Perhaps most striking at South Sands is the

stunning design which takes its inspiration from

New England’s relaxed style, added to a touch of

South West coastal charm. An unusual battleship

grey, weatherboard exterior blends harmoniously

with the hotel’s fresh, light interior.

Furniture, accessories and furnishings come

from a selection of the most revered names in the

world of interiors including British furniture mastro

Lloyd Loom. Local craftsmanship is similarly at the

forefront with a fascinating showcase of artisan

design features and superb fittings with a truly

personalised finish. Both speak volumes about the

vigour and attention to detail with which the

have been created.

Following the stunning renovation, the

emblematic South Sands building re-opened its

doors in late spring of 2010. From there,

flourished an impressive flow of business and a

flurry of media attention which has cemented an

exceptional reputation.

The Evening Standard penned it as “the holy

grail of beach hotels”, while The Sunday Times

Travel Magazine has confidently named South

Sands in its prestigious “100 Best Hotels of the

World” listing for two years running.

Equally complimentary accolades have

flooded in from the likes of The Telegraph, the

Guardian, Condé Nast Traveller (considered by

savvy readers as the bible of travel) and a long

list of fashionable titles such as Vogue, Harper’s

Bazaar and Stylist.

The South Sands Beachside Restaurant

continues to win excellent reviews for its

exceptional menu which showcases the finest

South West produce in masterful yet

unpretentious combinations. Interestingly, the

menu features alongside an exceptional wine list

created in conjunction with a local master of

wine. Acclaimed restaurateur and food writer

Mitch Tonks is the founding force behind the

South Sands menu, which is driven and

developed on an on-going basis by well-

recognised West Country chef Stuart Downie.

The restaurant’s breathtaking setting is

enveloped in dramatic sea and coastal scenery

which overlooks Salcombe’s famous Estuary.

From the main restaurant, lounge and bar, a

curved wall of pristine French windows opens

out to the bay and the South Sands terrace

which expands around the length of the hotel.

THE J-ClassCharacterised by “the largest and grandest sailing

boat of the fleet”, the J-Class at South Sands is

perhaps the most impressive of our bedrooms

with opulent design features such as the decadent

8ft bed and two roll-top baths which overlook

breathtaking estuary views and coastal scenery.

A private balcony looks directly across the bay

and provides a wonderful setting for breakfast

or a glass of bubbly.

The J-Class is perfect for special occasions

such as anniversaries or honeymoons. The

generous space features two large bespoke

armchairs - lovely for sitting with the daily

newspapers or simply taking in the views. One of

these conveniently folds out into a single chair bed

while there is also ample room space for an extra

bed or cot for families with a baby or younger

children who wish to stay together. The large

en-suite is fitted with a walk-in power shower.

THE DragonDefined in the sailing world as “a sumptuously

designed craft with the perfect dimensions for

savouring stunning sea views”, Dragon rooms at

South Sands present an interesting choice of

charming spaces. Some sit to the north side of

the hotel and cast some of South Sands’ finest

sea views; while others occupy larger, light-filled

spaces with a different view and attractive,

attic-style roofing. Most feature decadent

king-sized beds and some include a roll-top bath

in the bedroom, while others boast large spacious

bathrooms with baths and walk-in showers.

THE YawlThe Salcombe Yawl is “a well-proportioned and

beautifully designed model” and a natural choice

for the room classes at South Sands. Our three

Yawl bedrooms sit to the south side of the hotel,

with partial sea views which look to sea but also

over the sheltered side of the bay.

THE Enterprise“An elegantly designed vessel” with a valley view

– “just right for two”. The valley view and

woodland backdrop from our Enterprise rooms

evokes a sense of cosiness, especially during the

autumn and winter months. The choice of

Enterprise rooms entice with eye-catching design

features such as a small windowed dressing area

which adjoins the main bedroom through a subtle

archway; or an elongated design with two Juliette

balconies and a slipper bath in the bedroom.

THE Optimist“Small, but intricately designed”, the Optimist is

a terrific entry level bedroom with valley views

which is “perfect for learning” about bedrooms at

South Sands. These inviting spaces are

designed with an equal emphasis on a quality

finish and individual design. Two of the Optimists

are accessed through a separate entrance and

have been designed as wheelchair or disabled

Beach Suites AT South Sands...

Beach Suites at South Sands present a

different design concept to the main building of the

hotel. Each comprises two large en-suite

bedrooms (one of which can be converted to a

twin) and a generous open-plan reception, lounge,

dining and kitchen area.

The five beach suites sit to the side of the

main hotel – four enjoy side sea views, two with

direct access to the beach; the fifth and largest

looks back to the valley and provides guests with

a private courtyard.

