Yield: 9 servings
TOTAL TIME: Prep: 20 min. Bake: 25 min. MAKES: 9 servings Ingredients 1 pound ground beef 1/2 cup chopped green pepper 1/2 cup chopped onion 2/3 cup water 1 envelope taco seasoning 1 can (15 ounces) black beans, rinsed and drained 1 can (14-1/2 ounces) Mexican diced tomatoes, undrained 6 flour tortillas (8 inches) 1 can (16 ounces) refried beans 3 cups (12 ounces) shredded Mexican cheese blend Directions 1. In a large skillet, cook the beef, green pepper and
onion over medium heat until meat is no longer pink; drain. Add water and taco seasoning; bring to a boil. Reduce heat; simmer, uncovered, for 2 minutes. Stir in black beans and tomatoes. Simmer, uncovered, for 10 minutes.
2. Place two tortillas in a greased 13x9-in. baking dish. Spread with half of the refried beans and half of the beef mixture; sprinkle with 1 cup cheese. Repeat layers. Top with remaining tortillas and cheese.
3. Cover and bake at 350° for 25-30 minutes or until heated through and cheese is melted.
It’s where we are GOING… “That is why I am suffering as I am. Yet this is no cause for shame, because I know whom I have believed, and am convinced that he is able to guard what I have entrusted to him until that day.” 2 Timothy 1:12 (NIV 2011) Put yourself in the Paul’s place for just a moment. Don’t just say, “yeah, I know he was in prison” and move one. Stop and think about his situation and then attempt to grasp the words being entrusted to Timothy, and believers for centuries now. Paul was convinced that his suffering was nothing to be ashamed of, nor was it a bad place to be. He did not see it a major problem. Paul was explaining why he was suffering from the standpoint of where is was going, not from whose fault it was or how bad it was now that he was there. Why is this so important? Because Paul is teaching us that it is not what is going on around us or to us, but where we are going. Paul is “convinced” (persuaded), as in completed/done, that God has taken care of all these things going on around him. He is convinced that God can handle anything that comes up. He is convinced that it is God’s power, not his own, that will see him through those things that arise. Therefore, Paul knows that there is nothing to be ashamed of, nor is there really anything of which to be concerned. God has this! Because of this, Paul is totally committed to God. Again, think about where Paul is…prison. Yet, he is committed to God, not blaming God, not quitting on God. Having just looked at our commitment to God, the family, the church and the disciplines, I wonder if we are able to have Paul’s perspective. Can we avoid the pitfalls of looking at the past and blaming our history of failure, insecurities, or patterns of how we have always been? Can we avoid the excuses of fatigue, burnout, or lack of desire? Can we serve God and one another knowing that God is aware of these feelings, yet He has still called us to serve? I believe we can as long as we remain in God. In doing that, we remain focused on where we are GOING, not what has happened to us today or in the past. In His Service, Bro. Grant
