Bok Choy Udon Noodle Soup You’ll Need: Udon Noodles, 4 cups of chicken or

vegetable broth, bok choy, 2 garlic cloves, and red peppers

Begin by bringing the broth to a boil Add in the noodles when ready On a separate pan, stir fry the garlic cloves, red peppers,

and bok choy with olive oil When the bok choy leaves have wilted, dole out two

bowls of noodle soup and add in the vegetables

Creamy Thyme Scrambled Eggs You’ll Need: 3-4 stems of thyme, around 4 eggs,

crème fraiche, ¼ cup parmesan cheese Begin by whisking together the 4 eggs Add a tablespoon of crème fraiche for every 2 eggs

you use Add in the parmesan cheese Add in the thyme Cook the mixture in a pan and scramble the eggs If desired, eat with toasted olive bread

Fresh Goat Cheese Toast You’ll Need: Some Chevre Cheese, parsley, French baguette,

lettuce, peas, potatoes, green onions, and lemon vinaigrette Begin by chopping up some parsley and adding in the Chevre

Cheese Spread the mix onto some sliced baguette and bake for 10

minutes in a 350 degree preheated oven Tear some lettuce and put it into a large bowl Stick some peas, sliced radishes, potatoes, and green onions

into the bowl Drizzle the salad with lemon vinaigrette and serve with the toast

Swiss Chard Quesadillas You’ll Need: Tortillas, Swiss Chard, half a cup of onions, 3 green

chilies, ½ tsp. coriander, ½ tsp. cumin, 2 tsp. chili powder, sour cream, choice of cheese

Start by frying the onions in the pan with olive oil When they turn golden, add in the spices Afterwards, add in the Swiss Chard and sour cream Put the tortilla in a pan and begin cooking it with the cheese on

top After the cheese melts, add in the mixture of spices, Swiss Chard,

and sour cream, and fold over the quesadilla Cook until both sides are nice and toasted

Grilled Zucchini Medallions with Pita

You’ll Need: Zucchinis, 3 teaspoons of white wine vinegar, a pressed garlic clove, lemon zest, a pinch of salt or two, some freshly ground pepper, olive oil, feta cheese and a bit of mint

Start by slicing the zucchini into ¾ to 1 in. slices Take the vinegar, garlic, lemon zest, salt, and pepper and create a

marinade Pour the oil slowly into the marinade and then take the marinade and

pour it over the zucchinis, spreading it around Put the zucchinis in a refrigerator and let it marinade for at least 4

hours Take out the zucchinis and grill them until you see the grill lines Take the zucchinis off the grill and add the feta cheese and mint on

top