Kitchens are fitted with the highest standard of

equipment and each suite features a state-of-the

art home entertainment system. Opt for South

Sands’ “Fill Your Fridge” service and arrive to a

The design of the beach suites is decidedly

The hub and heart of South Sands is

undoubtedly the restaurant, awash with a

languorous and gentle tide throughout the day and

surged with a frivolous energy by night. The

spacious design of the restaurant makes the most

of the natural light, filtered in through the large

French windows overlooking the estuary and

rolling countryside of East Portlemouth. This

promotes a feeling of fluidity that runs in parallel

with the gentle waves which lap but metres from

the terrace. Clear skies often enhance already

enjoyable evenings by portraying breathtaking

views of the moon as it hangs above the glistening

sea, accompanied by a pepper sprinkle of stars.

One star that head chef Stuart Downie is not

especially on the lookout for however is that of the

Michelin variety. “We’re not trying to push for

Michelin stars. We want to cook simple, honest

and unpretentious food and cook it well using

ingredients of the highest quality.” It is this attitude

towards food that has established the new head

chef as a person who fully understands and

appreciates the ethos of the hotel, which is a

vision of understated luxury effortlessly intertwined

environment embodies the very spirit of Salcombe

itself and it is therefore of paramount importance

that the food be of the highest quality, sourced

locally and presented perfectly without any hint of

ploy or pretence.

Stuart took residency at South Sands in July

2011 and has since revelled in the exciting and

refreshingly innovative environment, a place

somewhat different to his previous experiences

in the capacity of head chef. Stuart has a

background in fine dining and has never worked

in an establishment with fewer than two

prestigious rosettes. Although accustomed to

catering for 35 seats in comparison to the larger

sittings at South Sands, simplicity has always

remained key for Stuart. Choosing initially to bide

his time and not rock the boat, Stuart absorbed

the running of the restaurant and immediately

knew that he could improve the already

esteemed menu. One of the first major changes

was the introduction of sharing plates. The South

Sands Alaska is a dessert designed to be shared

between two and evokes a sense of romance.

This idea sits so comfortably within the hotel’s

general philosophy and outlook as do such

starters as Stuart’s smoked haddock Scotch egg,

which is served on a bed of rocket with a curry

mayonnaise, embodying the contemporary twists

and touches which he infuses into traditional

dishes. Succulent scallops and confit chicken

wings accompanied by an artichoke puree also

serves as a delectable opening to an evening of

exceptional food at South Sands. →

Stuart confidently proclaims, “for me the

biggest change has been how high the standard

has been raised”, and overriding his own

success from here on in excites him enormously.

“I have big plans for the future”, he smiles and

these plans include making homemade products

such as cakes and ice cream, as well as

creating a continuously changing menu. “People

can become too afraid to experiment and they

rely too much on past success as opposed to

keeping up with modern demand and desires.” It

is certainly true that successful restaurants do

often allow their menu to remain the same as

they believe in sticking to a “winning team”, as it

were. Stuart, however, feels that change is of

paramount importance if a restaurant is to

adapt, respond and move with current climes

and habits. “We don’t sit still,” he says, “we

never grow complacent.” In fact Stuart would

even consider removing a popular dish

regardless of whether or not it was in season

because growth, change and progression are so

important to him. A popular dish can always be

resurrected but the predominant vision is for the

menu to constantly evolve in order to mirror both

the customer’s wants as well as Stuart’s desire

to grow and mature as a chef.

“It is very important to match the menu to the

seasons and of course continue to use whatever

is available in terms of local produce. There is no

point in serving strawberries from half way around

the world in the middle of winter because the

freshness will not be there and they will be far

from the best they can be during their optimum

time.” South Sands has firmly established

excellent rapports with a number of local suppliers

and Stuart seeks to make the most of whatever is

attainable, even if it isn’t planned on the menu.

“It’s all about grabbing the best and freshest local

ingredients”, and this spontaneity accentuates a

love and excitement for food which is unremittingly

apparent on the attentively prepared plates.

Fish and seafood is sourced locally in Salcombe

or is bought at fish markets in Brixham, Plymouth

or St Ives and meat generally comes from within a

ten mile radius. Everything on the menu comes

from the South West with the exception of a few

specialist products and Stuart endeavours to

always mention where his food is sourced.

The beautifully presented food harmonizes

perfectly with the restaurant’s outlook. The

attentive and informed staff move gracefully from

table to table in a carefully choreographed

movement that evokes a sense of comfort to

guests who can relax safe in the knowledge that

they will be impeccably looked after. It is almost

criminal that the creator of the resplendent dishes

is unable to witness his efforts come into fruition

as diners delve into their fresh flavoursome fish or

slice into their sumptuous steak. The captain of

the ship is still working away on perfecting each

and every dish that departs the engine room whilst

simultaneously conjuring up ideas for future

delights. A staff member’s comment can easily

trigger an idea in Stuart, who is constantly on the

lookout for what he can do next, seeking to test

and improve himself as a chef whilst also

endeavouring to raise the benchmark for his food

to even greater heights. The reviews have been

exceptionally positive and any constructive

criticism is relished and transformed into

something sanguine. After all, Stuart is not a self-

indulgent chef but is rather looking to meet the

demands and expectations of his customers

before anything else.

