STERLING – The word revitalization is heard often in Sterling, usually in reference to the riv-erfront and downtown. It might be time to add Northland Mall to the conversation.

In the last year, the mall has brought in the Mid-west’s largest sporting goods chain, and nation-ally known fashion retail-er rue21. Several smaller businesses are now mov-ing in, hoping to cash in on the increased foot traffic that is anticipated.

Much of the buzz now surrounds Dunham’s Sports, as the Oct. 31 opening of its massive 50,000-square-foot store gets closer.

Dunham’s store manag-er John Watts, a Sterling native, said he senses the excitement among the mall employees and the customers.

“Dunham’s is very happy to be here in Sterling, and be part of the revitalization of the Northland Mall,” Watts said. “This is the greatest

number of stores I can remember being open here. “

“There’s the pet store and some storage space empty right now.”

The gates continually opened and closed as workers scurried in and out to put the finishing touches on the space.

“The people can’t wait to get in here,” Watts said. “If we don’t shut the gate, people just start walking in and trying to shop.”

Watts hopes the variety of inventory at Dunham’s will bring some new faces to the mall.

“Field and Stream shop-pers, for instance, bring a different demographic,” Watts said. “Hopefully, we see a lot of customers who are not used to com-ing to the mall.”

Nancy Carrell hopes that the same demo-graphic will also stop by her shop, Sports Zone, to pick up items to flaunt support of their favorite sports teams. Carrell and her husband, Ed Meyer, have run the store at the mall for a little more than 5 years. She said business is picking up already, and the timing couldn’t be better.

“This is as busy as I’ve seen it since I’ve been here,” Carrell said. “This

is the perfect time for new stores, because everybody depends so much on the holiday sea-son, and the foot traffic is bound to be better this year.”

For Accents owner Margaret Zumdahl, the changes at the mall make it even more difficult for her to carry out her plans to sell the store. She has built up a loyal follow-ing during her almost 11 years at the mall, but she and her husband are ready to retire.

“I’m extremely excited about the different offer-ings here now; I wish this would have happened 5 years ago,” Zumdahl said with a grin. “I love this store, but I’m still looking for a buyer.”

Zumdahl said the mall management has been great to work with, and she believes that all of the recent activity makes her space an even bet-ter opportunity for a new tenant.

“Someone could cer-tainly make it their own, but it could also be turn-key with the inventory and computers,” Zum-dahl said.

Another one of the new stores, Flash Happy Por-traits, is targeting Nov. 1 for its opening.

Owner and manager Heather Lanell said the store’s five employees will take some appoint-ments, but she wants to reserve most of their time for walk-in portraits. The studio will be open Fri-day, Saturday and Sun-day in November, and will add hours to meet demand later. She is also working with another new mall tenant, The Sticker Shoppe, to pro-duce novelty gift items.

“I’m hoping to have a 24- to 48-hour turn-around on all of the prod-ucts,” Lanell said.

Because her business situation is unique, she said the influx of big retailers wasn’t much of a factor in her decision.

“I’m not a retailer, so I can’t really say it affect-

ed my situation,” Lanell said. “The walk-in traffic should still be beneficial, but I would have gone to the mall location any-way.”

Owner Clay Begly said the big retailers did help seal the deal for Didoughs Twisted Pret-zel Co. Begly already had started stores in Peru, Peoria and Ottawa before being approached by mall management.

“I liked the area, but it made it even more appealing knowing that

rue21 and Dun-ham’s were coming in,” Begly said.

Kelli Rodriguez brings considerable perspective to the mall’s current sta-tus. She has been the Maurices store manager for 34 years.

“I’ve been here through all the ups

and downs, and that makes what is happen-ing now even more fun,” Rodriguez said. “This is the first time I’ve seen four stores open in such a short period of time.”

Rodriguez said she believes there is some-thing at the mall for just about everybody.

“For the people who haven’t been here in a while, it’s a great time to get reacquainted with the mall,” she said.

ROCK FALLS – Whi-teside County officials spent Wednesday morn-ing going over their plan of action, should anyone in the county become infected with Ebola.

Whiteside County Sher-iff Kelly Wilhelmi, speak-ing on behalf of the group seated in a circle at the Whiteside County Health Department, stressed that the chance that Ebola could even make it to the area is very, very slim.

That’s something that local and national health officials have been say-ing since the fear of infection gripped Amer-ica after a Liberian man, Thomas Eric Duncan, tested positive for the disease at a Dallas hos-pital Sept. 28. He died Oct. 8.

Beth Fiorini, Whiteside County public health administrator, organized the morning meeting, attended by officials from the Whiteside County Health Department, Whi-teside County Sheriff’s

Department, Rock Falls Police Department, Ster-ling Police Department, Twin City Joint Fire Com-mand, CGH Medical Cen-ter, and Morrison Com-munity Hospital.

