1 INSTRUCTIONS ON HOW TO USE THE GUIDE Since we are in the company VALMAR aware that it is in yours as well as in our interest that the machine would operate at its best and as cheap as possible we have prepared this instruction manual, in order to assist you with your machine. The instruction manual must be stored near the machine, so you will be able to access it when needed. Only authorized persons (operators), who know how to operate the appliance, are allowed to handle and operate it. Operators must read and study the manual carefully and they must follow the instructions. The company VALMAR can not be held responsible for any kind of damage or injuries occurred due to non-consideration of the instruction manual. Further to these instructions, all applicable environmental legislation and regulations regarding safety at work must be taken into consideration. Handling the appliance required carefulness, which is expressed in the manual with symbols.

2 GENERAL FEATURES AND SPECIFICATIONS

2.1 GENERAL FEATURES

The appliance is designed exclusively for the ice cream production and the processing of fresh ice cream. The manufacturing company VALMAR cannot be held liable in any way for personal injuries or damage caused to the appliance in cases when the appliance has been used for any other purposes than those specified. The appliance consists of:

� main construction � side panels and top cover � mixture producing cylinder with mixer � electrical assembly � hydraulic assembly (water) � cooling assembly

It is forbidden to reassemble, alter or in any way modify the appliance or any part of the appliance without an express permission of the manufacturer. This appliance is designed in compliance with the following European directives:

� CE 98/37 and updates, � CEE 73/23 and updates, � CEE 89/336 and updates, � CEE 89/109 and updates,

and following standards:

� EN 292 � EN 294 � EN 60204

This appliance is fully compliant with all legal standards for operational safety. The level of operating noise does not exceed 70 dB. Cooling is carried out with the use of ecological gas R507 and water condenser with the possibility of mounting air condenser. With the intention to provide our customers with a well-tested appliance, ready for normal operation, the initial start-up is always carried out at the factory by the manufacturer before the product is packed and shipped to our client. Additional start-up and appliance's adjustments can be made on the client's premises by technicians authorized by VALMAR. The price of the appliance does not include the initial start-up on the client's premises. Set the appliance in a suitable place, block it to ensure stability, and connect to the water and power supplies. Blocked and connected appliance is ready for operation.

The price of the appliance does not include installation costs and the cost of the demonstration of its operation. The warranty does not include replacements or repairs of malfunctions caused by incorrect connection of the appliance. The quality and the quantity of the ice cream depend on:

� temperature of the cooling water � temperature of air � final temperature of the ice cream � quantity and quality of the ice cream mixture � desired consistency of ice cream � increase in the volume of ice cream

Mixtures treating starts by pouring ice cream mixture in the mixture treating cylinder and then pressing AUTOMATIC HEATING or MANUAL HEATING key. The mixture is heated up to treating temperature and then maintained at treating temperature until is poured into processing cylinder. Mixtures treating starts by pouring ice cream mixture in the mixture production cylinder and then pressing the button ICE CREAM PRODUCTION. The appliance will produce ice cream by means of mixing and cooling of the mixture in accordance with the chosen program (Pr1 ~ Pr4). Ice cream is poured out through the ejection hole into the vessel by pressing FAST MIXING – EJECTION OF ICE CREAM key. Operations of the appliance:

� mixing and heating in the mixture treating cylinder up to the preseted treating temperature T=85°C and then maintaining the mixture at the preseted treating temperature (AUTOMATIC HEATING)

� mixing and heating in the mixture treating cylinder up to the selected treating temperature 20°C <T<98°C and then maintaining the mixture at the selected treating temperature (MANUAL HEATING)

� mixing in the mixture treating cylinder (MIXING, CLEANING, DESINFECTING, TESTING START UP)

� mixing and cooling of the ice cream mixture in the production cylinder in accordance with the chosen program (Pr1 ~ Pr4) (PRODUCTION OF THE ICE CREAM);

� mixing and cooling of the ice cream mixture in the production cylinder in accordance with the chosen program (Pr1 ~ Pr4) (PRODUCE MINIMAL AMOUNT OF ICE CREAM);

� fast mixing in the production cylinder (EJECTION OF THE ICE CREAM); � slow mixing in the production cylinder (MIXING, CLEANING, TEST RUN)

The warranty does not include replacements or repairs of malfunctions caused by incorrect use of the appliance.

2.2 IDENTIFICATION OF THE APPLIANCE

Every appliance has its own identification label, which is fixed on the backside of the appliance. The ID label contains the essential technical specifications of the appliance:

The ID label must not be removed or damaged.

3 TRANSPORTATION AND PLACING OF THE APPLIANCE

3.1 INSTRUCTIONS FOR PREVENTING INJURIES

Pay due attention to legally required safety measures. At work wear suitable clothing. Do not wear ties, jeweller’s chains or belts, which could get caught in the machine. Do not shift or dislocate the safety switches or protective parts. Make sure that the lifting device is in good condition and that its load capacity exceeds the weight of the appliance (refer to the technical specifications data sheet). Lift the appliance following the instructions for its use and maintenance. Pay attention to the handling and handgrip locations. The use of a suitable lifting device is recommended. While lifting or moving the appliance do not stand under the machine. Do not turn the appliance after holding the cables or the water hose has lifted it. If you have to attend to any work higher up above the appliance, you should use a suitable ladder and not the appliance for support.