In travelling, conducting extensive reading

and through years of experience working in

various establishments, Stuart feels he has

educated himself about seasonality which he

relishes because it allows him to experiment

with new and exciting menus which test his

skills and offer welcome challenges. The

autumn and winter months at South Sands will

see more robust and slightly heavier dishes

being introduced to provide a little comfort from

the cold. →

but also remains characteristically simple with

such things as fish pie being prominent. Of

course one of the biggest challenges of the

Stuart smiles at this and explains how “part of

the fun in being a head chef is meeting the

challenges that the season sets.” Turbot served

in an oxtail casserole is just one of the dishes

that Stuart is considering, while we will also see

fresh brill served with new potatoes and

béarnaise sauce and shared between two. This

uncomplicated approach once again allows the

food itself to make the statement. Wild halibut

bathed in a tomato and vanilla dressing served

with sautéed spinach is another mouth-watering

seasonal composition.

The dessert menu will feature warm ginger

sponge pudding served with Devon clotted cream

and caramelised apples, embodying the season

but offering a lighter alternative to such house

favourites such as sticky toffee pudding. Warm

chocolate tart served with pistachio ice cream will

be another tempting treat.

Traditionalists and luddites should not fear for

Christmas at South Sands as Stuart is keen for it

to remain a conventional affair with a subtle twist

or two. The custom prawn cocktail will perhaps be

replaced by crab and lobster cocktail, while roast

turkey will form part of a five-course Christmas

lunch with homemade mince pies and Christmas

pudding ready to be enjoyed next to the roaring

open fire. Canapés followed by a five-course

taster menu will be served for supper on

Christmas Eve when guests can take advantage

of the South Sands Shuttle service to and from

Salcombe for Midnight Mass.

In addition to taking into consideration the

seasons, Stuart always looks to create a balanced

array of food that contains a mixture of light and

heavy dishes when creating a menu. The food

must be consistent and cater to the wide

demographic that the restaurant attracts from

young families to couples enjoying a weekend

getaway. The high volume of customers dictates

that a simple but sophisticated menu is required

but this by no means extracts from the elegance

and individuality of each and every dish. “People

no longer mind paying more for excellent quality

produce which is cooked well,” and it is certainly

true that with the amount of food programmes and

fast selling cookery books, the British public are

certainly hungry to obtain knowledge about food.

Stuart’s love of food was rooted from an early

age and it is an infatuation that developed rapidly.

From humble beginnings washing pots and pans

to training in catering and hospitality at

Southampton City College before entering the role

of trainee chef, Stuart invested a tremendous

amount of energy, effort and time into his passion

and devoted all of his attention to developing his

skills and educating himself about food. Eventually

growing a little tiresome of the restraint and

restrictions inflicted by the larger establishments,

he decided to join a smaller environment. The

Horn of Plenty in Tavistock was an obvious choice

with its renowned award-winning reputation and it

is here that Stuart trained under mentor Peter

Gorton, a man he owes a lot to and is still in

regular contact with today. It was during this time

that Stuart believes he developed massively,

obtaining an ever increasing knowledge of food

but also management, which would be put into

practice several years later when returning from

his travels and taking over as head chef from his

mentor. “Cooking is the easy part. It’s the

management of people and margins that is

harder.” This may be the case but it does not

seem remotely apparent in the well-run ship that

Stuart captains at South Sands. →

Stuart sees it as his responsibility to educate and

nurture his team in the way Peter Gorton nurtured

him. He wants his team to develop and mature

and this encouragement of ambition and pursuit of

excellence and success parallels the sentiments

of a young, assiduous and motivated hotel.

The desire to educate people about food does

not stop with his staff. Stuart regularly hosts

demonstrations at gourmet food fairs including an

interactive demo at the famed Dartmouth Food

Festival whereby people have the opportunity to

sample his food having watched it being cooked.

Stuart will host similar demonstrations at South

Sands during the winter months with a real

emphasis on entertaining and enlightening his

audience as well as teaching them dishes that can

be made at home. These events will be followed

by dinner in the South Sands restaurant (see

www.southsands.com for further information).

Although intentionally not overly large, as this

would detract from the seasonality of the food and

reduce the emphasis on ensuring each and every

dish stands out, the menu does boast a wide array

of food. “Nothing is original” Stuart proclaims, “all

recipes have been done before, each with a

different spin or twist yet fundamentally the same

dish.” In our recycling-dependent world of post-

modernity and repetition, taking ideas from

existing tried-and-tested recipes and enhancing

them so they tailor to a restaurant’s individual

style and needs is common practice. The

challenge lies in offering the customer a new and

unique experience that they will revel in and yearn

to come back to. Being a chef is a constant

learning process and developing is a necessity.

“These days the standards are high. Diners

expect quality local produce” and it’s certainly true

that ever-popular cookery programmes have

taught us what to expect in terms of aesthetically

pleasing and perfectly presented plates. Whilst

Stuart insists his dishes look immaculately

enticing, it is always substance over style and one

of the main lessons taken from mentor Peter

Gorton was to not allow anything on the plate that

does not need to be there – Stuart strongly

believes that the food should always do the

talking. Those who have sampled the delights of

the South Sands restaurant will testify to this and

will most likely feel that the food before them is the

product of Stuart’s most important job of the day.

