What Makes a Meal
Meal Pattern Training
Training Goals O Understand the Lunch and Breakfast meal
pattern
O Learn the components (food groups) that make up the meal pattern
O Be able to recognize a reimbursable meal
Important DefinitionsO Menu Items- The actual food served (Chicken Nuggets, Green
Beans)
O Food Components- one of the five food groups—meat/meat alternates, fruit, vegetable, grains, and fluid milk—that make up a reimbursable meal.
O Reimbursable Meal- A meal that offers all of the required meal pattern food items in the required serving sizes for the student’s age/grade. We receive funding for this meal.
O Offer vs Serve - allows a student to decline up to 2 components.

Where can I find the components of a menu item?
Minimum Meal Requirements
for LUNCHO Student must take at
least 3 components.
O 1 of the 3 components must be at least ½ cup fruit or vegetable.
O 2 components have to be full components.
Look for the fruit or veggie on the tray.
Then look for 2 more full components.

Breakfast Meal Pattern
Similar to lunch pattern, but there are some major differences

O Still offer components.
O Must have 3 to make a reimbursable meal.
O Student must take a ½ cup fruit or juice.
O Only offer 3 components, not 5.
O Breakfast counts “credits,” not components.
O We don’t offer veggies at breakfast, so student has to take a fruit.

1. Grain (sometimes a Meat/Meat Alternate may be served in place of a grain.
2. Fruit
Students can take 1 or 2 Fruit or 1 fruit and 1 Juice
3. Milk

O 1 of the 3 credits must be fruit or juice

Where can I find the number of credits in a menu item?
Remember that ½ cup of fruit counts as 1 credit