3.2 UNLOADING THE APPLIANCE FROM THE LORRY

Required devices are a hand lift for pallets and a forklift truck with load capacity of at least 1,200 kg. Lift the crate containing the appliance using the hydraulic palette lift and move it as close to the open side of the lorry as possible. Remove the hand lift from underneath and handle the crate with the forklift truck. Make sure that the weight is focused on the holding points. Remove the crate from the lorry with the forklift truck in reverse gear as soon as the crate is moved out of the lorry, and lower the crate to the minimal height of around 30 cm. Slowly and carefully place the box containing the appliance in its place. To move the appliance around on the premises use wheels, which are supplied with the appliance.

3.3 UNPACKING OF THE APPLIANCE

Upon the delivery of the appliance check if the crate was not damaged during transportation. The appliance is fixed to the pallet with two screws. The side covers should be removed and the screws detached. When the machine is unpacked, make sure that the packaging is disposed in a suitable manner and in compliance with standards on environmental safety.

3.4 PLACING THE APPLIANCE ON THE GROUND

Place the machine on a level solid surface with an adequate strength of at least 600 kg per m² for the weight of the machine, and position the appliance at least 60 cm away from the wall or other objects. Leave enough space in front of the appliance to ensure comfortable access and work with the appliance. While placing the appliance in position, block the front wheels (by pressing the brake), which will ensure that the appliance will not be able to move.

4 REQUIREMENTS AND CONDITIONS FOR NORMAL OPERATION OF THE APPLIANCE

Before connecting the appliance to electricity supply, the operator must make sure that environment requirements have been met: the temperature and humidity of the air must be appropriate and the water supply and electricity networks comply with all requirements for normal operation of the appliance. When the characteristics of either the water supply or electricity network fail to meet the requirements for normal operation, the machine must not be connected to power supply.

4.1 ENVIRONMENTAL CONDITIONS

Prior to connecting the appliance, the temperature and the humidity of the environment, in which the appliance will be operated, must be assessed and checked. If room temperature drops under 0 ºC (273K), water must be released from the condenser.

4.2 WATER SUPPLY REQUIREMENTS

Prior to connecting the appliance to the power source, the temperature, pressure and water flow from the water supply network must be checked. Permitted water temperature and water pressure from the water supply network: Water supply must be checked for all conditions that are required for alimentary use. Low water pressure causes the cooling system to function improperly. The cooling gas does not condense, thus causing the compressor to overload. In such cases, the safety pressure valve kicks in and switches off the compressor. The results of mixture treating and ice cream production when the water pressure is too low are not as good as when the water pressure is normal. The maximum presence of chlorides in water is 120 ppm. Exchangers are not suitable for the use of salt water.

4.3 ELECTRICITY SUPPLY REQUIREMENTS

Prior to connecting the appliance to the power source, the voltage and the maximum power current allowed in the network must be checked and the appliance must be protected externally with FUSES and the MAIN SWITCH. Permitted voltage of three-phase appliances (400/50/3): Permitted voltage of monophase appliances (230/50/1): The diameter of each phase conductor must be of an appropriate dimension (corresponding to the power of the fuses). The MAIN SWITCH must be installed in the immediate vicinity of the appliance, where it must be easily visible, accessible to the operator and appropriately marked.

5 CONNECTING THE APPLIANCE

5.1 INSTRUCTIONS FOR PREVENTION OF INJURIES

When the characteristics of either the water supply or electricity network fail to meet the requirements for normal operation, the machine must not be connected to the power supply. It is forbidden to connect the appliance to the power source when the floor around the appliance is wet. It is forbidden to connect the appliance to the power source if any of the side panels and the cover is missing.

5.2 CONNECTING THE APPLIANCE TO THE WATER SUPPLY

The water supply regulation valve is connected to the WATER SUPPLY PORT. The water outlet pipe is connected to the WATER OUTLET PORT and to the outlet pipe leading to the drain. All these terminals have a diameter of 3/4" and are located on the backside of the machine. To connect the appliance to the water supply (water supply port) and the outlet to the drain (water outlet port), use pipes capable of withstanding 1MPa and measuring at least ½” in diameter (make sure upon the delivery that the pipes are supplied with the appliance).

If the appliance is meant to be used in areas with two separate water supplies, two separate water connectors are built in it, one for each: a DRINKING WATER SUPPLY PORT and a COOLING WATER SUPPLY PORT (condenser). The valve belonging to the cooling water supply must not be connected to the DRINKING WATER SUPPLY PORT. The valve belonging to the drinking water supply may be connected to the COOLING WATER SUPPLY PORT and/or to the DRINKING WATER SUPPLY PORT. The valve should be opened after the appliance has been connected to the water supply system.

5.3 CONNECTING THE APPLIANCE TO THE POWER SUPPLY

Only appropriately trained technicians are allowed to connect the appliance to the electrical current. They must follow installation instructions and observe the occupational safety regulations applying in the country in which the appliance is being installed. They must read the instructions carefully and above all thoroughly familiarize themselves with the sections on REQUIREMENTS AND CONDITIONS FOR NORMAL OPERATION OF THE APPLIANCE and the machine’s electrical circuit scheme. Before connecting the appliance, all attachments that might have become loose during transportation must be checked. Attachments that may have become loose or disconnected must be screwed back on and tightened. Connecting instructions for four-vein cable (three-phase appliances – 400/50/3): Connecting instructions for three-vein cable (monophase appliances – 230/50/1): A test start-up of the appliance is carried out by an appropriately trained electrician who has also connected the machine so as to make sure that it is properly connected (see the section on MAINTENANCE). If the machine has been connected correctly, the mixer in the mixture-treating cylinder will rotate anti - clockwise.

