Cut off any yucky bits. Put in saucepan with a little olive oil, a couple of cloves of garlic and finely chopped onion and a pinch of salt. Cook over a low-medium heat, stirring occasionally so it doesn’t stick to bottom of pan. Any seasonal herbs of preference can also be added Cook until very soft and still a bit chunky and liquid has evaporated. This could take half an hour or so. Freeze in suitable container for when you want to pull out for home made pizzas