Backing up Wilhelmi’s comments, Fiorini noted that only two of the nurs-es who cared for Duncan have tested positive so far, and that none of his family members have tested pos-itive, despite having been quarantined in the same apartment as his soiled sheets and clothing for days before being moved to a new location.

“When someone calls in to dispatch, to 9-1-1, there’s a set of questions that we’re going to ask,” Wilhelmi said. “I think a lot of people are confused, and might think they have Ebola when it’s really only the flu.”

If, after talking to the dis-patcher, it seems likely the person might be infected, an ambulance will be dis-patched, with police and fire for backup, but only a paramedic will enter the home, dressed in a protec-tive suit, Wilhelmi said.

The person will be taken to CGH Medical Center’s emergency department, but won’t be taken inside until doctors evaluate the patient and decide wheth-er he or she must be placed in isolation, which CGH is fully prepared to do.

The patient wouldn’t stay there for long, though; he or she would be taken to one of the five hospitals in the state that are going to be designated Ebola treatment centers. Which five are expected to be announced this week.

“The precautions that all of us are using are no dif-ferent than any other thing we’ve gone through,” Wil-helmi said. “We’ve done this with anthrax, West Nile, and HIV in the past, so it’s really nothing new.”

Lee County officials held a similar meeting earlier this month to talk about their protocols.

According to a KSB Hos-pital release, patients and callers will also be asked a series of Ebola-related questions before being admitted there.

They might not be households words yet, but grains

like freekeh, farro and quinoa, are becoming more popular, as health-conscious consumers rediscover these ancient foods.

Used for centuries by different cultures, many of these grains are find-ing a new place in the American diet, largely because they are loaded with vitamins, miner-als and other nutrients. Some of the grains are also gluten-free and can be ground into flour.

The grains blend easily into everyday meals, like salads, side dishes and baked goods.

At Sierra Nut House in north Fresno, Cali-fornia, owner JoAnn Sorrenti has long been a believer in the ancient grains. She stocks sev-eral types, including quinoa, freekeh and bulgur.

“I tried selling these 35 years ago, and nobody bought them,” Sorrenti says with a laugh. “Now, things have really turned around.”

The shop’s bistro regu-larly uses grains in its salads and recently, Chef Adrianna Oropeza pre-pared two grain salads: freekeh with orange and fennel; and quinoa and pumpkin.

“What I like about these grains is that not only are they healthy and good for you,” Oropeza says. “But you can also mix them in with seasonal fruits and vegetables.”

Oropeza says the grains vary in texture and are somewhat chewy and nutty in flavor. And cook-ing grains is not as diffi-cult as you may think.

“In a lot of ways, it is just like cooking rice,” she says. “You cook it until the water is absorbed.”

She likes to cook grains with chicken broth for added flavor. And at home, she adds quinoa in her salads and soups.

Nutritionists say the ancient grains have stood the test of time for a reason. Amaranth has long been used in Mexico and contains more than three times the average amount of calcium. It is also high in iron, magnesium and is gluten-free. Cooked ama-ranth has a slight crunch, but remains soft on the inside.

Barley and bulgur are

fiber rich at 17 percent and 20 percent. They are also easy to cook and are high in antioxidants, vitamins and minerals. Quinoa is a complete protein and is loaded with iron, vitamin B2 and manganese.

Freekeh is a wheat that has been harvested early and is roasted. It’s high in fiber and has a low glycemic index, making it attractive to diabetics. It has a similar flavor to bulgur with a firm, chewy texture.

Farro is prized for its nutty, cashew-like flavor, and is high in protein and calcium.

As chefs and home cooks are catching on to the grain craze, a few California farmers are also trying their hand at growing the crops.

Victoria Martinez of Ancient Grains Farm in Temecula, California, has planted amaranth, quinoa and chia. The family run farm was launched last year and is harvesting its first crop this fall.

“We see the demand and we understand the health benefits,” Marti-nez says. “And as more people learn how to use the ancient grains and seeds, we will see even more of a demand.”

Martinez cooks a large pot of quinoa at the beginning of the week and uses its in stir fry dishes, salads and mixed in with greens. She also eats warm quinoa for breakfast by adding coconut milk, agave syrup and a stick of cin-namon, nuts and fruit.

Freekeh, Orange and Fennel Salad

2 cups freekeh2 cups chicken broth1 fennel bulb sliced2 oranges peeled and

sliced1/2 cup dried cranber-

ries

1/2 medium red onion, thinly sliced

1/2 cup flat leaf parsley chopped

1/2 cup almonds, toast-ed and slivered (Garnish for the top)

Vinaigrette Dressing:1/2 cup olive oil1/4 cup champagne

vinegar1 tablespoon honeySalt and pepper to tasteBring chicken broth to

a boil, add freekeh and simmer until broth is absorbed. Put aside.

Heat olive oil in a medi-um skillet on medium heat. Saute the fennel for approximately 5-8 min-utes.

Combine all of the remaining ingredients.

In a medium bowl whisk the dressing and pour over the salad.