Should the mixers rotate in the wrong direction, it is necessary to change the connecting position of any of the two phases.

Production cylinder mixer, installed in appliances with built-in inverter, will rotate in the correct direction regardless of the connecting position of either of the phases so it is necesary check the direction of the mixer in the cooking cylinder. The mixer must rotate in clockwise direction.

Should the mixers rotate in the wrong direction, it is necessary to change the connecting position of any of the two phases. After connecting the appliance to the electricity network, appropriately trained electrician must also control the power consumption. The current must not exceed the maximum allowed on the identification plate or sticker (see the section GENERAL FEATURES AND SPECIFICATIONS).

6 OPERATING THE APPLIANCE The user operates the appliance standing in front of appliance. This position allows user to handle the control panel, the safety switch and the water flow regulation valve (shower). The appliance must be always under users control during operation.

The control panel is used to display the status or the operation phase the machine is in, to perform settings and to show messages and errors while producing ice cream. The safety switch is used to safely and securely switch of the electronics. The electronics is switched off by pressing down the switch-off key in the normal position and then depressing it. The switch will normally remain down and must be pulled back up by hand to return to its normal position. The shower is used for cleaning of the appliance.

7 CONTROL BOARD Control panel is composed from mixture treating control panel and ice cream processing control.

7.1 MIXTURE TREATING CONTROLS

The mixture treating control panel has a display with keys and light indicators and keys with light indicators. The mixture treating display with keys and light indicators serve to display the status or operation phase of the appliance, various messages and error messages during mixture treating and for setting processing parameters for the ice cream mixture. Keys with light indicators are used to start or terminate various functions. Pressing such a key will activate a designated function and the indicator above the key will light up.

7.1.1 TIMER key

Pressing this key the countdown of the assigned time will begin. The light indicator starts flashing and display shows the countdown. When the assigned time expires, the phase ends and beeping is heard. The TIMER key may be used when the assigned time is higher than 0 and the appliance is in the OFF or mixing phase. There is no countdown of the assigned time when mixing has been interrupted due to open cylinder cover on the mixtures treating cylinder or when the timer has been activated and the TIMER key was pressed down.

7.1.2 SELECT HEATING key

Pressing this key will change the heating mode. The selected mode remains valid until the appliance is switched off. Upon entering the heating phase, the light indicator of the SELECT HEATING key is turned off, the preseted heating mode is LL and the LL light indicator is lit up.

Pressing this key will start the ice cream mixtures treating at the selected temperature. The mixture is heated up to the selected temperature between 20°C and 98°C, entered in the SET phase. As soon as the heating phase is completed a short beeping sound is heard and the appliance enters cooking phase, where mixture is mixed and maintained at the selected temperature. The cooking phase ends when the time expires if the time countdown is activated. At the end of the phase, there is a long beep and mixtures maintenance phase starts up. The appliance mixes and maintains the mixture at selected temperature.

7.1.4 AUTOMATIC HEATING key

Pressing this key will start the ice cream mixtures treating at the preseted temperature. The mixture is heated up to the preseted temperature 85°C. As soon as the heating phase is completed a short beeping sound is heard and the appliance enters cooking phase, where mixture is mixed and maintained at the preseted temperature. The cooking phase ends when the time expires if the time countdown is activated. At the end of the phase, there is a long beep and mixtures maintenance phase starts up. The appliance mixes and maintains the mixture at preseted temperature.

7.1.5 MIXING key

Pressing this key will start mixing the ice cream mixture in the cylinder. The phase ends in OFF status due to pressing the STOP key or because assigned time has expired (if timer is activated during mixing). Pressing TIMER key during mixing activates the timer, if the time assigned to it is higher than 0. Light indicator above the TIMER key flashes and time countdown is visible on the display. Pressing the MIXING key again during the mixing will end the phase. During mixture treating phase with preseted or selected temperature, the appliance continues mixing without interruption and the MIXING key cannot be activated during that time.

7.1.6 tipka STOP / RESET

Pressing this key will stop the operation of the appliance, regardless of the current phase. OFF is displayed on the display. After this, any key may be used.

This error message means that the exceeded temperature has already dropped below overheating. The error is cleared by pressing STOP / RESET.

Power failure during the heating phase

This error message is displayed if the microprocessor determines during data analysis that there was a power failure during the heating phase. Er6 error message is displayed and the appliance continues operating. The error is cleared by pressing the key STOP / RESET or UP.

Temperature sensor error

This error message means that the temperature measured exceeds allowed parameters. This may be due to terminated connection or a short-circuit error of the PT1000 temperature sensor.

7.2 Ice cream PROCESSING CONTROL

The control board consists of a display with keys and keys with light indicators. The display with keys and light indicators serves to display the status or operation phase of the appliance, various messages and error messages during mixture treating and for setting processing parameters for the ice cream mixture. Keys with light indicators are used to start or terminate various functions. Pressing such a key will activate a designated function and the indicator above the key will light up.

7.2.1 ICE CREAM PRODUCTION key

By pressing this key the process of ice cream production will start. When the appliance reaches the set value the ice cream production process is finished, which is indicated by means of a beep-sound and a flashing light indicator above the key. The ice cream is produced.

