This ham recipe has been in the family for, at least, 50 to 60 years that I know of. It has a fl avor that you simply will not believe, and it is pretty easy to make!

7-10 bone in ham

(either a shank or a butt, NOT spiral cut)

8 oz bottle of Cider Vinegar

1/4 cup Dried Mustard

1 cup of Water

1Remove ham from packaging, with fat side up, cut (score) about 1/2”into the ham in 1

inch apart cuts, then do the same the opposite direction, creating a grid pattern on the top of the ham.

2Place scored ham into 9 x 13” baking dish.

3Mix ‘glaze’ of vinegar and dried mustard and water. Pour 1/2 of the ‘glaze’ over ham.

4Place prepared ham in dish in preheated oven, bake ham, uncovered, for 45 mins, baste ham

with 1/2 the left over glaze, then another 1/2 hour to 45 mins, baste with remaining glaze. Bake another hour using drippings as basting liquid 2 to 3 times.

5Test doneness of meat by inserting thin bladed sharp knife into thickest part of ham, leave

knife in ham for 30 to 40 seconds, pull out knife....knife blade should be very hot to the fi ngers. If knife is not hot, cook another 15 or 20 mins.

6I serve the meat drippings as an au jus for ad-ditional fl avor.

1Slice the green tomatoes about 1/4 to 1/2 “ thick, dredge the tomato slices in the

cornmeal, place on dry plate, let dry for about 15 minutes.

2Place prepared tomato slices into skillet with about 1/2 inch of medium hot oil. With burn-

er on medium high, brown tomato slices (should take about 2 to 3 minutes on fi rst side, 1 to 2 minutes for 2nd side. Drain browned tomato slices on paper towels, serve immediately.
