as well as

Neiman Marcus Online.

Laura is a Dallas native, having grown up in

Richardson, and graduated from the University

of Oklahoma.

T he past several months have been a whirlwind! We are coming off the

Club and Resort’s most active summer in memory. The pools and outdoor

activities were full throttle all season long with weekly Grill ‘n Chill and

Dive-In Movies, Couples Nine & Dine, record attendance at Summerfest camps and the

phenomenal energy of our traditional Independence Celebration weekend.

Summer also brought us blazing hot August temperatures that were

extraordinarily challenging to golf courses throughout the country and in North Texas.

While we did not come through unscathed, our golf operations managers and staff

worked tirelessly to combat the onslaught of 100+ degree days. If you have a chance to

speak with them, please give them a big THANK YOU for their efforts.

September and October were also action packed! Both the Club and Senior

Club Golf Championships were contested along with the prestigious Nelson Cup

Member/Guest tournament. Tennis also crowned its Mixed Doubles Champions (shout

out to Board Chairman Larry LeVan and his wife, Sherri!). Our TCD and USTA teams

are in full swing now with record participation as well for our tennis junkies. And to

top it off, our Cool October events received incredible support from our members. We

handily met our $150,000 fundraising goal. Thank you!

It is most gratifying that the Club is extremely well positioned as we move

into the winter months and beyond. The activity level and energy at the Club has been

fantastic; the golf courses are well prepared, as the greens have rebounded quickly and

the turf grass is extremely healthy. Along with this, there is stability of the Resort and

Club ownership as was portrayed in the feature business story in the Dallas Morning

News. And, we are seeing positive signs on many fronts of a strengthening economy:

strong business levels in recent months and solid sales production with strong advanced

bookings in most areas. At this moment, we are undergoing $2 million worth of capital

improvements to our conference center and lower floor guest rooms.

Your unwavering support is incredibly appreciated by our staff! Be assured that

we will continue to work diligently to make sure that our Club is a special place for all

of you through every season.

We had our 4th Annual Tailgate Party and Beer Pong Tour-

nament, with Rick Besse and Paul Earnest taking home the

medal! Good times were had by all, and we look forward to

the fun that winter has in store.

With cold temperatures comes dormant turf. When temperatures dip

below 55 degrees, Bermuda grass turn starts to go into dormancy.

Bermuda grass is a warm-season turf and starts to shut down to protect

itself from the cold temperatures.

As the turf begins to go dormant, its recuperative potential is also

compromised. Excessive cart and mower traffic can cause a thinning of the turf and

contribute to a weaker and slower green in the spring. We will be restricting cart traffic

once dormancy sets in to try and reduce the wear and tear on the Bermuda grass, and

ensure a good playing surface over the winter months.

Over the last few months, we have prepared the Bermuda grass for its

winter “hibernation.” Applications of granular calcium, nitrogen and potassium have

been made so that in the spring when the soil temperatures begin to rise, the proper

amounts of fertility will be available for the Bermuda grass. We will also spray liquid

fertilizer in the spring months to encourage the growth of the Bermuda grass.

A NEW RECORD

Greenside bunkers have caused a lot of anxiety for golfers over the years. A major reason for

the anxiety is that it’s the only shot in golf where you don’t make contact with the ball. So the

proper angle, loft and momentum are going to be important to hit a successful shot. For the

proper angle, the club must swing up, not around, in the backswing in order to have the correct descent into

the sand. Let the toe of the club open on the takeaway to help with the loft of the shot and make sure to swing

through to your finish with some speed to propel the ball out of the sand. These three keys will improve your

bunker play and in turn help to lower your scores.

The Sports Club’s very own Richard Lewis is in the

midst of a yearlong quest to break the Guinness

Book of World Records for the most rounds of

golf played in a single year. Richard just recently

hit an incredible milestone – a total of 500 rounds

of golf played. The record currently sits at 586,

and Richard is on schedule to not only beat it, but

also shatter it with a goal of 602. An even more

incredible feat is that Richard has walked and

carried his bag for every single round, all of which

have been played at either TPC or Cottonwood

Valley. Please join us in congratulating him on this

amazing accomplishment!

By now, both golf courses have had their greens aerated heavily as John Cunningham

and his team ‘put them to bed’ to give us the best opportunity for success, both short

term (throughout the spring without a major aeration) and through the summer by

removing enough organic material to keep them functioning at their optimum. This was accomplished

last year on Cottonwood Valley and was one of the principle reasons for our success throughout the year.

We appreciate the support shown by the membership in balancing this schedule.

We will also be adjusting the range closure schedule. In 2011, the range will be closed for

regular maintenance on Mondays rather than Tuesdays until 11:00 a.m. Any variance of this schedule

will be communicated through the Tee Times and other notifications.

This spring, we are excited to bring back the PGA TOUR in late May with the tournament

ending on the Sunday before Memorial Day for the HP Byron Nelson Championship. Jason Day proved

to be a worthy champion who went on to have a breakout year, and we look forward to seeing him defend

his title.

Our plans this summer will be to close one of the two courses on a more regular basis to further

protect them from the brutal bent grass conditions in July and August. Each course will be closed for

four days over a two-week period, beginning mid-July. This will leave one of the two courses open

Monday-Thursday while both will continue to be open on Friday and the weekend.

On the tournament schedule, we will reintroduce a Match Play tournament that will be

conducted throughout the golf season where individuals will be responsible for setting up their next

round matches. Look for a more detailed schedule on the website, Weekly Watch and the Tee Times.

On a personal note, I am committing to getting back to the basics, both playing and teaching, so I look

forward to seeing many more of you on the fairways.