7.2.2 MIXING key

Pressing this key will start mixing the ice cream mixture in the cylinder without activating the compressor. This operation is also used for test runs and for washing of the ice cream production cylinder. It is recommended that this operation is used for a very short period of time.

7.2.3 FAST MIXING – EJECTION OF ICE CREAM key

By pressing this key the mixing process at a high speed starts. This function is used at the end of the ice cream production process in order to eject the ice cream out of the production cylinder. It is recommended that this operation is used for a very short period of time.

7.2.4 PRODUCE MINIMAL AMOUNT OF ICE CREAM key

By pressing this key the machine will produce a minimal amount of ice cream. When the appliance reaches the set value the ice cream production process is finished, which is indicated by means of a beep-sound and a flashing light indicator above the key. The ice cream is produced.

7.2.5 STOP / RESET key

Pressing this key will stop the operation of the appliance, regardless of the current phase. OFF is displayed on the display. After this, any key may be used.

Appliance is active, but with no cooling (only models with built-in inverter)

This message means that appliance is active, but with no cooling. UP and DOWN keys activate the entry of frequency – a change in the mixing speed (only models with built-in inverter).

Cylinder door is open and/or the protective disk of the production cylinder is taken off

This message means that cylinder door is open or the protective disk of the production cylinder was taken off. Only the SET phase keys are allowed, the remaining keys are not allowed. Due to the cylinder door being open, the machine enters the STOP state. If the active phase is stopped due to this, a beeping sound is activated.

This message means that 50Hz impulse is not reached at start-up or at reset.

Displayed address of the currently selected program

This message shows address of the currently selected program. Pressing the SET key (when the machine is in the OFF status) and then the ICE CREAM PRODUCTION key (SET display), and then the ICE CREAM PRODUCTION key again, the machine will display the currently selected program. Programs can be selected by using the UP and DOWN keys. A selected program is valid, when confirmed with the SET key.

Exceeded temperature of the mixer engine

This error message means that the temperature of the mixer engine has reached the point of overheating. Only the SET phase keys are allowed, the remaining keys are not allowed. When temperature is exceeded, the appliance enters the STOP state and gives off 12 short consecutive beeps.

Exceeded temperature of the compressor engine

This error message means that the temperature of the compressor engine has reached the point of overheating. Cooling cannot be activated, although mixing can be activated. If the appliance was in the mixing phase when temperature was exceeded, it will remain in the same, but if cooling was active, cooling will be turned off and the appliance will enter the state of MIXING at low speed with 12 consecutive short beeps.

Exceeded temperature of the engine has already dropped below the critical value

This error message means that the exceeded temperature of the engine has already dropped below the allowed value, while the activation of mixing or cooling is forbidden until the key STOP / RESET is pressed to clear the error.

Pressostat error

This error message means that the appliance is in the STOP phase due to 8 consecutive pressostat errors. The error is cleared by pressing STOP / RESET.

This error message means that the temperature measured exceeds allowed parameters. This may be due to terminated connection or a short-circuit error (in the case the sensor is not working correctly a temperature -91 is normally displayed) of the PT1000 temperature sensor. Ice cream making with programs Pr2, Pr3, Pr4, Gr2 (the display shows Ur8) is allowed. Ice cream making with Pr1 and Gr1 (the display shows Er8) is not possible. If we want to make ice cream with Pr1, the machine reports an Er8 error, while in other cases it reports only an Ur8 message. The machine operates normally, but it does not use temperature to determine the ice cream density (determining the most adequate temperature and density of the ice cream is less accurate).

Frequency converter error (only models with built-in inverter)

This error message means that a frequency converter error has occurred. The error is cleared by pressing STOP / RESET.

7.2.7 Urx MESSAGES

These messages tell the user what is going on with the ice cream making process and/or why the process of ice cream production has stopped. In order to display these messages on the control board display, you will have to enable them. To do so, you will have to press the SET key, and afterwards the MIXING key. This will cause that the display will show U-off. Press the DOWN key, and the display will show U-on. Confirm the changes by pressing the SET key. Urx messages: The operation of making the ice cream lasts less than the set time:

This error report indicates that the ice cream making operation lasted less than the set time. In this case, a beating stage is activated for 8 seconds. After 8 seconds, when the mixture has softened, the ice cream making is resumed. The minimal set time of ice cream production must be set for every program separately – please see the chapter ADDITIONAL AUXILIARY FUNCTION KEYS.

This error report indicates that during the ice cream making process, the machine has reached the maximum allowed density of the ice cream. In this case, it finishes the stage and enters into maintenance with the assistance of density.

Temperature sensor error

This report indicates that the measured temperature is not within the expected range. This is possible due either to a break in the connection or a short circuit in the temperature sensor. Ice cream making with programs Pr2, Pr3, Pr4, Pr5, Gr2 (the display shows Ur8) is allowed. Ice cream making with Pr1 and Gr1 (the display shows Er8) is not possible.

8 PREPARATION OF MIXTURE

8.1 SETTING THE MIXTURE TREATING TEMPERATURE

In manual heating of the ice cream-mixture the finaly temperature can be manually adjustable. The default setting is 75 ° C. Operator can manually selected temperature between 20°C and 98°C.Pressing MANUAL HEATING will activate heating of the mixture. Pressing the SET key will show the final temperature of ice cream for 5 seconds. During these 5 seconds, the user may increase set temperature (by pressing UP) or lower it (by pressing DOWN). 8.2 SETTING THE COOKING TIME

The user can select the mixture’s cooking time at the final temperature. The cooking time can be selected during heating phase, cooking phase or when the machine is in the STOP state. The default setting is 0 min. Cooking time can be selected between 0 and 90 minutes. Pressing the SET key will show the final temperature of ice cream for 5 seconds. During these 5 seconds, the user can, by pressing the TIMER key, show the cooking time at the final temperature of ice cream for 5 seconds. During these 5 seconds, the user may increase the time (by pressing UP) or lower it (by pressing DOWN). By pressing SET within 5 seconds since the last change of time, the new time becomes the assigned time.

