UNGLAZING THE DOUGHNUT The first Friday in June is National Doughnut Day, all due to World

War I. In 1917, just after the United States entered World War I, the Salvation Army sent a group of men and women to go to France to find out how to raise morale and help out.

They discovered that the needs of the enlisted men had could be

met with moveable ‘huts’ that could make and serve baked goods, provide writing supplies, mend clothes, hold religious services, offer decent restrooms, and generally remind them of life back home. While hot chocolate, pies, and fudge were also offered, doughnuts were the biggest hit since they could be made the fastest. Often the volunteers got ‘doughnut wrist’ where a bone bulged out the side of the wrist from flipping 2,500-9,000 doughnuts a day.

With only 6 people per hut, the effort grew to 250 volunteers who

left for France. In the beginning, they didn’t have much equipment and had to twist the dough. The first doughnuts were rolled out using whatever was around- like an evaporated milk can instead of a rolling pin. The slogan used was “Doughnuts Will Win The War!”

Known as ‘dough girls’ or ‘dough lassies’ or ‘doughnut dollies’, this idea was picked up by the Red Cross during World War II. Now served in tents, they were still made on the spot. Not to be outdone, the original National Doughnut Day was launched in 1938 by the Chicago branch of the Salvation Army.

No longer restricted to war sites, mobile canteens and their food are now delivered during every sort of peacetime emergency, such as fires, floods, earthquakes, blackouts, transit strikes, among others. Here’s to those who sacrifice for the greater good of us all. I’ll eat a doughnut for that!