Tis the holiday season and time to say thanks for making 2010 another great year at the Sports Club.

A big thank you goes to our members, who have supported our events, programs and activities throughout the year. As a result, we have enjoyed some of our best events and activities ever in Racquetball and Squash, Tennis, Kids For All Seasons and Fitness. Another huge thanks goes to our staff, who have worked tirelessly to provide the best sports experience for our members and guests. Whether it be Kids For All Seasons, Personal Training, Group Exercise, Racquetball and Squash or Tennis, I am surrounded by wonderful employees and am so thankful to work with such an amazing team! DDuring the holidays, there is one jolly fat person none of us wants

to see – our reflection in the mirror carrying all those extra pounds

we packed on between Thanksgiving and New Year’s. Though, on

average, we only gain about one to two pounds during the holiday season, it sure can

feel like a lot more. Eating yourself into a coma seems inevitable during the holidays,

with all the yummy delights available. Below are a few reminders for keeping the

calories in check:

Eat Before You Go. Rules to live by: Never go grocery shopping while hungry and,

similarly, never hit a holiday party on an empty stomach. You’ll be less tempted to

overindulge if your belly is full of something healthy.

Choose One Treat. Once at the party, choose one thing to indulge in and make it

good. No chips – you can have those any old time. Pick something you only get during

the holidays.

Control Your Drinking. Alcohol is an easy way to consume more calories than you

need, so avoid mixed or fruity drinks and have a glass of water for every drink you

consume. Also, definitely avoid the eggnog; it has up to 350 calories a cup.

Don’t Skip Meals. It’s tempting to skip meals to make up for whatever nightmare food

you’ll eat later, but just like the empty stomach rule, if you’re starving, your rational

mind will be unavailable for healthy food choices. Eat small meals all day to avoid

going nuts at the buffet table.

However you deal with the holidays, make this the year that you don’t gain extra weight.

Make a decision to do everything you can to stay active and eat healthy while not

depriving yourself of all the fun. Like everything else in life, it’s all about moderation.

frederic angevin is putting his mark on the sports club at four seasons

S ince his arrival, Chef Frederic

Angevin has made numerous

changes to place the Sports Club’s

food and beverage at the very top. Chef Frederic

and his dedicated team took on the tedious task of enhancing all Club restaurant

menus; which now include heart-healthy fare at Racquets as well as savory dishes,

seasonal desserts and menu favorites for breakfast, lunch and dinner at the Members

Lounge.

A native of France, Chef Frederic received his accredited culinary degree in

the region of Burgundy and has shown a deep love and respect for food ever since. He

decided to expand his knowledge of cooking at the age of 20, leaving his home country

to travel throughout the globe to work with some of the world’s most prestigious chefs.

It was during this time that he acquired unparalleled skills and confidence in his art,

which eventually led him to open and run a successful restaurant and catering enterprise

in Fort Worth for seven years. After receiving numerous rewards and accolades,

including Best Chef, Best French Restaurant and Best New Restaurant, among others,

Chef Frederic decided it was time once again for a challenge and joined the world-

renowned Four Seasons family in 2004.

Chef Frederic is passionate about culinary education and sharing his extensive

knowledge with all who cross his path. An enthusiastic culinarian, he enjoys leading

cooking classes and participating in the highly popular Iron Chef Competitions at the

Sports Club. Chef Frederic’s mantra is “it is all about love,” and his passion, creativity

and sophisticated taste sets him apart from his peers.

MasqueradeWhile conducting training for Café on the Green

servers, I told the story of how Châteauneuf-du-Pape

got its name. A few days later, one of the servers was

ecstatic to have sold a bottle of the wine by repeating this story. In

his words, “All of that information that you tell us is really useful!” This

made me consider how interesting some of the more mundane subjects can

be when related to the world of wine. The history, culture and science that

contribute to this remarkable beverage are as fascinating as the product in the

glass. If we look beyond the label, we can find a rich back story to some of

the world’s best beverages. Here is the one that captivated the servers in Café

on the Green:

Châteauneuf-du-Pape means “New House of the Pope.” In 1305,

Clement V, a Frenchman and former Archbishop of Bordeaux, was elected

Pope. He was fearful of moving to Rome for political reasons, and chose to

remain in France under the protection of the French crown. In 1309, he

moved his entire court to Avignon in the Southern Rhône Valley of France.

Seven Popes – all French – ruled from Avignon, until 1377 when Gregory

XI moved back to Rome. A castle was built to house these Popes, thus the

name. The papacy retained these lands until the French Revolution of 1791,

when they were confiscated and became part of France. The Avignon Popes

did much to promote viticulture in the area surrounding their enclave, and a

department representing one of the great wine regions of France is named in

their honor.

These wines are excellent cool-weather drinks, and work with a

variety of foods. While 13 grape varieties may be used in the wines, Grenache,

Syrah and Mourvedre are the predominant varieties. Grenache forms the base

of most blends. Two of the selections from Café on the Green are:

beautiful ceremony in the Las Colinas Ballroom at Four Seasons.

The guests then continued the celebration of the new couple and the

impending New Year in the Todd Events-decorated Pavillion.

The look of the reception was chic and sophisticated, with hundreds of crystal strands dripping from the architectural ceiling. The reception

buffet stations featured all of the bride and groom’s favorite foods – including short rib sliders, parmesan- and truffle oil-scented French fries,

miniature French bread pizzas and stuffed avocados.

The night finished with a bang, as guests danced under a snowfall of confetti just after midnight. Kendall and Will left in style with a “sparkler

salute” as they munched on another new favorite – bacon-crusted donuts!

Happy first anniversary to Mr. and Mrs. Coleman! Here’s to another fabulous New Year!