9.1 PR1 – PROGRAM, WHICH ICE CREAM PRODUCTION IS BASED ON THE TEMPERATURE AND POWER SETTING

This program is designed in a way, which meets the requirements of almost all users. It is based on the balance between temperature and power of ice cream production. The user is enabled to produce a soft but compact ice cream, which is suitable to be filled in cornets. The range of this program includes a scale of numbers (values) from 1 to 15. Low numbers represent the production of soft ice cream while higher numbers represent the production of harder, compacter ice cream. The program Pr1 is a very flexible and simple program, which makes it very popular among ice cream sellers. Pressing the ICE CREAM PRODUCTION key or PRODUCE MINIMAL AMOUNT OF ICE CREAM key will activate the ice cream production function. Pressing the SET key will show the final temperature of ice cream for 5 seconds (values from 1 to 15):

9.2 PR2 - PROGRAM, WHICH ICE CREAM PRODUCTION IS BASED ON THE TIME AND POWER SETTING

This program is manly based on the balance between time and power of the ice cream production. However, the emphasis on the production time is greater, since specific values are based only on the time, but also on the power of ice cream production at higher values. The user is enabled to produce soft but compact ice cream very quickly. This program is suitable for all users, who always produce the same amount of ice cream, because one is able to always produce the same quality of ice cream in the same amount of time. Regarding the set time and the quantity of the ice cream mixture different results can be achieved. In this way shorter time means softer ice cream and longer time means harder, compacter ice cream.

In case time and power controlled ice cream processing is selected (Pr2), the completion of processing is determined by setting the processing time; this may be set by the user according to the desired characteristics of ice cream. Pressing the ICE CREAM PRODUCTION key or PRODUCE MINIMAL AMOUNT OF ICE CREAM key will activate the ice cream production function. Pressing the SET key will show the set time for ice cream processing for 5 seconds: During these 5 seconds, the user may increase the set time (by pressing UP) or lower it (by pressing DOWN). By pressing SET within 5 seconds since the last change of the value, the new value becomes the assigned one (settings of the time range 2 ≈ 15 min). 9.3 PR3 - PROGRAM, WHICH ICE CREAM PRODUCTION IS BASED ON THE FINAL DENSITY OF THE ICE CREAM

This program is especially suitable for those users, who want to achieve a desired density for each individual ice cream. It is based on power, which is essential for achieving the maximal density of the ice cream. It is manly used by more experienced ice cream sellers and producers. In case consistency controlled ice cream processing is selected (Pr3), the completion of processing is determined by setting the final consistency of ice cream; the user according to the desired characteristics of ice cream may set this. Pressing the ICE CREAM PRODUCTION key or PRODUCE MINIMAL AMOUNT OF ICE CREAM key will activate the ice cream production function. Pressing the SET key will show the set time for ice cream processing for 5 seconds: During these 5 seconds, the user may increase the set consistency (by pressing UP) or lessen it (by pressing DOWN). By pressing SET within 5 seconds since the last change of consistency, the new consistency becomes the assigned consistency. A selection between 20 and 100 is allowed. This is used if we want a soft ice cream (lower numbers), or if the user wants a precisely defined ice cream density. Symbolical presentation on how to set the final ice cream density:

9.4 PR4 – PROGRAM, WHICH ICE CREAM PRODUCTION IS BASED ON THE OPTIMUM DENSITY OF THE ICE CREAM

As well as pr3 this program is also based on power, the only difference lies in the fact that the machine itself defines the optimum density of the ice cream and not the user. It is fully automatic and works faster than Pr3. The user can not change the settings of the program. This program is suitable for inexperienced users and/or beginners.

10 CHANGING PARAMETERS OF MACHINE

10.1 ADDITIONAL AUXILIARY FUNCTION KEYS

By pressing firstly the SET key and then the ICE CREAM PRODUCTION key or PRODUCE MINIMAL AMOUNT OF ICE CREAM key and afterwards the FAST MIXING – EJECTION OF ICE CREAM key, one enables changing of parameters (A.00 ≈ A.03). By pressing the keys UP/DOWN one can choose the parameter, by pressing the SET key one can enter new values of the parameter. The changes become only valid if one presses the SET key to confirm the changes. If the entering of new parameter values ends with pressing the FAST MIXING – EJECTION OF ICE CREAM key, the new values will not be valid (the previously entered value stays valid). The meaning of the parameters depends on the chosen program (Pr1 ~ Pr4).

[ A.00 ] Entry time into the fast mixing procedure

0s .. 300s (default value 50s)

This is the time, after which the fast mixing procedure starts. The time includes a time period between 0~300 seconds under the condition that the minimal needed time for producing the ice cream mixture was reached (after the prohibition time exceeds). If the value 0 is entered the fast mixing will not start due to the parameter A.00.

[ A.01 ] Entry temperature into the fast mixing procedure

-30º .. 10º (default value -13°C)

This is the temperature needed (-30 °C, 10 °C – temperature of the cooling gas) at which the fast mixing procedure starts. If one enters the temperature of 10 °C, the fast mixing procedure is not possible due to the temperature.