Stuart harbours many hopes and ambitions for

the restaurant. His passion and energy has been

ignited by the availability and demand for local

produce and uncomplicated honest food. As

fantastic and welcome as reviews and accolades

are, they are not what South Sands or Stuart are

about. “I’m investing into the restaurant and the

customer, not rosettes and stars. If South Sands

can become a destination restaurant where

people know exactly what they are getting and

that it will be very relaxed but very refined, then

my job is done.” This ambition, one of many, has

certainly been realised during the time that Stuart

has been on board – and, if anything, it won’t be

too long before the exceptional standard reaches

those stars, whether intentionally or not.

PRESTIGIOUS CAREER THE WORLD OF WINE OUTSTANDING WINE LIST SOUTH SANDS

Liam Steevenson was going to become a history

teacher and, whilst his infectious thirst for both

obtaining and sharing knowledge, combined with

his natural enthusiasm and raw passion, is

undeniably a huge loss to the world of education, it

is a fortunate gain to the wine industry. This was

attested in 2004 when Liam was awarded the most

prestigious accolade that the world of wine has to

offer – the Master of Wine. As well as being one of

only fourteen to have passed first time, Liam was

the youngest member to ever pass the esteemed

and rigorous examination which consists of a

theoretical component focusing on such things as

wine making and the business of wine, a practical

component entailing a number of blind wine tastings

and finally a ten-thousand word dissertation. Such

an achievement at any age denotes ambition,

diligence, unwavering endeavour and, of course,

extreme knowledge of the subject – but to

accomplish this at such a young age illustrates

Liam’s sheer adoration and devotion to wine.

The Institute of Masters of Wine describes a

Master as being “someone who has demonstrated, by

way of rigorous examination, a thorough knowledge of

all aspects of wine and an ability to communicate that

knowledge clearly. They actively encourage others in

the pursuit of knowledge as well as seeking to bring

wine communities together”. Liam unquestionably

embodies the above and one need only look at the

South Sands wine list or on the shelves of the Red &

White store in nearby Kingsbridge to understand that

Liam and his team are not only experts in their field

but exceedingly passionate individuals. Red & White’s

history papers have had a recent addition in the form

of winning the Regional Wine Merchant of the year

2011, a stellar achievement considering how young

the business is in comparison to the well established

and respected competition and further evidence that

the company is continuing to achieve tremendous

success and respect within the industry. Liam

proclaims of Red & White that “educating and

enlightening people is the most important thing we do.

I want people to enjoy wine.” Liam strongly believes in

the importance of this but recognises that wine does

have a habit of making some people feel a little

nervous or intimidated. The wine world is indeed full of

a great many loud voices but are all of these voices

talking sense? Everyone is of course entitled to their

own opinion about wine but stripping away any

pretence and offering an entirely honest and educated

account of how a wine tastes and where it is from are

skills which belong to a minority of people. Liam does

his upmost to ensure that each and every member of

staff who sells his wine, whether at the Kingsbridge

store or the team at South Sands, has a thorough

knowledge of what it is they are selling. It’s all too

easy to reel off a rehearsed description of a wine,

using such words as “fruity” and “full-bodied”. But to

actually be in possession of information regarding

exactly how the wine has been made, where it is

from, what it tastes like and what food it works well

with are very sought-after attributes that provide the

customer with a much more well-rounded

presentation of wine than they might receive in other

hotel establishments. Liam has made a point of

getting to know each member of the food and

beverage team at South Sands, a practice that cannot

invest their time and interest into the subject.

As interesting as talking about wine is, it is the

bottle itself that should really do the talking and

Liam believes every wine has a story to tell. “Wine

is a product of place” and the very best wines will

convey their makers zest, emphasise their

personality and conjure up images of the country

from which it originates. Liam purposely uses only

small suppliers and this is not merely about

obtaining an exclusive wine list but because Liam

believes in suppliers who have pride and passion

for what they do and where they live, which he

feels can be conveyed through the wine. →

it’s true that some people possess palates that are

more refined than others, an appreciation and

admiration can most certainly be obtained if one is to

Makers who seek to offer delight and pleasure

rather than filling as many shelves as possible

throughout the country greatly appeal to Liam

who shares their ethos entirely. It feels very

natural for an unashamedly small company to

employ unashamedly small suppliers and much

valued interpersonal relations would be greatly

lost on highly expansive projects.

