were common. The first models didn’t work efficiently because the designers failed to understand how ice cools. The ice, placed in an airtight container on top, took a long time to melt but failed to impart its coolness to the food kept in a storage box below. After studying the principles of ice, a new model was designed that contained the crucial element of air flow: Ice in the top part of the icebox absorbed the heat from the warm air rising from the food storage box below. The cool air, now denser and heavier than the warm air, sank to the bottom of the ice box, allowing the warmer air to flow upward in a never-ending cycle. 1/2 cup reduced-fat biscuit baking mixSugar substitute to equal 3/4 cup sugar, suitable for baking2 teaspoons pumpkin pie spice1 1/3 cups nonfat dry milk powder1 cup water1 tablespoon vanilla extract2 tablespoons no-fat sour cream2 eggs or equivalent in egg substitute1 (15-ounce) can solid-packed pumpkin1/4 cup chopped pecans1/2 cup reduced-calorie whipped topping

1. Preheat oven to 350 F. Spray a 9-inch deep-dish pie plate with butter-flavored cooking spray.2. In a small bowl, combine baking mix, sugar substitute and pumpkin pie spice. In a large bowl, combine dry milk powder and water. Stir in vanilla extract, sour cream, eggs and pumpkin. Add baking mix mixture. Mix well to combine. Fold in pecans. Spread mixture evenly into prepared pie plate. Bake for 50 to 55 minutes or until a knife inserted near center comes out clean.3. Place pie plate on a wire rack and let sit for 30 minutes. Refrigerate for at least 2 hours. When serving, top each piece with 1 tablespoon whipped topping. Makes 8 servings.

THE BIRTH OF THE FRIDGE• The death of the icebox began with the birth of

refrigeration, and that began with a scientific principle and a bunch of feverish patients.

• If you take a gas or liquid and compress it tightly and then allow it to expand, it absorbs heat from its surroundings as it is expanding. This is the basic principle behind refrigeration, air conditioning, and ice making. Various people experimented with the principle and managed to make small amounts of ice.

JOHN GORRIE• In 1833 Dr. John Gorrie moved to Apalachicola,

Florida. One of the main illnesses afflicting his patients was yellow fever. He noted that people who slept under mosquito netting tended to stay healthier than those who did not, but never realized that mosquito netting kept out the mosquitoes who carried the germs that caused yellow fever.

• Gorrie noted that feverish patients recovered faster if they were kept cool, which was not easy to achieve in Florida. He tried hanging buckets of ice from the ceiling with fans to circulate the cool air. This helped, but ice had to be shipped from Boston and cost a lot.

• Gorrie was familiar with the fact that compressed gasses absorb heat from their surroundings when they expand. He built a steam engine that drove a piston back and forth inside an airtight cylinder which was surrounded by water. First the piston would press down, compressing the air inside. Then it would pull back, and the compressed air expanded, pulling heat from the water. Then a valve would open at the end of the cylinder and the next time the piston pumped, it would push the cool air out and pull hot air in, to repeat the cycle over and over. The surrounding air became cool and the water became ice. Fever patients recovered. (cont’d)

Start the holiday season by making whimsical candles that look like cupcakes and mugs of hot chocolate. The “frosting” and “whipped cream” is actually paraffin wax your school-age kids and teens will have a great time whipping up!Let’s get started with the cupcakes:Set aluminum foil-style cupcake liners in a standard metal muffin pan. For each cupcake, cut a 5-inch length of candle wicking. Tie one end of the wick around a wooden skewer and set it over the cupcake liner so that the opposite end dangles down the middle and touches the bottom of the liner.Find an empty coffee can or other tin can. Bend one side of the rim to create a spout. Place chunks of paraffin wax (available in the canning section of most grocery stores) in the can. An adult should then set the can in 3 inches of water in a saucepan. Heat the water until the paraffin melts, keeping an eye on it at all times. Never place the can on the burner or over an open flame, because the wax is flammable. Pour the melted wax into cupcake liners, filling them three-quarters of the way full. Let harden.Whip the frosting:Melt additional paraffin and pour into a large bowl used for crafts. Cool for about 30 minutes. It will develop a firm crust, but it should not be hard. Now beat the wax with an old hand rotary beater or whisk used for crafts. School-age kids can take turns with the beating, until it becomes a fluffy white consistency. It’s amazing to watch the transformation!Untie the wicking from the skewers and hold it straight up as you spoon on wax “frosting” over each cupcake. Set a red bead on top to look like a cherry. (Before burning, set cupcake on a plate and remove bead.)To make a “mug of cocoa” candle, melt broken pieces of brown crayons with the paraffin to make a rich brown color. Tie a wick to a skewer and set over a heat-resistant clear glass mug. Wick should hang over the center and reach to the bottom of the mug. Pour brown wax into the mug, almost to the top. Let harden and add whipped paraffin as described above for whipped cream. DEAR PAW’S CORNER: My mixed-breed dog “Artie” recently was diagnosed with age-related arthritis. He has to take a pain pill every day, but he still walks stiffly. Is there any other way I can help him? -- Bill in Tulsa, Okla.

