We Simply Adore Tea... ...and want to share everything we know about our tea family with you. Thus we created this user guide with all the info you need about each and every member of our tea collection to brew the perfect cup at home.

Summer is that perfect time of the year where enjoying the company of friends and family in the sunshine is completely possible! So this summer we
want to share with you a different way you can keep enjoying your favourite teas & infusions to
help keep you refreshed & smiling.
We make our iced tea different here at Empire Island and have completely fallen head over heels
in love with the Cold Brew method so over the summer we are going to be releasing our favourite
recipes from the tea collection so that you can make them at home. What is best of all is it is easy to make, delicious & a healthier alternative to soft
drinks that you can enjoy all summer long!
All you need to do is choose your recipe, pop some fresh summer fruits into your glass (and an
umbrella too if you fancy) then drinks away! And because Empire Island Teas can be found in more & more locations across Rotterdam, getting hold of
your favourite tea could never be easier. We hope you have a marvellous time & have lots
of fun making Cold Brew teas this summer.

We at Empire Island want you to get the fullest experience of our teas. Therefore we have added a thermometer in every Tea group where each kind’s water temperature is set out, along with its steeping time (duration
of the tea in hot water). In case you do not have a thermometer at hand, the different water characteristics are listed below. Each cup requires one Teaspoon of tea if not else
advised.
Certain teas evolve in character after more than one use, the number of tea leaves tell you exactly how many. (Example below 3-4 times)

oolong combines the fresh taste of green tea with the smooth, full flavour of black tea.
You can re-use a serving of oolong Tea several times, the tea will then present other tastes from
its character.

oriental Beauty carries a natural, delicate sweetness combined with a nutty
flavour. leaves are full and twisted.
Tung Ting, from the city Bao loc in the highlands of South Vietnam has a flowery,
sweet taste. The leaves are full, rolled in cylinder shaped bamboo baskets.

White tea is named after the fine silvery-white hairs on the unopened buds of the tea plant, which gives the plant a whitish appearance. The beverage itself is not white or colourless
but pale yellow. What makes white tea so very special is that the leaves and buds used are al-lowed to wither in natural sunlight. only after this they are lightly processed to prevent oxidation.

Pai Mu Tan is hand crafted using an ancient method where only the youngest
shoots with two downy leaves are harvested to create this valuable tea.
The taste is flagrant, flowery, fine & aromatic with a light golden-yellow cup color.
Elderberry & Cassis As white tea is naturally floral & delicate making it the perfect
base for adding elderberries, cassis & north american aronia berries to. Served hot or iced,
this premium blend will complete your home tea collection this summer.

Green tea is full in antioxidants that support your immune system and is believed
to slow down the ageing process. Green tea naturally contains caffeine but far less than
coffee does.

White Monkey could be mistaken for a white tea due to it’s name, the white fuzz on
many of the leaves and how it tastes but this is in fact a delicately sweet & beautiful green tea
that is a rare pleasure for green tea lovers.
our Green Tea Jasmine {oP} is an enchanting tea both by name & by nature. This half fermented green tea from Chung
Hao, China, has been rested with fresh jasmine flowers to absorb the beautiful scent which
creates a stunning tea combo.
{oP} = orange Pekoe refers to whole leaves, ideally uniform size and are rolled lengthwise

Every springtime in Japan the country becomes covered in beautiful scenes of blossoming trees.
The most celebrated is the Sakura (Cherry) tree & so of course, we had to bring this tea into our collection. The taste of green tea with cherry is quite simply
wonderful.

BlACKfully oxidized
In its actual eastern origins, black tea is known as “red tea” referring to the liquid’s color. The
term Black Tea was coined in the Western world , describing of the oxidized leaves. Adding milk to black tea in the west was with the original intention to prevent the hot, steaming water from breaking the fragile Chinese porcelain
cups. Traditionally cold milk was poured into the cup prior to the tea. These days porcelain cups no longer crack but the ritual of adding milk has
become a strong English tradition, before or after a probably being an unsolvable debate .

Malawi Dark Fired from the south east of Africa dried at extra high temperatures which has an intruiging effect on flavour.
Flowery with nuances of grapes & finishes with a spicy, nutmeg like heat that remains on the tongue. Visually it is just as stunning, remenis-cent of an oolong with its long, twisted dark
leaf.
