California campus, the Napa Valley will inform and support

EDUCATIONTHE CIA? FOR WINE AND BEVERAGE EDUCATION?Yes, the “C” in our name stands for
“Culinary.” But the CIA has long been
home to the world’s premier wine and
beverage education for people who
are passionate about the other side of
foodservice and hospitality. And our
Napa Valley campus—whose historic
main building was constructed in
1889 as Greystone Cellars—has
offered in-depth wine education
since opening in 1995.
By studying at the CIA, you’ll benefit
from our expertise in food and its
interplay with wine. You’ll discover
how important beverages are to
business profitability. And you’ll
realize that you are exactly where
you need to be.
In this program, you’ll take 10 three-credit
courses over two 15-week semesters.
In your first semester, you will:
• Develop a historical and modern-day
perspective on wine and food.
• Taste and analyze Northern Hemisphere
New World wines as well as the classic
appellations of Europe.
• Focus on preparation, service, and trends
in fermented and non-alcoholic beverages,
from beer to coffee.
• Gain a hands-on, in-depth understanding
of viticulture and viniculture.
You’ll build on that foundation of knowledge
in the second semester, where you will:
• Delve deep into professional beverage
management, from operations and service to
advanced tasting and pairing.
• Explore the world of distilled spirits, including
ingredients, mixology, flavor dynamics, and
sensory analysis.
• Study New World wines from the Southern
Hemisphere as well as appellations from
emerging regions like Eastern Europe and the
Middle East.
• Learn the key elements of the wine business in
the global marketplace.

ELIGIBILITYTo be eligible for enrollment, you must meet the following requirements by the program start date:
• Be at least 21 years of age
• Have a bachelor’s degree, preferably in hospitality management or a related field. While students who have earned a bachelor’s degree in another discipline may enroll in this program, they are expected to enter the program with some knowledge of the industry.

Your application must include a 300- to 500-word Statement of Purpose that describes your purpose for undertaking or continuing graduate study in wines and beverages, your reasons for wanting to study at The Culinary Institute of America, and your professional plans and career goals. You may also explain any special circumstances applicable to your background and elaborate on relevant academic and/or professional achievements.

FINANCIAL AIDThe CIA provides financial assistance—consisting of grants, scholarships, work-study, and loans—to approximately 90% of our students. This aid comes from a variety of sources, including the federal and state governments, private funders, and the college.
The CIA offers a generous merit scholarship for the Wine and Beverage Graduate Certificate (WBGC) program in addition to participating in the Federal Graduate Direct Loan programs. Eligibility to borrow through the Federal Direct Unsubsidized Loan program will be determined once you have been accepted into the WBGC and have filed the Free Application for Federal Student Aid (FAFSA). You can also apply for the Federal Direct Graduate PLUS loan to help with any remaining expenses.
The college also accepts the Post-9/11 GI Bill and participates in the Yellow Ribbon program, making a CIA education very accessible to veterans who are eligible for these benefits.

NOTICE CONCERNING THE TRANSFERABILITY OF CREDITS EARNED AT THE CIAThe transferability of credits you earn at The Culinary Institute of America is at the complete discretion of an institution to which you may seek to transfer. Acceptance of the degree or certificate you earn from the CIA is also at the complete discretion of the institution to which you seek to transfer. If the degree or certificate you earn at the CIA is not accepted at the institution to which you seek to transfer, you may be required to repeat some or all of your coursework at that institution. For this reason, you should make certain that your attendance at the CIA will meet your educational goals. This may include contacting an institution to which you may seek to transfer after attending the CIA to determine if your credits, degree, or certificate will transfer.
GAINFUL EMPLOYMENTIn accordance with U.S. Department of Education reporting guidelines, important information about employment, completion rates, and the median educational debt of students who attended the WBGC program will be made available to prospective students. The first start date for this new program is August 2016. Data for award year 2016–2017 will be posted to the CIA website at www.ciachef.edu/gainful-employment-wbgc when it is available.