DEAR BILL: Talk to Artie’s vet to make sure the medication he’s been given is helping with his joint pain and stiffness. And yes, there are several things you can do at home to help make his life more comfortable. Get him a new, nicely padded doggie bed and place it away from cold drafts or air-conditioning vents. Consider taking him to a pet massage therapist -- and when you do, ask the therapist for massage techniques you can use on Artie at home, between sessions. Daily massage increases blood flow to the joints and can help relieve stiffness.Feed Artie a good diet. If he has a weight

problem, work with his veterinarian to put together a diet that will help slim him down without depriving him of important nutrients. Consider adding supplements to his diet such as glucosamine and chondroitin, which claim to help lubricate joints and ease arthritis stiffness. Again, the vet can recommend the best supplement and dose for your dog.Exercise is very important for dogs suffering from arthritis, but some movement can be difficult. If Artie has trouble getting down the steps outside, consider installing a ramp along the side of the stairs or in another spot so he can walk down more easily. The amount of exercise Artie should get depends on how advanced his condition is, his age and other health factors -- and of course, on how much exercise Artie WANTS to get.

JOHN GORRIE (cont’d)• Gorrie announced his new discovery on July

14, 1850. The New York Globe reported, “There is a Dr. Gorrie, a crank down in Apalachicola, Florida, that thinks he can make ice by his machine as good as God Almighty.”

• Gorrie quit the medical business, convinced that his fortune was made. However, he was never able to find financial backing, because investors were reluctant to back artificial ice when natural ice was delivered each year by ship. The natural ice business had a powerful lobby and discouraged potential investors. Gorrie died in 1853, broke and broken.

FERDINAND CARRE• Three years later, Ferdinand Carré introduced

his ice-making machine to widespread acclaim. Carré’s model used ammonia instead of air. Under pressure, the ammonia would be in liquid form, but when pressure was released, it would evaporate into gaseous form (thereby absorbing heat and cooling the surrounding area) and the gas would be collected and condensed into liquid once again. When the Civil War cut off the supply of ice to the southern states, Carré shipped several of his ice-making machines past the blockade and was in business. In 1877 he designed the first refrigerated ship. However, his refrigerators were bulky and heavy and tended to kill people when the ammonia leaked. Still, Carré’s design remains the fundamental system of modern refrigeration.

THE FRIDGE DEVELOPS• As electricity became common, electrical

refrigerators began to rise in popularity. By 1920, there were over 200 types for the American consumer to choose from. Across the U.S., thousands cancelled their contracts with the Ice Man.

Danger: Kids, Dogs Coming to Visit

Q. I’m hosting the family over the holi-days for the first time in my new home. But I’m a bit stressed as my siblings have kids and there will be a dog visiting. How can I make sure the kids don’t get into my workshop or other danger areas? -- Bill in Utica, N.Y.