Liam explains that “the wine we drink changes with the seasons, as mood, temperature and the food that we eat alters.The South Sands wine list is packed with an excellent choice of wine but a particular favourite this autumn is the deliciousPriorat white ‘Mas d’en Compte Blanco’ from Joan Sangenis. In all my travels, I have never found a wine region in the worldmore beautiful than Priorat. Nestled in dramatic steep hilled valleys, the vineyards of Priorat are some of Spain’s mostancient, forgotten about for generations and brought back to life by a small group of intelligent and talented winemakers.This old vine white Grenache is rich, with a peach and apricot nose, the palate is Burgundian in style, almost Meursault likebut richer. It makes a perfect foil for rich fish dishes.”

South Sands food & beverage manager

Gareth Piper shares a knowledge and excitement

for wine, something that has gradually developed

during his years in the restaurant trade. Gareth

has educated himself by becoming accustomed

with a variety of wines and learning to appreciate

them. He met Liam six years ago, thus making

Red & White an obvious choice for supplying

South Sands. However, Gareth insists this would

have been the case regardless because both

companies share such similar beliefs and

attitudes. The ideal amalgamation of Liam,

Gareth and restaurant manager Pete Hardwick

ensures that a variety of wines are on offer

regardless of the season. Gareth has always

sought a unique wine list that is not dependent on

or dictated entirely by the food menu and this has

been successfully achieved throughout South

Sands’ life thus far. Liam and Gareth intend for

the wine list to continuously change and wines

from small suppliers do of course change

depending on the harvest conditions of that year

– an enchanting factor absent from the supplies

of larger stores and establishments. Liam says,

“Our wine does not derive from a constantly

running tap. We can and we do run out.”

The balance works so successfully at South

Sands because Pete and Gareth truly share

Liam’s vigour and whilst their tastes certainly differ

and disagreements inevitably occur, this ultimately

enhances the wine list with every wine available

being agreed and believed in by the team.

Liam’s father is a wine merchant so the world of

wine has always felt like a familiar and comfortable

place with a childhood involving suppliers and

connoisseurs frequenting the family home. Wine is

certainly in Liam’s blood and his respect for

traditional approaches marries harmoniously with

his sharp and spirited approach to business.

Opened in 2010 the Red & White store soon

obtained a much deserved reputation as a venue

which not only stocks a vast array of fine and

impressive wines but also a staff of knowledgeable

individuals. There is always a bottle of wine open and

it is of great comfort that such independent shops

can still exist in a retail world that is dominated by

conglomerates, which are of course a great threat.

They can offer wine from across the globe at

discounted prices but they cannot offer their

customers knowledge and expertise and very rarely

can they deter a person from their habits and natural

inclinations. This is something Liam has noticed

among people – they often stick to what they know or

what has been heavily promoted and recommended

and it’s quite a travesty that more people aren’t

willing to experiment and explore. An even bigger

travesty perhaps is that many of those who

appreciate independent stores seem to appreciate

them for what they are from the exterior without ever

quite venturing in and generating business,

something Liam implores people to consider. The

wine trade has changed in the past decade or so with

the tremendous amount of competition but Liam is

keen to highlight the fact that fantastic wines do not

always have to come at a price and he is confident

that Red & White boasts several selections that are

affordable yet nevertheless impressive and this is

also evident on the South Sands wine list.

Liam hopes to entertain and delight wine lovers

and novices alike with a number of demonstrations

at the Red & White store during the winter period

and also hosts similar events to South Sands. Wine

after all is about bringing people together and what

better way to learn about it than with like-minded

and eager company in a sumptuous setting such as

South Sands? To welcome the arrival of autumn

2011, renowned restaurateur and consultant chef at

South Sands Mitch Tonks presented an exceptional

five-course menu showcasing the very best of local

fresh fish and seafood which were savoured

alongside expertly selected wines chosen by Liam.

Gareth has also implemented a series of Wine

Appreciation Evenings which will be open to anyone

interested in wine during November and February.

Perhaps all men, whether they are aware of it

or not, have a desire to be able to make

something from scratch. The natural need to

provide is of course still inherent within us and the

skill of producing something out of nothing is

abundantly possessed by Joff. He became aware

of this trait during school when he excelled in both

art and metal work. The craft feels entirely natural

to Joff and upon entering his teenage years it

quickly became apparent that a career involving

these subjects was greatly desired. At sixteen Joff

was apprenticed to a master blacksmith and he

invested his energy and efforts into four years of

hard graft before completing a Higher National

Diploma at Europe’s largest blacksmithing college

in Hereford. Even during these early years, Joff’s

work attracted attention, awards and acclaim. No

mean feat in a highly competitive industry. This led

to Joff working with a number of esteemed

establishments and blacksmiths both in the United

Kingdom and throughout Europe before setting

out on his own. Joff was named as a member of

The Worshipful Company of Blacksmiths and in

2007 was awarded the prestigious title of British

Blacksmith of the Year for his work ‘The Wave

Gate’ – an impressive piece shown and

championed at every single national show and of

course a stellar award which established Joff as a

real contender in the world of blacksmith art. →

FORGING A NEW RELATIONSHIP WITH LOCALARTISAN BLACKSMITH AND DESIGNER OFTHE SOUTH SANDS STAIRCASE JOFF HOPPERBefore being greeted by the comforting and welcoming warmth that so readily radiates from the reception desk, you would be

forgiven for taking pause to marvel at the astoundingly striking staircase that deservedly dominates the entrance of the hotel.

