W. K. Lewis & Co. pickles William K. Lewis was born in Portland, Maine, Oct. 12, 1807. In 1827, he was apprenticed to William Underwood, of Boston, an Englishman, and the first manufacturer of pickles in the United States. After serving with Mr. Underwood nearly seven years, during which time he acquainted himself with the details of the manufacture, Mr. Lewis, in 1833, became a partner with his master. At the end of four years this partnership was dissolved. According to a report upon the Exhibition and Fair of the Massachusetts Charitable Mechanic Association dated 18 September 1837, William & William K Lewis (as the company was then known) was awarded a silver medal for his invoice of wares, “…put up in much superior style…”. Lewis took what he had learned from his time with the William Underwood Company and implemented the production of processed meats, preserves and sauces in a building on Broad St. in Boston – right next to his former employer. In 1841, he associated his father with him, under the firm-name of William and William K. Lewis; and, at a later period, brothers Charles P., George F. and Edwin J. Lewis, became partners in the concern. The father retired from business in 1854, and died in 1859, at the age of eighty-two. The firm then assumed the name of W. K. Lewis and Brothers. Thecompanyexpandedin1842,includingafacilityinPortland,Maine– Lewis’shometown– thatwasproducing“hermeticallysealed meats,soups,fish,vegetables,poultryandmilk.” Theseitemswereinanincreasingdemandaswest-wardexpansionflourished. Mostparticularly,themassmovementofpeopletoCaliforniain1849-1850aspartofthe goldrush broughtprosperitytocanningcompanieslikeW.K.Lewis. Betweentheyears1849and1854thecompanyretainedtheBroadStreetbuildingbutaddedtoitscapacityafactoryonPurchaseStreetaswellasthreeotherbuildingsneartheBroadStreetstorehouse&officesaspartoftheTildenBlock.

In1859,Lewispurchasedtheright,underthepatentof GailBorden,tomanufacturecondensedmilk;forwhichthecompanydevelopedafactoryat ShirleyVillage.

1865sawthebuildingofanothercondensedmilkfactoryat WestBrookfield. Thesefactoriesutilizedwhatwasatthetimethemoststateoftheartmachineryandtechnologytomanufactureandcansuchproducts. Bythelate1870’sthemonthlyproductionoftheWestBrookfieldfactorywasat36,000onepoundcansof condensedmilk,aswellas6,000quartsofwhatwasdubbedas“plaincondensedmilk.”

TheW.K.LewisCompanyaddedafactoryinMaineonthe IsleauHaut,specificallytocanlobsters,in1860. Thisoperationwasenlargedseveraltimesandmorefactorieswereaddedtotheever-growingcompanyholdingsoverthesuccessiveyearswithinNovaScotiaandHalifax– aswellasothertownsalongthe

Thepickleproductionofthecompanywasincreasedin1869whentheyestablishedanotherprocessingfactoryin Lincoln,Massachusetts – a“notedpickleproducingregion.” In1873theBroadStreetfacilitiesmovedtoSomerville(ahopacrosstheCharlesRiver)andemployednearlyonehundredmenwhomproducedovertenmillionpicklesayear.

Thereisaslightindicationthatbythelaterpartofthedecadethepickleenterprisehadn’tworkedoutthatentirelywell–

“Amongthecannedbakedbeans onthemarketwerethoseofW.K.Lewis&Brothers,ofBoston.Theproductspreadquicklytodistantpoints.AnadappearingintheGalveston(Texas)DailyNewsonFeb.23,1878announcedthatthree-poundcansofthebeanswerebeing“SoldbyAllFirst-ClassGrocersinGalveston.”

“HaditnotbeenforLewis,thebakedbean“freak”1 wouldnothaveoccurredinthelate1870s.AGettysburg,Pa.,newspaper,theStarandSentinel,notedonAug.21,1888that“W.K.LewisofBostonreceivedthefirstpatent2 forcanningbeans,in1877.”