A: The best way to keep them out of the workshop is to lock it up. But if that’s not possible -- say, it’s in the garage or some-where everyone accesses -- then remove tools and small items and store them in a box they can’t see through, placed high on a shelf. Ditto with any blades or garden tools -- move them out of reach and out of sight.If you have a pool, make sure the winter cover is secure and lock any doors that ac-cess the pool. Again, if that’s not possible, make sure the family knows what areas are off limits, and ask parents to keep their kids in sight.There also are some danger areas inside the home, particularly for toddlers and pets. Move all chemicals and cleaning items out of common areas like the kitch-en and laundry room, and store them on high shelves out of sight. Definitely don’t store chemicals next to food or drinks.Make sure items like bread, chips or other foods are stored off the floor so that the dog can’t get into them (eating people food isn’t just unhealthy -- dogs pigging out on lots of these items at once can suf-fer serious complications such as bloat).Cover all heating registers with appropri-ate grates that little hands and paws can’t get through. If you’re remodeling or working on an area of the house, clean up construction debris and tools, or close off the area.This sounds like a lot of hustling around worrying about every possible thing that can go wrong, but it’s good to have your house organized safely at all times, any-way. Look at this as an opportunity to get those garden tools put away the way you always wanted, and to organize your home-improvement items. You won’t have to worry about it again until next year.

Fingertip Splitting Gets Worse in Winter

DEAR DR. ROACH: My friend, who is 79 years old, started having his fingertips split open at random several years ago. The splits resemble small knife slices, and are extremely painful to him, along with limiting his ability to pick up objects as his fingers become numb. Last year he went to a dermatologist, who diagnosed it as psoriasis and gave him strong steroid ointments.During the warm weather, his fingertips don’t seem to split, but when the weather starts turning colder, regardless of these ointments or even wearing gloves over the ointment at night, they get worse. We are concerned that the diagnosis of psoriasis may not be correct. -- S.G.

ANSWER: Cracking of the tips of the fingers has several possible causes, including psoriasis, but also a condition called dishydrotic eczema. Moisturizers and powerful steroid ointments are appropriate for both conditions. Many of my readers have reported good results from liquid bandages, some of which have antiseptic properties, and some are a medical form of super glue.There are other possible diagnoses, including progressive systemic sclerosis (scleroderma), so I think he should have another visit with the dermatologist.***DEAR DR. ROACH: You mentioned lupus in a recent column. Is there a connection between lupus and arthritis? -- D.J.T.

ANSWER: Systemic lupus erythematosis (SLE) is a disease that can affect virtually any organ in the body, and usually affects several -- often at the same time. The most common symptoms are fatigue, fever and weight loss. Skin signs can be very specific, such as the classic “butterfly rash,” a red, butterfly-shaped rash across the nose and cheeks. Arthritis (joint inflammation) or arthralgia (joint pain) is present in 90 percent of people with lupus at some point in the illness.The arthritis booklet discusses joint pain found

It seems as though there is a stigma associated with it when there isn’t a stigma associated with wearing glasses, and both are common as we age. -- M.A.

ANSWER: I also am concerned that many older people with hearing loss refuse a hearing aid (or even to be evaluated for one). This is an important issue, since a hearing aid can improve quality of life as well as safety, not to mention the hearing of those around a person who is hard of hearing if he or she listens to music or the television at loud volumes.I suspect that glasses, often worn by younger people, aren’t associated with aging as much as hearing loss is, which is far more common in the elderly. We seem to be afraid of aging, or at least of appearing to age. I regret this, since it focuses on what can be lost with aging, and not what is gained.

FRIGIDAIRE• In June of 1918, General Motors bought out a

small Detroit refrigerator company and renamed it Frigidaire. They set their engineers to work improving the fridge. One of the main problems was that the various coolants used – ammonia, methyl choloride, sulfur dioxide –killed people when the refrigerator leaked. They were also corrosive and explosive, killing people when the fridge blew up. What was needed was a coolant that was non-toxic, non-corrosive, non-explosive, and cheap.

FREON• Thomas Midgley was one of GM’s best

researchers and he went to work on the task working under the direction of Charles Kettering. It only took him three days of experimenting to solve the problem. As a result, on December 31, 1928, Frigidaire received the first patent for chlorofluorocarbons which they gave the trade name of Freon. To demonstrate Freon’s characteristics at the meeting of the American Chemical Society, Midgley inhaled a lung full of Freon gas, then exhaled over a lit candle. The candle was snuffed out by the gas, Midgley did not keel over, and the assembled chemists hailed Freon as the perfect non-toxic non-flammable coolant. Soon refrigerators containing Freon were standard issue. No one had even heard of the ozone layer.