Garnish with the almonds.

2 cups quinoa3 cups chicken broth1/2 medium red onion,

thinly sliced3 cups pumpkin,

peeled, seeded and cut into 1 cubes

1/2 cup dried cranber-ries

1 cup chopped celery1 cup chopped red bell

pepper1/2 cup flat leaf parsley

chopped1/2 cup toasted pump-

kin seedsVinaigrette Dressing:1/2 cup extra virgin

olive oil1/4 cup red vinegar1 tablespoon mustard1/2 teaspoon pepper

flakesSalt and pepper to tasteBring chicken broth to

a boil, add quinoa and simmer until broth is absorbed. Put aside.

Heat olive oil in a medi-um skillet on medium heat. Saute the pumpkin

for approximately 10-15 minutes.

Combine all of the remaining ingredients.

In a medium bowl whisk the dressing and pour over the salad.

Banana Bread2 medium bananas,

mashed2 tablespoons coconut

oil, melted1/2 cup buttermilk1/2 cup agave syrup1 tablespoon vanilla

extract3 eggs1 cup quinoa flour1/4 cup almond flour1/4 cup amaranth flour2 teaspoons baking

soda1/2 teaspoon salt1 teaspoon cinnamon1/4 cup chopped

almondsPreheat oven to 350

degrees F. Grease a 5-by-7-inch loaf pan. Mix together the bananas, coconut oil, honey, vanilla and eggs until completely combined. Add in all the flours, bak-ing soda, salt and cin-namon and stir until all the ingredients are fully incorporated.

Pour the mixture, which should be pretty wet, into the prepared loaf pan. Sprinkle the chopped almonds evenly over the top. Bake for 35-45 min-utes or until the bread is golden brown and a knife comes out clean. Let cool for 10 minutes and then invert onto a wire rack to cool completely.

Keep tightly wrapped for up to 3 days.

soda1/2 teaspoon saltPreheat oven to 375

degrees. Melt butter in a medium size saucepan, then add water and bring

to a boil. Remove from heat and whisk in cocoa powder, coconut oil and agave until dissolved, set aside to cool.

Combine quinoa flour, baking soda, baking powder and salt in a large bowl and sift together. Separate egg whites into a medium size bowl and set aside. Add egg yolks, coconut yogurt and vanilla extract to the bowl with the flour, along with the cooled cocoa mixture and mix until well combined.

Beat egg whites until stiff, but not dry, then fold them into batter until well combined. Bake in the oven for 18-20 minutes.

S T E R L I N G – J u l i e Schroeder could not contain her excitement Thursday evening dur-ing the 46th annual Self Help Enterprises Awards Banquet.

When she was named the winner of the Frances Bragg Award for contin-ued perseverance, con-cern for others and love for her fellow workers, Schroeder jumped out of her seat and put her hands over her mouth as she burst into tears.

She then walked quick-ly to the stage, grabbed her award from Carla Haubrich, executive director of Self Help Enterprises, then took the microphone.

“I want to thank every-one for this award,” she said with excitement. Betty Terry also won a Frances Bragg Award, and was presented hers after Schroeder floated back to her seat.

The banquet, which recognizes its consumers and others affiliated with the agency, was chock full of love and excitement Thursday.

“Each one of you out there tonight deserves an award,” Haubrich said to the hundreds of people packed into the Latin American Social Club. “You give us your best

every day, and we are so appreciative of that, and we want to thank you.”

Self Help provides employment training and residential support for adults with disabilities.

Haubrich said the com-pany serves 300 people with disabilities such as alcoholism, bipolar dis-order, cerebral palsy, epilepsy and learning dis-abilities.

“The staff of Self Help selects the winners,” Haubrich said. “We also give members of the com-munity special awards that have been supportive of Self Help.”

After Schroeder won her award, she wiped tears from her eyes, posed for lots of pictures and she received plenty of hugs from her friends and fam-ily.

“I did not see this com-ing,” Schroeder said min-utes after winning, still visibly shaken. “I’m just so happy.”

Schroeder, who has been with Self Help for 23 years, also was excited to put her arms around her parents – her mother, Shirley, and her father, Arlyn.

“My parents always taught me to always do the best you can,” said Schroeder, 44. “They always told me my dreams will come true, and that happened for me tonight.”

Randy Planthaber, who received the John L. Stern Leadership award, was all smiles as he approached the stage to get his plaque.

Stern served as execu-tive director of Self Help for 35 years until his death in 2011.

“John Stern makes dreams like this come true,” Planthaber said.

In addition to that award, Planthaber, 51, also received a pin for 35 years of service to Self Help.

“This pin means a lot to me,” Planthaber said. “It means to keep work-ing, keep reaching for the stars and keep dreaming, because no one can steal your dreams.”

Planthaber said the awards banquet was ded-icated to Stern.

“He is the true star in our hearts everyday,” he said. “I love the guy.”

“I love him to death, too,” Schroeder added.