This is the creation of local artisan blacksmith Joff Hopper and it is without doubt the talking point of the building and perhaps

Joff draws inspiration from the building in which he is working... the

building’s relationship with its surroundings is key to the underlying design

now permanently works and resides in Devon and

happily admits to being utterly ingrained in a county

that boasts ceaseless inspiration. The Metal Pig

Forge in Dartington is Joff’s base and over the past

several years has been open the public who can

enjoy his static works on display. The chances of

To this day Joff maintains a personal commitment

that he set for himself during his years of training.

than done perhaps but one need only look at Joff’s

work, whether it be one of his striking railings or

gates or a seemingly simple candle holder, to realise

that his personal promise has undoubtedly come into

fruition. Joff is by no means the only artist to

specialise in this type of creative work; however,

there is certainly a unique approach and technique

embedded within each of his creations which is

combined with a level of consistency that enables

him such a signature style. Joff allows his work and

his materials to do the talking as all great artists

should. Mother Nature is the performer, the stimulus,

the inspiration and the real artist and only those who

truly respect and understand this are capable of

producing honest and raw art. That being said, there

is a subtle sense that Joff is somewhat conversing

along with his work and this is an atypical attribute

that is relished throughout South Sands and mostly

unattainable in today’s world of mass consumerism.

witnessing Joff himself at work are limited as he is,

after all, an artist and not a performer and as

aforementioned it is his work that takes centre

stage and does the talking. The forge has attracted

a great number of visitors and this is proof of the

public’s hunger for individually crafted designs as

well as their general appreciation for hard graft with

a personal touch. This is immensely comforting yet

also of no great surprise. Of course people desire

products that are individually tailored for them or

their home. This style of work cannot and perhaps

won’t ever be available in the great many chain

stores that inevitably dominate the market.

Joff employs traditional forging methods,

which manipulate metal at a hot temperature with

one eye focussed on conventional craftsmanship

and the other on contemporary style. This is the

approach which excited and enticed the team at

South Sands. Out of six different pitchers for the

staircase Joff was chosen to design, make and

install what was to become the centrepiece of the

hotel. Despite the building being somewhat of a

shell with a tremendous amount of construction

work taking place, Joff absorbed the atmosphere

that he knew would be realised upon completion

of the building and used the location and the

setting as a stimulus for his design. The building’s

relationship with its surroundings is key to the

underlying design which reflects Joff’s ethos of

only creating a piece which complements its

environment as opposed to simply showing off

his vast array of skills in a self indulgent manner.

Inspiration came from Joff’s conception of

Dartmouth, Bantham and Salcombe but the main

trigger came from the original concrete blocks and

steel ropes from the old submarine nets on the

Avon. The rope provided the central inspiration

and conjured ideas of scaling it up into the spine

of a staircase. It soon became apparent to Joff

that such a design feature would work extremely

well visually by creating a flexible feeling of

movement with a strong nautical element.

Joff was commissioned to create a helical

staircase (one without a central pole) as opposed

to a spiral staircase. In the overall scheme of

things, the building offered an exceptionally

limited space for a dramatic staircase to be

installed. He started his research and set out to

create something which would produce

questions – “how was it created? How was it

made in that way?”. →

A sense of fluidity radiates from each and every work, which contributes to thejigsaw of style which forms the unique style of the hotel.

These aspirations have certainly been executed and

one can easily find their eye being taken on a

journey up the spine and over to the second

staircase, which follows the same design but is of

course different in size and shape to the initial one.

Exciting ideas are all very well in principle but during

the planning stages Joff was still left with the

question of how he was to flex steel into the shape of

a rope with treads balanced up the fluid spine in

what was essentially a very awkwardly shaped area.

Obstructed by the various works going on

within the building and challenged with erecting the

scaffolding in such a small space, Joff was forced

to work around the assault course presented to

him and make the best of the situation. The top

staircase spine was hoisted into position, ensuring

each and every measurement was precise. This

was then welded and bolted into the ground. Once

Joff is married to Devon-based artist CharlotteAtkinson – the striking metal sculpture at South Sands, inspired by one of Charlotte’s paintings, is worthy motivation for the two to continue on their creative collaborations.

in position the spine was polished on-site to create

a mirror finish on the pre-painted black and epoxy

sealer lacquer and an inhibitor was used to kill any

oxidation resulting from the nearby sea. The

trimmed and prepared treads, still in their raw

state, were placed down and perfected before

each and every one of them was sanded and

coated in a sealer six times. The treads were then

bolted on and attention turned to installing the

spindles, of which there are six different sizes on

each tread, echoing both the individuality of the

staircase and of Joff’s work in general. Joff worked

with a small team and also sought the expertise of

master joiner Pete Goss of Goss Joinery. Pete was

drafted into the project with Joff to help with the

carpentry and finishing on the staircase’s oak and

fine banister, which follows and flows with the

spine of the staircase. From conception to

completion, the project took six months of hard

graft, determination and sheer motivation and the

results have indisputably paid off.