MODERN FRIDGES• Today a chemical called tetrafluoroethane is

used in modern refrigerators. It turns into a liquid when it is cooled to -15.9f. (-26.6 C). A motor and compressor squeezes the chemical. When it is compressed, the gas heats up as it is pressurized. When the compressed gas passes through the coils on the back or bottom of the fridge, it expands and the heat goes into the room, leaving the interior of the fridge cool.

FROZEN FOODS: QUIZ• Clarence went on an Arctic expedition in the

1920s. One day he went ice fishing when it was -20f. (-28C) and the fish he caught froze instantly when he removed them from the water. Back at camp, he tossed a fish into a bucket of warm water and was amazed to see it come to life again. He concluded that it had survived because it had been frozen so quickly. This gave him an idea. He tried flash-freezing food. Freezing food quickly prevents large ice crystals from forming, preventing damage to the cells so that it tastes the same when thawed. In 1924 Clarence began marketing the first line of frozen food – fish. They didn’t sell well, because few people, including grocers, owned freezers. One day heiress Marjorie Post of Post cereals was on a yacht with her husband E. F. Hutton when their chef served a goose dinner, even though goose was out of season. She asked the chef where he’d gotten the goose and he introduced her to Clarence. She convinced her husband and the board of directors of Post to sign up Clarence and invest in this new technology. Martin Scorsese made his first film in 1963 while still a student at New York University’s film school, but it was “Mean Streets” a decade later that brought him international attention.

Scorsese’s 50-year career in filmmaking in-cludes such movies as “Raging Bull,” “The King of Comedy,” “The Color of Money” and, of course, the controversial 1976 classic “Taxi Driver.” Not only have his films established him as an important director, his work also created stars such as Robert De Niro.

Tom Shone, film critic of the Economist’s In-telligent Life magazine and a frequent contribu-tor to The New York Times and The New Yorker,

has compiled a remarkable book about Scorsese and his work. Featuring more than 250 images, including movie stills, archive publicity material and on-set photography, this stunning monograph is the next best thing to actually viewing a Scors-ese film.

Born in New York City in 1942, Scorsese spent much of his childhood absorbing the sights and sounds of Little Italy from the balcony of his fam-ily’s tenement apartment. This is, perhaps, why his films, especially those set in New York City, have such authenticity. Because of childhood asthma, Scorsese spent much of his early years watching movies. In fact, he became so caught up in mov-ies and movie making that he began constructing storyboards. When he was accepted at New York University’s film school, he learned his craft and became not just good, but great.

Tom Shone draws on his in-depth knowledge and unique viewpoint to present new takes on all 23 of Scorsese’s main features. As Scorsese once said, “My whole life has been movies and reli-gion. That’s it. Nothing else.”

Free pizza: Scammers have duplicated a major chain’s logo and want you to click a graphic to get a free pizza in cel-ebration of the company’s 55th anniversary. If you get this email, delete it. Clicking the coupon puts malware on your computer.

Newspaper renewal: Scammers send out emails saying your subscription is about to expire and that you can renew right online. It’s a rip-off. To be sure this doesn’t happen,

don’t give subscriptions your email address. You’ll au-tomatically know it’s a scam if you get mail from your newspaper or magazines. Call the magazine or newspa-per to verify.Ebola charities: Scammers are all over this one, looking for donations that are supposedly to help orphans or for medical supplies. If you want to donate, do your home-work to select a legitimate charity. Look online for Guid-eStar or Charity Navigator to investigate charities.Computers: If making online holiday purchases, be sure what site you’re on. Don’t follow links to get there; type it in yourself. Don’t open e-cards unless you’re sure who sent them; clicking can download malware to your com-puter. Beware free giveaways of flash drives, especially when sent to places of work as part of gift baskets; they also can download malware. Avoid holiday theme wall-paper for the computer or apps for the phone for the same reason: malware.
