INGREDIENTS: 1 carrot, cut into strips 1 onion, sliced 1 piece red pepper/capsicum (chunks) 1 piece orange pepper/capsicum (chunks) 2 to 3 inch fresh ginger blended with splash water Tamari sauce (gluten free) Salt and pepper to taste Olive oil 2 large handfuls Kale 2 handfuls Gluten Free Pasta ½ Zucchini (strips) ¼ Turnip (small strips) Pinch Pumpkin Seeds NOTE: If you love the taste of ginger add a little more, but if like only a light taste of ginger, you can add less then. And if you don’t really like ginger you can totally omit it, the stir fry will still taste fabulously delicious. PROCEDURE: Heat a wok on a medium heat and stir fry your carrots, turnips and onion with olive oil for 8 to 10 minutes, do not brown them just soften them up (you cook these vegetables first as they are hard texture). Place your gluten free pasta in some lightly salted hot water and cook. Add your red and orange pepper/capsicum and zucchini. Keep stirring well. Rinse your kale in a strainer and add it to the wok. Continue stirring while you add the fresh ginger. Stir fry well for 5 minutes. Your gluten free pasta should be cooked then drain-off the water and then stir into your stir fry.