[ A.02 ] Time of fast ice cream mixture mixing

0s .. 200s (default value 0s)

This is the time of fast mixing of the ice cream mixture. Fast mixing is possible only if one of the already described parameters is fulfilled (A.00, A.01). The time of fast mixing includes a time period between 0 and 200 seconds. If the value 0 is entered into the parameter A.02 the fast mixing is disabled.

The user can define the required ice cream production time by means of the parameter A.03.

[ A.03 ] Entering the required ice cream production time in minutes

0.0min~10.0min (default value 0min)

The test of required time becomes active when the required time is bigger than the minimal needed time for producing ice cream. In such a case the ice cream mixture is finished before the required time, therefore it gets mixed again by the machine (8 seconds without cooling – deactivation of the compressor) and the whole ice cream production process starts from the beginning. This cycle is executed only once, after that the machine finishes the ice cream production process, even if the required time has not been reached yet.

10.2 SETTING THE NUMBER OF REVOLUTIONS (MODELS WITH INVERTER ONLY)

Models with a built-in inverter allow the operator to set the number of revolutions for mixing. The operator is thus able to adjust the machine to suit the preferred method of making ice cream. Recommended minimum and maximum number of revolutions for mixing: If MIXING is activated and the appliance is not in the SET phase, the operator may set the number of revolutions by using the UP and DOWN keys. Pressing the UP key will show the preset number of revolutions in Hz for 4 seconds: During these 4 seconds, the operator may increase the number of revolutions (by pressing UP) or decrease it (by pressing DOWN). By pressing SET within 4 seconds since the last change of the number of revolutions, the new number becomes the assigned value. Models with a built-in inverter that are meant for special markets have a set number of revolutions (33~36Hz), which can not be changed until the ice cream mixture reaches a certain density / temperature. As soon as the ice cream mixture reaches the required density / temperature, the machine’s revolutions can be set by the user (now the user can define the number of revolutions).

11 PROTECTION OF THE USER AND OF THE MACHINE

11.1 PROTECTION OF THE USER

A safety switch, which is built into the machine under the rim of the mixture treating cylinder, protects the operator against injuries that might be caused by the mixer’s rotation. Opening the mixture treating cylinder coverlid will cause the operation of the mixer engine to shut down. In this case, the appliance must be set to STOP position and the mixture treating cylinder coverlid must be closed.

11.2 ELECTRICAL OVERLOAD PROTECTION

Electrical installations are protected with appropriate FUSES. If the FUSES terminate the operation of the appliance upon its start-up, the error causing this action must be found and corrected.

11.3 THERMIC SAFETY DEVICES

The mixer engine and the compressor engine are protected with thermal sensors. If temperature reaches the maximum allowed value, the protection shuts down the engine operation. In this case, press the key STOP and allow 15 - 20 minutes for the engine to cool down. After this time, the appliance is again ready for normal programming and operating (see the section OPERATING THE APPLIANCE).

11.4 PROTECTION OF THE COOLING SYSTEM

The cooling system is protected with the pressostat at the maximum pressure of 2,5 MPa (25 bar) for the cooling gas R507. In the case of water shortage, the protection shuts down the operation of the cooling compressor.

12 USE OF THE APPLIANCE

12.1 INSTRUCTIONS FOR THE PREVENTION OF INJURIES

Only authorized persons, who know how the machine is operated, must be allowed to handle it. Operators must be familiar with all regulations concerning occupational safety and fire safety measures, and they must know where fire extinguishers are located. Persons still in training must be constantly supervised by a designated person in charge who knows how the machine works. Operators must be dressed suitably (no ties, jewellers chains or belts that could get caught in the machine) and be appropriately protected. All warning labels on the appliance must be replaced with new ones when they begin to fade or if they become damaged. Before operation, the operator must make sure that the appliance is not under maintenance, in service or in cleaning. At the end of the shift, the operator working on the next shift or the person who will continue to operate the appliance must be informed of the current state of the appliance. Before every use, the operator must make sure that the floor is free of any oil smudges or other slippery substances or objects which might cause a person to slip or trip over. Operators must make sure before every use of the appliance that the side panels and the top cover of the appliance are securely fitted to the main construction and that there are no parts or objects on the appliance or in the cylinder that could damage the appliance during its operation. In the event of dangerous situations (e.g. blocked mixer), which could harm the operator’s or another person’s well being, switching off the MAIN SWITCH must immediately shut down the appliance. The side panels and the top cover, as well as safety devices and protective covers, must not be taken off during the operation of the appliance. It is forbidden to get onto the appliance and walk upon it during its operation. During the operation, attention must be paid to any oil leaks, increased noise, squeaking sounds or increased vibrations. In such a case, the appliance must be immediately shut down; a visible notice board must be placed on it with information that it is inoperable and authorized service personnel must be notified as soon as possible.

12.2 ASIC RULES FOR OPERATING THE APPLIANCE

The user operates the appliance standing in front of appliance. The appliance must be always under users control during operation. Only a single operator can use the appliance at the time. The simultaneously use of the appliance from multiple users is forbidden.

12.3 COVER OF THE PRODUCTION CYLINDER

Gripping it firmly with hand by the lever lifting it back to the open position opens the mixture production cylinder cover. If the machine is in the mixing phase, lifting the cover will terminate mixing. In order to close the cover grip it always at the cover lever and lower it in close position. If the machine were found in the mixing phase, this resumes automatically with the closing of the cover.

