1 The Prospector A note from the President: On behalf of the Board of Directors, I would like to welcome you to the 2019-2020 Colorado Academy of Nutrion and Dietecs year! Our board is looking strong this year and has plans to posively impact dietecs in Colorado through public policy, markeng, community engagement, and more. The CAND has been pushing to Build our Brandas Colorados nutrion experts over the past few years. What does this mean? As Registered Dieans and Dietec Technicians, Registered, we have been trained to effecvely bring accurate and up to date nutrion informaon to professional and public sengs. The CAND board is using its resources to strengthen your skills as nutrion professionals so we can beer market ourselves as nutrion experts and build credibility to the public we serve. The CAND will connue to Build our Brandmoving into the 2019- 2020 year. Keep an eye out for a survey from the CAND in August. We would like to have as many CAND members complete the survey as possible, as this survey is going to help guide our efforts for the 2019- 2020 year. There are over 1,200 CAND members and we want to ensure that the Board of Directors are best serving all of your needs. Are you interested in geng involved? We are always looking for support!     The Prospector

    A note from the President: On behalf of the Board of Directors, I would like to welcome you to the 2019-2020 Colorado Academy of Nutrition and Dietetics year! Our board is looking strong this year and has plans to positively impact dietetics in Colorado through public policy, marketing, community engagement, and more.

    On Tuesday May 7, 2019, from 6:00 -8:00 pm, members and guests of NCDA met at The Platte River Fort in Greeley, for a Wine, Beef & Cheese pairing that included an array of delicious appetizers. The rustic but comfortable and modern fort is modeled after Bent’s Fort, a famous trading post in southeast Colorado. The Platte River Fort is clearly an event center, with a variety of outdoor and indoor spaces for congregating & celebrating. (This venue is hosting a “Resort Reveal” on May 31, 2019 from 2-10 pm with food, cocktails and a hayride, among other activities- free to the public.) [email protected] Our event was NCDA’s final program of the year, and was

    generously hosted by DairyMAX and the Colorado Beef

    Council. Jenna Allen, MS, RDN of Dairy MAX welcomed us

    and introduced us to her Dairy MAX associate Danielle

    Butbul, MPH, RDN. A variety of evidence-based articles and

    hand-outs were available to support the benefits of dairy

    and beef products in promoting good health & preventing

    chronic disease. Kate Schulz, RDN, LD, LMNT, the Nutrition

    Consultant for the Colorado Beef Council, introduced Chef Barry Strand, from the National Cattlemen’s Beef Association (a

    contractor to the Beef Checkoff).

    We socialized while enjoying vegetables, fruits, antipasti & cheese & crackers before the Chef’s presentation. Chef Barry then

    walked us through the different pairings of wine, beef and cheese & how tastes compliment. We learned about terroir, and global

    wine growing regions. We tasted a spicy cheese roll, Mediterranean style beef creations, tomato infused meatballs, salad &

    cheeses, while choosing (carefully) among the impressive white, red and rose wines available. The dessert tasting featured a

    complex Peanut Butter, chocolate chip cookie which had embedded bits of beef jerky-- a chewy and pleasant umami surprise. We

    left with recipes & other beef and dairy nutrition resources.

    Chef Barry is active in social media and would enjoy getting photos and recipes of dishes that include beef and dairy. He is triple

    testing his recipes & he enjoys promoting nutritious beef to consumers. Utilizing low fat dairy products & lean beef in a

    Mediterranean style diet is satisfying and enjoyable and supports good health. The recipe for the awesome cookies is posted for

    your enjoyment (see next page).

    Northern Colorado Dietetic

    Association (continued) NCDA secretary, Dustin Lee, submitted a photo (seen below) to the Journal of Academy of Nutrition and Dietetics that was featured in the recent May 2019 publication at the end of the article by Zellner et al. The image titled “Food in the Raw” can be found on page 839 under "The Art of Dietetics”. Dustin submitted this particular photo with the thought of being different. Many of photos featured in nutrition and dietetics are centered around fruits and vegetables, which is not surprising given their incontestable health benefits and colorful appearance. This photo is simple yet attractive, featuring mostly neutral colors, the drop of lemon juice, and the color of the lemon peel adding subtle pop to the photo.

    Cooking Matters and CAND:

    Cooking Matters and CAND teamed up to help facilitate a Cooking matters at the Store Tour for Adams County Head Start! Volunteers provided tips and tricks on reading food labels, understanding different food groups and how to make healthy choic es at the grocery store. Stay tuned for future collaborations with Cooking Matters!

    CAND will be getting swag in the upcoming year! We will have super soft shirts available to members who participate at select CAND events and available for purchase. Stay tuned for more info!