The finished result is the embodiment not only

of Joff’s hard work and dedication to the project, but

the complete realisation of his original vision. No

compromises were made and this is a remarkable

triumph of profound perfection. Joff’s words sum up

the achievement in his natural modest manner

when he asks, “Did we really make that?”

Impressed by his work and appreciative of his

full understanding of the hotel’s concept, Joff was

commissioned to create the impressive half

ribbon-inspired fire grate and surround, another

talking point of the hotel that continues the running

sense of fluidity that governs the building. Upon

seeing a ribbon-shaped sculpture lying sideways

on his work bench, Joff envisioned it magnified

and cut into half, thus mirroring the ribbon lights

he had already made by housing the flames of the

fire inside. It forms a serene segregation between

the bar and the reception area and, like a great

deal of Joff’s work at South Sands, it takes

advantage of the natural light that flows from out

to sea and into the building via the impressive

French windows which line the restaurant. →

A sense of fluidity radiates from each and every

work and the exhibits contribute to the jigsaw of

style that forms the unique canvas of the hotel.

Look closely and you will gain a sense of the

tremendous work that has been invested into the

smallest of sculptures and this is a refreshing,

almost touching quality that is so sadly absent

from many homes and establishments today.

The striking railing of the veranda is a signature

attribute with its understated yet gracefully alluring

design. It effortlessly entices one to lean out and

absorb the awe inspiring views as the sun sinks

and the wine or champagne is replenished.

Easily noticeable from the beach, the veranda

railing sets the scene for what is within the building

in terms of its distinguished nautical designs

combined with the distinctive pieces created by

Joff. These include the foyer coffee table, candle

holders, drawer and wardrobe handles and of

course the personal key fobs that connote a sense

of both individuality and sophistication. The ribbon

lights conjure images not dissimilar to the light of

the sun being divided by a cloud and sent off in an

array of different directions and above all the

continuity of the work conveys and reaffirms the

fact that South Sands maintains and sustains

strong relations with local businesses as well as a

full commitment towards using local products.

Whilst some artists perhaps feed into their

own appetite for self expression and discovery,

a therapeutic release and satisfaction of artistic

challenges set for themselves in the hope that

others will enjoy and appreciate their work, Joff

is entirely unselfish in his approach to art. He

chooses to extract inspiration from the natural

palette provided for him by Devon itself with its

rolling countryside, dramatic coastline and

pristine beaches. Joff also draws inspiration

from the building in which he is working,

whether that be a house or a hotel. An

understanding of the location, personality, style,

surroundings and atmosphere will produce art

that will encompass, complement and

harmonize with the structure.

Joff is married to Devon based artist

Charlotte Atkinson (www.charlotteatkinson.com)

and the couple quickly set their eyes on

collaboration. Eighteen years later and the

resulting sculpture, which can be seen on the

pathway from the car park to the hotel, proves

that it was worth the wait. Based on one of

Charlotte’s paintings, the sculpture is named

Careen (after a trajectory when navigating or

plotting a course) and is another truly unique

work which serves as a worthy motivation for

the two to continue in their collaborations.

After a number of years in the business Joff

feels he is still allowing and encouraging his

skills to develop and his love and loyalty for his

profession remain as strong as ever before. “I am

constantly developing and testing myself”, he

says and anyone who has admired or climbed

the stairs of South Sands will perhaps wonder by

what measure Joff can outdo himself. Joff freely

admits that it was the biggest test and

achievement of his career thus far and, in a trade

that can become easily complacent with

satisfying demand on a mass scale without

devoting soul and personality, Joff is a shining

beacon of inspiration who has firmly established

the fact that artisan blacksmiths are still wholly

relevant in today’s world. Where else can you

receive the full outlay of a person’s time, energy,

enthusiasm, love, care and consideration?

“Metal,” Joff says, “is so versatile and exciting

that the possibilities of what can be produced are

endless.” Joff could quite easily be the

personification of metal because his future is

undoubtedly exciting and versatile and not even

he is aware of what is on the horizon.

As the beach balls, barbeques and balmy evenings are shelved away until next

year, Salcombe morphs from the action-packed summer playground it has become

renowned for, into a secluded winter sanctuary. The utopian scenery of course

remains but, this time, bathed in a different light which conjures up new imagery

aided by the change in colours that comes naturally with the change in seasons.

As the famous Victorian historian James Froude once said, “Winter in Salcombe is

winter only in name.”

The bustling town with its joyous air of fun and

summer evenings singing with diners and days

filled with laughter, children’s chatter and boat sails

fluttering in the wind, gradually winds down as the

holidaying revellers deplete with the departing sun. As

the sea mist envelopes the rolling hills surrounding the

town and a chill is carried in the air, the homely and

hospitable pubs remain an important focal point –

there are ample watering holes in and around

Salcombe to provide comfort and warmth. Many of the

boutiques, art or photography galleries and restaurants

that are nestled on the narrow streets of Salcombe

remain open for business and a hearty lunch can often

be followed by a walk on the beach, a therapeutic

delight on a crispy winter’s day with a brilliant blue sky

and the invigorating bite of the cold air.