12.4 OUTLET VALVE

The outlet valve opens by turning the handle in the counter-clockwise direction and pulling it towards oneself.

The outlet valve closes by pushing the handle fully forward and turning it in the clockwise direction.

12.7 TO-DO LIST BEFORE OPERATING THE APPLIANCE

Before each use of the appliance:

� make sure that the floor around the machine is not slippery or wet; � make sure that the water supply valve is open; � make sure that FUSES are securely in place and switched on; � make sure that the MAIN SWITCH is turned on; � clean the mixture treating cylinder; � disinfect the mixture treating cylinder; � make sure that there are no objects of any kind in the mixture treating

The quantity of ice cream mixture must be measured according to technical characteristics of the appliance. When filling the mixture-treating cylinder, follow the specifications for minimum and maximum quantities allowed in the production cylinder:

cooking expires, beeping announces that mixture treating is complete – the appliance will automatically maintain the mixture at the set temperature;

� the operator must be ready to pour hot ice cream mixture into the processing cylinder: caution must be taken of the outlet valve and the pipe being heated up due to contact with hot ice cream mixture. Danger of scalding!

12.9 MIXTURE TREATING AT THE SELECTED TEMPERATURE

Ice cream mixture treating process at selected temperature:

� make sure that the mixture treating control panel is in STOP state; � make sure that the outlet valve is properly set and well closed; � pour ice cream mixture in the mixture treating cylinder and close the

cylinder cover lid; � press the MANUAL HEATING key: temperature in the cylinder is shown

on the display; � the key SELECT HEATING offers three options for heating the mixture

treating cylinder: � fast heating with both heaters � slow heating with both heaters � fast heating with the lower heater only, for small quantities of ice

cream; � when temperature reaches the selected value or when the time set for

By pressing the PRODUCE MINIMAL AMOUNT OF ICE CREAM key one is enabled to produce small quantities of ice cream. Minimal ice cream production process:

� make sure that the production control panel is in the STOP position; � make sure that the ejection opening of the production cylinder is well

closed; � open the production cylinder cover and pour in the ice cream mixture; � by pressing the PRODUCE MINIMAL AMOUNT OF ICE CREAM key, the

automatic cycle is activated; the ice cream making process can be regulated by means of chosen program (Pr1~Pr4);

� throughout the whole process, the display shows the status of the ice cream; the ice cream is finished when the set value is reached;

12.11 ICE CREAM PRODUCTION

Ice cream production process:

� throughout the whole process, the display shows the status of the ice cream; the ice cream is finished when the set value is reached;

� with sound and visual signals, the machine indicates that the automatic ice cream making cycle is concluded.

12.12 ICE CREAM EJECTION

Ice cream ejection process into containers:

� place an ice cream container on the tray under the outlet hole; � have a spatula handy; � open the outlet hole; � activate mixing at high speed by pressing the FAST MIXING –

EJECTION OF ICE CREAM key; � out coming ice cream is directed into the container using the spatula; � mixing must be stopped within 10 seconds at most after the cylinder has

been emptied; (the appliance may continue to run without ice cream mixture 10 seconds at the most; extended operation of the appliance without mixture is not allowed!)

� as ice cream is ejected, the operator may switch on additional cooling (compressor) by pressing the ICE CREAM PRODUCTION key. This will keep ice cream consistently cold and solid. The duration of additional cooling is 20 seconds and the cycle is activated each time the ICE CREAM PRODUCTION key is pressed (after the completion of the main processing cycle);

� press the STOP / RESET key.

13 CLEANING OF THE APPLIANCE

13.1 INSTRUCTIONS FOR THE PREVENTION OF INJURIES

Only authorized persons, who know how the machine is operated, must be allowed to clean it. Operators must be familiar with all regulations concerning occupational safety and fire safety measures, and they must know where fire extinguishers are located. Persons still in training must be constantly supervised by a designated person in charge who knows how the machine works. Operators, who clean the appliance must be dressed suitably (no ties, jewellers chains or belts that could get caught in the machine) and be appropriately protected. All warning labels on the appliance must be replaced with new ones when they begin to fade or if they become damaged. Before cleaning the appliance, the operator must make sure that the appliance is not under maintenance, in service or in cleaning. At the end of the shift, the operator working on the next shift or the person who will continue to operate the appliance must be informed of the current state of the appliance. Before cleaning the appliance, the operator must make sure that the floor is free of any oil smudges or other slippery substances or objects which might cause a person to slip or trip over. Operators must make sure before cleaning the appliance that the side panels and the top cover of the appliance are securely fitted to the main construction and that there are no parts or objects on the appliance or in the cylinder that could damage the appliance during its operation. Every day before using the appliance, the correct functioning of the safety switch on the cylinder cover must be checked. When the appliance is in stand-by (the display shows OFF), simply lift the cylinder cover. The display should show the message DOOR. Do not close the cylinder cover and press the MIXING key (the appliance must not start).

13.2 CLEANING THE SURFACES OF THE APPLIANCE

Surfaces are external parts of the appliance that do not come into contact with ice cream mixture – the top cover, side panels and other external parts. Never clean them with abrasive sponge or cloth and aggressive detergents, which can scratch or otherwise damage the surface.

