Desert Cove Drive Suite 114 Scottsdale, AZ, 85260 Clinic: (480) 634-2985 [email protected] https://unboundwellness.com/paleo-nacho-bar-whole30-aip/ Modifications in red by Laura McKay, B.S., Health Educator for those following the Bon Appetit Rotation Diet Serves 4-5 1 completed slow cooker carnitas (you can use slow cooker beef or chicken vs. pork) 1 bag sweet potato chips (not Whole30) (you can use lentil chips, corn chips or any chip of choice to customize but may not follow paleo, whole30 or aip) 1 batch tostones (these are fried green plantains and do not have to use) 1 jar avocado cilantro lime sauce (may use diced avocado instead) 1/2 cup sliced black olives (canned olives are vinegar free for those mold sensitive) 1/4 cup fresh cilantro 3-4 limes, quartered FOR THE MANGO SALSA 1 medium mango, diced 1/2 red onion, diced 2 tbsp fresh cilantro, chopped Juice of one lime Sea salt to taste First, prepare the mango salsa by combining the diced mango, red onion, fresh lime juice, cilantro and salt, and mix to combine. Next, prepare all of the other components of the nacho bar and set them in their own serving dishes with separate serving spoons and tongs Stack plates at the end of the bar to allow guests to build their own plates Sit back with your nachos and enjoy the party! *You can buy store bought vinegar free salsa at Trader Joe’s, Sprouts and Whole Foods.