On those inevitable rainy days that our winter

insists on bestowing upon us, there is still an

abundance of activities on offer in Salcombe and the

nearby picturesque larger towns of Kingsbridge and

slightly larger museum exists in Kingsbridge and for

of the impressive open fire matches that of the

infectiously friendly staff. An afternoon tea can be a

welcome treat after a brisk walk and clasping cold

hands around a mug of steaming hot chocolate

whilst taking in the stunning view from the bar and

restaurant evokes a feeling of complete and utter

relaxation and serenity. Or, for a touch of indulgence,

why not complete the day with a relaxing massage

or treatment from the hotel’s enticing spa menu.

The energy of the summer is resurrected at

Christmas and New Year when dramatic fireworks

paint the canvas of clear sky above the

anticipating sea, creating a piece worthy of

Jackson Pollok above the thriving and animated

the epitome of England and Englishness.

Walking in Salcombe

& South Devon

Whether you prefer to saunter or stride, Salcombe

offers walks of all types and for all abilities. South

Sands itself sits nobly on the South West Coast

Path, one of the country’s most prized National

South Sands to Bolt Head

Many drive from neighbouring areas or take the

South Sands Ferry from the town, but guests of

South Sands have the advantage of a head start as

this serene walk begins just outside the front door of

the hotel. A left turn will lead you up and around to

the National Trust land. Follow the road around to the

right and eventually you will reach Overbeck’s, where

a tour of the exotic and resplendent gardens or the

Edwardian house can be enjoyed. A track to the right

of the Overbeck’s garden will eventually lead you to a

left fork and some steps carved out of bedrock. →

At the top of the steps is the path to Bolt Head

where glimmers of the astounding views will be

seen through the trees and hedgerows as well as

to the right across rolling hills, but the best is

saved for Sharp Tor where an observational point

sits. From this angle one can glance at the

staggering view of Salcombe and beyond,

arguably the greatest vantage point of the town.

Continuing along the path you will eventually

descend into the valley which boasts an amazing

outlook that conjures feelings of being in a foreign

land yet also evokes a sense of great English pride.

Stare Hole Bay sits at the foot of the valley with the

waves licking the shore and the wreck of the 1936

Herzogin Cecile lies, part of which is exposed

during exceptionally low tides. Bolt Head lookout –

used in the Second World War – is worth looking

for and can be seen just off the costal path. Bearing

left and crossing the stream, the costal path will

lead you up and eventually through woodland and

shrubbery, again offering resplendent views over to

East Portlemouth and Salcombe town, and will

bring you out on the driveway to Overbeck’s where

you can return to South Sands or perhaps continue

on through South and North Sands into town, which

is another scenic walk of about half an hour.

Soar Mill Cove

For those who desire a longer walk, continuing

right at the foot of the valley and following the

costal path up hill will lead you on a several mile

walk to the secluded Soar Mill Cove. The great

expanse of sea to your left for the duration of

South Sands to Hope Cove

A very popular and beautifully scenic walk which

takes most people around half a day. Continuing

on from Soar Mill Cove (see above), a somewhat

steep climb and you will soon be greeted by the

view of the famous Burgh Island as well as the

impressive Thurlestone Rock and, in the distance,

the outline of Plymouth and even South Cornwall

can be seen on a clear day. Eventually the

dramatic scenery winds around to the picturesque

Hope Cove which is divided into Inner Hope and

Outer Hope. Safe and sandy beaches, thatched

roofed seaside homes and an excellent watering

hole, the Hope and Anchor, where awaits a

rewarding end point for a scenic walk.

Wildlife in the South Hams

The term “Estuary” translates to “a body of water

with one or more rivers flowing into it” but,

somewhat unusually, Salcombe Estuary is a

flooded valley with no rivers flowing into it and

subsequently the plant and animal life is unique to

the area. In addition to attracting a myriad of

people who hunger to marvel at the incomparable

natural beauty of the Salcombe Estuary, a large

range of birds is also lured in by the rare

environment throughout the autumn and winter

months. In addition to the common yet

nonetheless beautiful Blue and Great Tits, parties

of Long Tailed Tits are often spotted in the woods

and occasionally one might be lucky enough to

spot Britain’s smallest bird, the Goldcrest.

Overhead Kestrels are frequently encountered

hovering over the coastal paths and Buzzards are

also quite common. Be in the right place at the

right time and you might be fortunate enough to

see a Peregrine Falcon. Also along the coast you

can expect to see Shags and Cormorants as well

as Herring Gulls. The much larger Great Black-

Backed Gull will also be seen on most walks and

out to sea Gannets, with their brilliant white colour

and black wing tips, can often be spotted. →