Cleaning process:

� turn off the SAFETY SWITCH and the MAIN SWITCH; � make sure that the mixture treating cylinder cover and the ejection

opening are well closed; � clean the surfaces and make sure that the detergent does not touch

those parts, which do come into contact with ice cream mixture.

13.3 USING THE WATER IPE FOR CLEANING

In order to clean or rinse-off the appliance or its parts, one can help oneself with the shower, which is mounted on the top side panel of the machine. The shower must be connected to fresh (drinkable) water supply (see the chapter on connecting the appliance).

How to use the shower:

� grab the shower handle and pull it out; � point it towards those parts of the appliance, which need to be cleaned or

rinsed-off and open the water valve (in counter clockwise direction);

� close the water valve (in clockwise direction) and place the shower back to its place

In the case of wear or pipe breakage of the shower, the pipe of the shower must be replaced. Only original pipes must be used! Only in this way we can assure a well and normal working water shower!

13.4 CLEANING OF PARTS THAT COME IN CONTACT WITH THE ICE CREAM

All parts, which come into contact with ice cream mixture, must be cleaned before and after every use. With regular cleaning practice you comply with standards of hygiene and ensure ice cream mixture treating quality. 13.4.1 CLEANING OF CYLINDER (COOKING) Cleaning process:

14 MAINTENANCE OF THE APPLIANCE

14.1 INSTRUCTIONS FOR PREVENTION OF INJURIES

Authorized servicing personnel may only perform removal of the top cover and side panels and any intervening actions inside the machine. Removal of the top cover and side panels and any intervening actions inside the machine is strictly forbidden when the machine is connected to the power supply. It is strictly forbidden to connect the machine to the power supply if top cover and side panels are not properly attached and all required security measures are not in place. Cleaning or lubrication of parts, which are moving or rotating, is forbidden.

14.2 PROBLEMS, ERRORS AND TROUBLESHOOTING

Malfunctions and errors are caused mostly by incorrect use, improper or inadequate maintenance or incorrect connection of the appliance. Therefore the operators must always carefully follow the instructions. The errors, the causes and troubleshooting:

14.5 CHECKING THE CONDITION AND WEAR OF THE MIXER BLADES

The user of the machine should check the condition of the blades and monitor their wear. During the everyday washing and cleaning of the mixer, the user should attentively check the condition of the blades and their wear:

� that the blades are not crumpled or deformed; � that the blade springs are not deformed; � that the wear of each individual blade is even; � that the wear of all blades is comparable

The user of the machine must replace all of the mixer blades if:

� any of the blades is crumbled or deformed; � any of the blades has a deformed spring; � the wear of any blade is uneven; � the wear of any blade deviates from the wear of other blades

Disregarding the condition or wear of the blades, the user of the machine should replace all of the blades after, at most, 600 hours of operation, or at least once a year. It is recommended to keep record on the working hours of the mixer blades (appendix A). It this way the user knows immediately when mixer blades should be replaced. It is strictly forbidden to put plastic parts (such as mixer blades) of the appliance into the dishwasher to clean them!

14.6 REPLACING THE MIXER BLADES AND SLIDERS

At each change of blades is also necessary to replace the sliders! The mixer blades and sliders replacing process:

� make sure that the preparation and making control panels are in the STOP position;

� make sure that the production cylinder is empty; � turn off the SAFETY SWITCH and the MAIN SWITCH; � open the door;

� slowly and carefully with both hands pull the mixer out of the cylinder; exercise great care to prevent accidental dropping and consequent damaging of the mixer:

� place the mixer on solid surface and remove each slider from the mixer individually.

� remove each blade from the mixer individually (push the blade downwards until it jumps off the shaft);

� Install new blades on the mixer:

Hold the blade with both hands.

Place the blade to the holder and by pressing it towards the spade (compressing the spring) the blade is placed on the shaft.

The slider must lock onto the shaft. Please check, whether the slider is firmly attached to the shaft and whether it is placed correctly. It is strictly forbidden to put plastic parts (sliders) of the appliance into the dishwasher to clean them!

� Place the slider into the mixer:

� insert the mixer into the cylinder: Hold the mixer with both hands and place it very slowly into the cylinder. Place the mixer by the edge of the cylinder so that the spade which has the slider closest to the bottom of the cylinder is placed horizontally downwards, Slowly, without spinning, push the thusly placed mixer towards the end of the cylinder. When the mixer shaft is in bed, find the final position of the mixer in the bed of the drive shaft by slowly spinning it in a clockwise direction.

� close the door. � the proper installation of the blades on the mixer is checked by a TEST

RUN (see chapter MAINTENANCE OF THE APPLIANCE)

14.7 SETTING THE WATER REGULATION VALVE

The water regulation valve is preset to factory default values. These may change due to possible shocks and vibrations during transportation. In this case, the water regulation valve has to be reset properly by authorized servicing personnel. The water regulation valve functions properly when tepid water is discharged from appliance during the operation of the compressor unit; the water flow stops when the appliance stops. Water consumption increases if the temperature of cooling water exceeds 18°C.

14.8 DANGER OF TEMPERATURES BELOW 0 °C

Do not leave the appliance in an environment colder than 0ºC (273K). If this is the case, discharge water from the condenser. In order to empty the water out of the appliance, unscrew the cap of the safety valve (in counter clockwise direction).

After that, open the valve (in counter clockwise direction) in order to release water out of the system.

When all water has been discharged, close the valve (in clockwise direction).

Finally, reattach the cap of the safety valve and screw it tight (in clockwise direction).
