SLOW COOKERCHICKEN TIKKA MASALA
Ingredients:• 2 lbs chicken breast, cut into 1.5 inch chunks• 1 (29 oz.) crushed tomatoes in tomato sauce• 1onion,finelychopped• 4 cloves minced garlic• 2Tbsp.freshlygratedginger• 2Tbsp.oliveoil• 2bayleaves
• 1cupheavycreamorcoconutmilk• 2Tbsp.cornstarch• Lemon juice (1/2 a lemon)
Spices:• 1Tbsp.garammasala• 2tsp.groundcumin• 2tspgroundcoriander• 2tsppaprika• 1tspturmeric• ½tspcinnamon• ½tspcayennepepper(addtotaste)• ½tspblackpepper
Direction:1. Ruboliveoilinsideyourslowcookertopreventfoodfromsticking.2. Combineallingredients(exceptfortheheavycream,cornstarch,bayleavesandlemonjuice)inalargemixingbowl. Stiruntilallingredientsaremixedandchickeniswellcoated.3. Pourintotheslowcookerandlaythe2bayleavesontop.4. Coverwithlidandcookfor8hoursonlow(4hoursonhigh).5. Inasmallmixingbowl,combineheavycreamandcornstarch.Gentlystirintotheslowcookerandcookanadditional 20 minutes until thickened.6. Addlemonjuiceandgentlystir.7. Scoopitoutandservewarm!
